Bitter Melon Stir Fry Okinawan Style (Goya Chanpuru) image

Goya canpuru is bitter melon stir fry. It's considered the representative dish of Okinawa prefecture. It includes pork belly, firm tofu and eggs. You can take a lot of nutrition from it, and it's so delicious. Bitter melon and other ingredients are good combination. Pork belly and bonito flake add the umami flavor. And Tofu and eggs make the dish mild. Nicely balanced flavor is addictive. Now is the best season for bitter melon, so it's one of the popular main dishes in Japan especially in summer. When you use tofu for stir-fry food, draining it is important. The food will be not watery and you can reduce the amount of condiment, for example soy sauce.

190 bitter melon
120 g pork belly
180 g firm tofu
1 egg
4 tsp rice oil (or vegetable oil)
1 tsp soy sauce
½ tsp mirin (sweet sake)
bonito flakes (for topping)
540 g water of 3 times of tofu (for putting a weight on tofu)
½ tsp sea salt
1 pinch salt
1 pinch white pepper
½ tbsp sake
1 tsp rice flour (or wheat flour)

Steps:

  • Prepare of ingredients
  • Prepare the plate with a steel colander. Wrap the tofu with 2 to 3 sheets of paper towels, and put it on the colander.
  • Put a weight on it by using three times of tofu. Use water of 3 times of tofu. Let it sit for 1 hour to drain the water of it.
  • Cut the bitter gourd in half lengthwise, and remove the inner white pith with a spoon.
  • Cut it into 3mm pieces.
  • In a bowl, mix the bitter melon and salt with chopsticks. Let it sit for 10 minutes. TIPS: remove the bitterness, and make it mild.
  • Cut the pork belly into 4cm pieces.
  • Mix the pork belly, salt, white pepper, and mix them.
  • Add sake and rice flour to the pork belly, and mix them all.
  • Throw away the water from the bitter melon in the bowl, and rinse quickly in cold water.
  • Place the bitter melon on paper towels. Put paper towels on them, and wipe off the water of the surfaces.
  • Beat the egg in a bowl.
  • Stir fry
  • Wipe off the moisture of the tofu with paper towels. Put 1 teaspoon of oil in a frying pan, and heat it up. Tear the firm tofu into bite size pieces with your hands, and add them to the pan.
  • Stir fry the tofu on medium heat until turned brown. TIPS: It's important to evaporate the water of them, and sear them. Remove the tofu.
  • Add the 1 teaspoon of oil to the pan, and heat it up. Add beaten egg, and stir roughly to cook evenly. Before solidify completely, remove it. TIPS: Like this picture, It's ok to be still soft.
  • Add 1 teaspoon of oil, and heat it up. Stir fry the pork belly on medium heat until golden brown.
  • Remove the pork belly, and wipe off the excess grease.
  • Put 1 teaspoon of oil, and heat it up. Stir fry the bitter melon on medium heat until turned soft. TIPS: Not overcook them to remain the texture.
  • Return firm tofu and pork belly. Add soy sauce and mirin. Mix them.
  • After checking the taste, add the egg, and mix them lightly.
  • Dish up it on a plate, and add the bonito flake on the top.

  • Prep the bitter melon. Cut the bitter melon in half lengthwise and scoop out the seeds and the white pith. Slice the bitter melon into half-moon pieces, about 1/2-inch thick. Put the bitter melon into a bowl, sprinkle salt all over and set aside for 10 minutes (the salt will help drain water from the bitter melon and make it less bitter). The rinse the bitter melon well under cold water and set aside to dry. Once dry, pan fry the bitter melon over medium heat with a little oil. Fry about 5 minutes until it's lightly browned. Set aside.
  • Prep the tofu. Cut the tofu into small rectangle bricks (I make 16 pieces from one block of tofu). Pan fry in a little oil until all sides are brown. Set aside.
  • Prep the pork belly. Cut the thin sliced pork belly into three pieces each (about 2-3" inches wide). Set aside.

  • To Prep Cut bitter melon in half lengthwise. Remove seeds including its fluffy white core using a spoon. Cut the halves into 0.5-1cm thick pieces width-wise. Place bitter melon in a bowl, add 1 tsp salt and toss (do not rub) to cover bitter melon pieces with salt. Leave for 10 mins, then rinse and drain well. This is to remove its bitterness.
  • To Cook Heat oil in a large frying pan or wok over high heat. Add tofu and cook both sides until lightly browned, about 2-3 mins. Remove from fry pan/wok. Add sesame oil to the frying pan/wok over high heat. Add pork and cook for about 2 mins until slices are almost cooked through. Add bitter melon to the frying pan/wok and stir gently without breaking the bitter melon slices. Cook for about 1 min until surface of the bitter melon starts getting cooked. If you like the bitter melon have a softer texture, you can cook until you get the texture preferred. Return the tofu to the frying pan/wok. Add the seasoning ingredients and mix so that the flavour coats the tofu evenly. Add the egg and leave for 15 secs without mixing. With a firm grip on the frying pan/wok, toss the ingredients and mix the egg with the other ingredients. Turn the heat down to low. Add bonito flakes and gently mix, then turn off the heat. Serve immediately.
  • Note: Goya has a tasty, mild and bitter flavour, but if you’re not good with bitter tastes you can soak the bitter melon in hot water for 30 secs before stir frying to help reduce the flavour. Or, add a little oyster sauce to help counteract the melon’s bitter taste.
