BITTER ORANGE HOT SAUCE
This is pretty tasty with batter fried fish or chicken. Take it down to the union hall and sprinkle it on your fish fry. Yum! Recycle an old glass bottle with a plastic sprinkle cap on it to use. Sprinkle it, don't pour it on. Stores in fridge about a month or so.

- Pour juices into 12 oz. bottle with sprinkle cap.
- Add halved habaneros.
- Close bottle. Shake.
- Store in fridge at least 24 hours before using.

BIGARADE SAUCE RECIPE
A wonderful sauce for all your poultry dishes.

Steps:
- Remove the zest from half of the orange, cut into ¼ inch strips and reserve. Squeeze the juice from the orange and save that too.
- Heat up a sauce pan over medium heat. When hot, add the butter and then the shallots. Saute the shallots until translucent, about 3 minutes.
- Add the orange juice, vinegar and orange liqueur (optional). Let this reduce for 2 minutes.
- Add the demi glace and reserved orange zest to the sauce pan. Let this simmer and reduce down until the sauce is thick enough to coat the back of a spoons.
- Taste and adjust seasonings with salt and pepper.
- Strain the sauce through a fine mesh strainer or cheesecloth.
- Serve with duck, chicken or trout.
BAKED COD WITH ORANGE, CAPER AND OLIVE SAUCE
Steps:
- Preheat oven to 500°F. Using vegetable peeler, remove peel and white pith from orange. Cut twenty 2-inch-long, 1/8-inch-wide strips from orange peel and reserve. Chop orange; place in small bowl. Add tomato and next 7 ingredients to chopped orange; stir to blend. Season sauce to taste with salt and pepper. Spray 13 x 9 x 2-inch glass baking dish with nonstick spray. Arrange cod in prepared dish. Sprinkle orange strips evenly over fish. Sprinkle with salt and pepper. Bake until fish is opaque in center, about 10 minutes. Spoon sauce over fish.

- Place the peppers and garlic cloves in a griddle over medium high heat. (They will start developing brown spots). Roast the peppers and garlic, turning regularly to have an even roasting. Garlic cloves will take less time, make sure to remove them promptly after they are roasted. Peel the garlic skins off and let cool. Once you finish roasting the Habaneros, remove them from griddle and cool.
- Place the garlic cloves and habanero peppers (with stems removed) into a molcajete or food processor and form a coarse texture.
