BISTRO STYLE ROSMARY CHICKEN
Why chicken thighs? Why not chicken thighs!!!???? They are inexpensive; for post-recession savvy shoppers, plus they are full of flavor, way more flavor than the all-holy breast meat. The fat content is high, making them crisp up brilliantly when baked or fried, giving that perfect golden color we all love. So give chicken thighs a chance, for a change of pace and flavor.

- Pre-heat oven to 375'F
- Rinse and pat dry the 8 defrosted chicken thighs. set aside.
- In a food processor, add garlic, black pepper, salt, garlic power, rosemary, basil and red pepper flakes. Slowly add olive oil as you pulse food processor until you make an oily paste out of the ingredients. (You want a paste that's not dry and clumpy, but not runny and liquified. Add or subtract the amount of oil you use according to different factors; sometimes fresh herbs are dry and absorb more oil.)
- Take your chicken thighs back out. You want to coat each piece of chicken entirely with the oil and herb mixture. You also want to gently lift up the skin and coat under the skin with the oil and herb mixture. (Be-careful not to tear the skin.)
- Place chicken skin side up in a baking dish and cover the chicken with the diced onions. Salt and pepper entire baking dish as you desire.
- Bake for 30 minutes, then baste chicken thighs. Continue to bake for an additional 30 minutes until cooked through.
ROTISSERIE LEMON-ROSEMARY CHICKEN

- Wash chicken inside and out under cold water and pat dry.
- Remove any excess fat from the skin and put chicken in a 2-gallon zip top bag.
- Mix marinade ingredients and pour over chicken.
- Marinate in refrigerator about 8 hours.
- Remove chicken from marinade and drain.
- Load chicken onto spit rod assembly. Truss according to manufacturer's directions, or tie the legs together and tie another string around the body and wings so the wings don't flop around during cooking.
- Roast until an instant-read meat thermometer inserted into the thickest part of the thigh registers 175 degrees, about 20 minutes per pound.
- Remove chicken from spit, cover loosely with foil and let rest for about 10 minutes before carving.
BRICKED ROSEMARY CHICKEN WITH LEMON - BOBBY FLAY

- Whisk together the oil, lemon juice, 1 tablespoon of the zest, 6 cloves of the garlic, and 3 tablespoons of the rosemary in a large baking dish. Add the chickens and turn to coat. Cover and marinate in the refrigerator for at least 1 hour and up to 8 hours.
- Combine the parsley with the remaining 2 teaspoons lemon zest, 4 cloves of garlic, 1 tablespoon rosemary, 1/4 teaspoon of the salt, and 1/4 teaspoon of the pepper in a small bowl and set aside.
- Heat your grill to medium. Wrap 4 bricks in aluminum foil and set aside.Remove the chickens from the marinade, shaking off the excess, and season both sides with the remaining 1 teaspoon salt and 1 teaspoon pepper. Place the chickens breast side down on the grill and place 2 bricks on top of each chicken. Grill the chickens for 8 to 10 minutes, turn the chickens over, and replace the bricks. Close the cover and continue cooking for 8 to 10 minutes until cooked through (160 to 170 degrees F).
- Transfer the chickens to a cutting board and let rest for 10 minutes. Cut into quarters and sprinkle with the fresh lemon mixture. Serve with grilled lemon wedges.
- *To Butterfly Chicken:.
- Place the chicken breast side down on a cutting board and cut along each side of the backbone using kitchen shears or a sharp knife. Remove the backbone and discard. Turn the chicken breast side up and pull out each side where the backbone was removed. Using the heel of your hand to press down on the breast, break the breastbone to flatten the chicken.

ROAST CHICKEN WITH ROSEMARY
When I was in Vicenza, Italy at an open market downtown, I smelled this scrumptious smell of roast chicken at this stand. So I bought one of their chickens and looked what they stuffed in the cavity to make it taste so good! I also do my turkeys like this too!

I believe I got this recipe from the Food Network. It's so quick and easy to make -- and so delicious. And it makes such a nice presentation served sliced on a platter with fresh rosemary sprigs as garnish. Very, very tasty

- Place balsamic vinegar in one pie plate (or similar container).
- Place the olive oil in another pie plate (or similar container).
- Coat chicken with balsamic vinegar, then olive oil.
- Season chicken with rosemary, salt and pepper and let stand 10 to 15 minutes.
- Heat a medium nonstick skillet over medium heat .
- Add chicken breasts and cracked garlic to the pan.
- Cook chicken 12 minutes, or until juices run clear, turning occasionally. The balsamic vinegar will produce a deep brown, sweet finish on the chicken as it cooks.
- Slice each chicken breast and serve on plate.
