Tired of the same old chicken nuggets? Give these a try! Feel free to 'play' with the seasonings, but this is how my family likes them. Serve hot with barbeque sauce or salsa for dipping.

1 quart oil for frying
1 egg
¼ cup milk
2 cups all-purpose flour
2 teaspoons dry mesquite flavored seasoning mix
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
2 pounds cube steak, cut into bite-sized pieces

Steps:

  • Heat the oil in a deep fryer or heavy skillet to 365 degrees F (185 degrees C).
  • In a bowl, beat together the egg and milk. In a resealable plastic bag, mix the flour, mesquite seasoning, salt, pepper, garlic powder, and cayenne pepper. Dip the steak pieces in the egg mixture, then place in the plastic bag, seal, and shake to coat.
  • In the hot oil, fry the coated steak pieces in small batches until golden brown, about 5 minutes. Drain on paper towels.

Yummy, highly seasoned steak nuggets, deep fried and served with Ranch dressing -- just like in the fast food joints in Idaho in the '70's! I missed these so much that I kept playing with the ingredients until I finally came up with this perfect re-creation of the real thing. A taste of the old times when we didn't know how bad deep frying was for us! Serve with ranch dressing, or your favorite bbq sauce, steak sauce, or blue cheese dressing!

1 egg
2 cups buttermilk
2 tablespoons grill seasoning, such as McCormick Montreal Steak Seasoning
½ cup all-purpose flour
1 ½ pounds boneless beef sirloin steak, cut into 2 1/2 x 1/4 inch strips
2 ½ cups all-purpose flour
2 teaspoons garlic powder
salt and pepper to taste
3 cups canola oil for deep frying

Steps:

  • Beat together the egg, buttermilk, grill seasoning, and 1/2 cup of flour in a large bowl until smooth. Add the beef, and toss until well coated. Cover with plastic wrap, and place into the refrigerator to marinate at least 2 hours.
  • Sift 2 1/2 cups flour with the garlic powder, salt, and pepper into a large bowl. Remove steak strips from buttermilk batter and allow excess to drip off. Dredge each piece with seasoned flour and place onto a baking sheet. Place in the freezer and freeze until firm, 1 hour to overnight.
  • Heat oil to 370 degrees F (185 degrees C) in a deep fryer or cast iron skillet.
  • Drop a few frozen steak pieces into the hot oil and fry until golden brown on the outside, about 5 minutes. Do not overcrowd the frying oil, and do not allow the steak strips to thaw before they are fried. Once golden brown, remove to drain on a paper towel-lined plate.

These seared Garlic Butter Steak Bites pack so much flavor and are so easy to throw together! The best part? They're ready in 15 minutes!

1 tablespoon olive oil
1 ½ pound sirloin steak (cut into bite size pieces, or strip loin, tenderloin, strip steak or rib eye)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon butter (unsalted)
4 cloves garlic (minced)
¼ teaspoon red pepper flakes
1 tablespoon parsley (fresh, chopped)

Steps:

  • Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot, then add the steak pieces to it. Season them generously with salt and pepper.
  • Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2 minutes until they're golden brown. If your skillet isn't big enough, you may need to do this batches.
  • Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
  • Pour the garlic butter over the steak bites and toss well. Garnish with parsley and serve.

1 lb. (0.4 kg) top sirloin steak, cut into bite-sized cubes
1 teaspoon smoked paprika
1/2 teaspoon Maldon sea salt flakes or kosher salt
4 tablespoons unsalted butter, room temperature
12 cloves peeled small garlic
ground black pepper
1/2 tablespoon Italian Seasoning (I used McCormick Italian Seasoning)
1 teaspoon homemade dry rub
1 tablespoon chopped Italian parsley
3 squirts fresh lemon juice

Steps:

  • Cut the sirloin steak into equal, bite-sized pieces.
  • Marinate the steak bites with smoked paprika, salt and black pepper. Set aside.
  • Heat up a skillet, cast-iron preferred on high heat. Add the butter. As soon as it melts, add garlic cloves and stir a few times. Add the steak bites. Stir and cook continuously, flip, turn and toss around with the garlic. Add the Italian seasoning and homemade dry rub, stir to combine well.
  • As soon as the steak bites are cooked, about 3-4 minutes, add the chopped parsley. Stir to combine well with the steak. Remove the skillet from the stove top, add the lemon juice on top of the steak and serve immediately.

Today I'll show you how to make my gourmet Steak Bites, which are actually about as UN-gourmet as it gets.

1 lb. Sirloin Steak (without Much Gristle) Or Pre-cut Beef Tips
Kosher Salt To Taste
Fresh Ground Black Pepper To Taste
2 tbsp. Butter

Steps:

  • Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before.   • Cut beef into ¾" cubes and trim away any excess fat or gristle. Season steak cubes lightly with salt and pepper. Remember, the sauce will also contain the salt from Worcestershire sauce.
  • Heat a large heavy-bottom skillet, preferably cast iron, over medium-high heat and allow it to become very hot. Add 1 Tbsp butter and swirl the pan to melt butter and coat the bottom of pan.
