CHEESE BITES (TOTALLY ADDICTIVE)

Cheese Bites (Totally Addictive) image

Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

MINI CHEESE BALL BITES

Mini Cheese Ball Bites image

Mini Cheese Ball Bites are bite-sized cheese balls that are studded with dried cranberries and blue cheese crumbles and then rolled in toasted pecans and skewered with pretzel sticks for fun, easy appetizers!

Provided by Samantha Skaggs

Categories     Appetizer

Time 20m

Number Of Ingredients 5

8 ounces cream cheese (at room temperature)
3/4 cup (about 3 ounces) blue cheese crumbles
3/4 cup dried cranberries (finely chopped)
1 1/2 cups pecans
Pretzel sticks

Steps:

  • In a medium bowl, beat together cream cheese, blue cheese, and dried cranberries until smooth. Dampen hands to prevent sticking and form cream cheese mixture into approximately 24 tablespoon-sized balls. Cover and refrigerate for at least two hours or until firm.
  • In the meantime, toast the pecans by spreading out on a sheet pan and baking in a preheated 350°F oven until lightly toasted and fragrant, for 7 to 10 minutes. Allow pecans to cool and finely chop them.
  • Roll chilled cheese balls in chopped pecans, pressing nuts so that they adhere. Keep cheese balls refrigerated until ready to serve. Just before serving, skewer each cheese ball with a pretzel stick.

  • Take a small amount of the cream cheese mixture and roll it into a bite-size ball. It will be sticky but that’s OK. Place the ball onto the plate/chopping board and repeat until you have used all the cream cheese mixture. You should get 12 balls.
  • Refrigerate for 3 hours. After 3 hours, take them out and place each cheese ball onto a Ritz cracker. Using your finger press down each ball so that they look more like pumpkins. Now, insert a little piece of a pretzel stick into each ball and decorate with chives (I took a chive stem and split it in half (lengthwise) and again in half. It naturally curled up so I cut it smaller and stuck in the ball).
