HOMEMADE BITS N' BITES

Homemade Bits n' Bites image

Time 2h10m

Yield 9 cups

Number Of Ingredients 8

3 cups Shreddies
3 cups Crispex
3 cups Cheerios
3/4 cup melted butter
1 teaspoon celery salt
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon paprika

Steps:

  • Preheat your oven to 275 degrees.
  • Using your small sauce pan on low heat (or a microwave safe bowl using 20 seconds intervals) melt your butter.
  • While you're waiting for your butter to melt measure out your cereal and pour into your pan.
  • Once your butter is melted add in your spices - I find this is the best way to make sure the spices are evenly distributed.
  • Pour your melted butter over top of your cereal.
  • Make sure the cereal is full coated with the melted butter, stirring until its well distributed.
  • Place in the oven for 1 1/2- 2 hours, giving it a stir every 45 mins.
  • Let cool down before transferring to a large ziplock bag.

HOMEMADE BITS AND BITES

Homemade Bits and Bites image

Make Bits and Bites mix at home with this simple recipe. Shreddies, Cheerios, Cheese Bits, Ritz, Pretzels, Chex and mixed with butter, worchestershire sauce, tabasco and spices

Provided by Steve Cylka

Categories     Appetizer

Time 1h10m

Number Of Ingredients 12

1 (225g) box Cheese Bits (Cheese Nips or Goldfish crackers)
1 (225g) box Mini Ritz Crackers
6 cups Cheerios Cereal
6 cups Shreddies Cereal
6 cups pretzels
2 (1 pound) cups butter, melted
1/3 cups Worchestershire Sauce
2 tbsp Tabasco sauce
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp salt
1 tsp chili powder

Steps:

  • Preheat oven to 250F.
  • Mix Cheese Bits, Mini Ritz, Cheerios, Shreddies and pretzels together in a large roasting pan (the kind used for turkey or large roast beef).
  • Whisk the remaining ingredients together in a separate bowl until well mixed. Pour the butter mixture over the bits and bites. Using a wooden spoon, mix well to make sure all the bits and bites are coated in the butter mixture. Sometimes there are some that stick in the corners or bottom and do not get coated. Be sure to stir into the bottom of the pan and draw them up.
  • Bake in the oven for about 2 hours. Stir the bits and bites every 15 minutes, pulling the ones at the bottom up to the top. After the 2 hours, the moisture should all be gone. If not and some of the pieces are still moist, bake another 15-30 minutes.
  • Once cool, bag and seal the bits and bites so they stay fresh and crispy.

NANA B'S NUTS AND BOLTS (BITS 'N BITES)

Nana B's Nuts and Bolts (Bits 'n Bites) image

My Nanny used to make these for me every summer when I visited her. I could go through a whole recipe in the week! Best Bits 'n Bites EVER!

Provided by Deb Wilson

Categories     Other Appetizers

Time 2h25m

Number Of Ingredients 9

10 oz shreddies cereal
10 oz cheerios cereal
10 oz pretzel sticks (the thinner ones work best)
1 c salted peanuts
1 1/2 c butter or margarine
1/4 c worcestershire sauce (lea & perrins brand is best)
1 tsp onion powder
1 tsp garlic powder
1 tsp celery salt

Steps:

  • 1. Preheat oven to 250 degrees. Pour all dry ingredients into large turkey roaster and mix . In a small saucepan, melt butter and add Worchestershire sauce and spices, stirring well until spices are dissolved. Pour evenly over dry ingredients in a large turkey roaster, stir for at least five minutes, being sure to scoop sauce from bottom of pan into the dry ingredients so they are all well coated.
  • 2. Cover and bake for one hour, stirring every 15 minutes. Uncover and bake an additional hour, stirring at the half-hour mark. Cool and pack in airtight containers. (these do take a bit of time but are SO worth it!)

RAGOûT DE PATTES DE COCHON (PORK STEW WITH MEATBALLS)

Ragoût De Pattes De Cochon (Pork Stew With Meatballs) image

This is a traditional Quebecois stew made from pork hocks. I'm looking for recipes that DH remembers from childhood. This one was found on bitsnbites.wordpress.com and grouprecipes.com .The stew is a modification of one by Jehane Benoit, a famous Quebec cook. For a richer stock, caramelize you onions and hocks until dark brown. You can use Recipe #356677 - Caramelized Onions. NOTE: The cooking time doesn't include the optional (but recommended to reduce fat content) overnight refrigeration time.

Provided by Dreamer in Ontario

Categories     Stew

Time 6h45m

Yield 10 serving(s)

Number Of Ingredients 23

3 lbs pork hocks
1 teaspoon coarse salt
1/4 teaspoon pepper, freshly ground
1/2 teaspoon cinnamon, ground
1/4 teaspoon clove, ground
1/8 teaspoon nutmeg
2 tablespoons butter, to caramelize onions
2 tablespoons fat, ie shortening, lard, to brown hocks
4 -6 cups water
1 chicken bouillon cube
1 cup onion, sliced and caramelized
4 -6 tablespoons flour, roasted
1/2 cup water
salt, to taste
pepper, to taste
allspice, to taste
2 lbs ground beef
1 lb ground pork
1 teaspoon salt
1/4 teaspoon pepper, freshly ground
1/2 teaspoon cinnamon, ground
1/4 teaspoon clove, ground
1/8 teaspoon nutmeg

Steps:

  • STOCK:.
  • The day before serving the ragout, season pork hocks with salt, pepper, cinnamon, cloves and nutmeg.
  • Caramelized onions in a deep saucepan in 2 Tbsp butter (Recipe #356677). Remove from saucepan.
  • In same saucepan, melt 2 tbsp fat and , then brown hocks until dark brown in colour on all sides (this is the secret to a great ragout).
  • Add water, chicken bouillon cube, and onions to pork hocks. Bring to a boil, and then simmer for at least two hours, until meat falls from bones.
  • At this point it's a good idea to remove pork hocks from saucepan and refrigerate the hocks and ragout overnight in fridge so that you can.
  • Remove/skim the congealed fat.
  • Roast flour in 350F oven until caramel brown. This takes about 1 hour. (should be dark brown but not burnt so keep an eye on it). Alternatively you may brown the flour in a hot dry pan (No oil!), stirring continuously until it's a rich, deep, brown colour. (You must be careful not to burn the flour by controlling the temperature of your pan and stirring constantly until done).
  • Remove meat from bone and set aside.
  • Thicken ragout by using a jar or blender to mix the roasted flour with the 1/2 cup water and pour into the ragout, stirring until well mixed and broth has thickened to a nice consistency.
  • Season with salt, pepper and allspice to taste.
  • Add cooked pork meatballs and pork meat and heat thoroughly.
  • MEAT BALLS:.
  • Mix all ingredients and pat mixture into a 1 inch thick rectangle, then cut into 1 inch squares.
  • Shape each square into a 1 inch meatball.
  • Bake in 400F oven for 10 minutes.
  • Add to Ragoût de pattes to complete cooking.
  • Ragout is sometimes served with boiled or mashed potatoes.
