1 cup Original Bisquick™ mix
1 cup milk
1/2 cup sour cream
1 teaspoon dried dill weed
4 eggs
2 cans (6 oz each) boneless skinless salmon, drained, flaked
1 cup shredded Havarti or Swiss cheese (4 oz)

Steps:

  • Heat oven to 375°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, stir Bisquick mix, milk, sour cream, dill weed and eggs with wire whisk until blended. Gently stir in salmon and cheese. Pour into pie plate.
  • Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean.

This is a quick, easy recipe to make. Very delicious and very satisfying. I serve it with peas and cinnamon applesauce.

1 (1 lb) can salmon, flaked (I use one large can and one small can)
2 eggs, slightly beaten
1/2 cup milk
1/2 cup buttered bread crumb
1 teaspoon lemon juice
1/2 teaspoon salt
1 dash pepper
1 small chopped onion
1 tablespoon chopped parsley or 1 tablespoon green pepper
1 tablespoon melted butter
1/2 teaspoon sage (optional)
Ritz cracker, crushed
butter, melted

Steps:

  • Combine ingredients in order given.
  • Pack firmly in buttered loaf pan and bake in a 350 degree oven for 30-40 minutes.
  • For topping: Mix enough butter in with the Ritz crackers to moisten.
  • Sprinkle generously on top of casserole.

1 (14.75 ounce) can salmon, undrained
½ cup crushed saltine crackers
½ cup milk
1 egg, beaten
salt and pepper to taste
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the salmon, cracker crumbs, milk, egg, salt, pepper, and melted butter. Mix thoroughly.
  • Press the salmon mixture into a lightly greased 9x5 inch loaf pan.
  • Bake in a preheated oven for 45 minutes or until done.

This is an old, old recipe from my Aunt Jeanie-Beanie. I loved this one as a kid and my family enjoys it now.

1/3 cup milk
1 cup soft breadcrumbs
1 (15 1/2 ounce) can red salmon or 1 (15 1/2 ounce) can pink salmon, drained, flake, and picked over
2 eggs, separated
1 lemon, juice of
1/2-3/4 teaspoon salt
1/4 teaspoon onion salt
1/4 teaspoon pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
salt and pepper

Steps:

  • To make Salmon Loaf: Add milk and breadcrumbs to a bowl; stir to combine; set aside.
  • In another bowl beat the egg yolks until thick and the color of lemons.
  • Add in the breadcrumb mixture, lemon juice, salts, and pepper; stir to combine.
  • Add in salmon; stir to combine; set aside.
  • In yet, another bowl, beat the egg whites until stiff but not dry; add to the salmon mixture; fold in gently.
  • Spoon mixture into a greased 7 1/2 x 3 x 2 inch loaf pan.
  • Bake at 400°F for 35 minutes.
  • In the meantime, make white sauce: let the butter melt in a saucepan over low heat.
  • Add in the flour and stir until smooth.
  • Cook for 1 minute while stirring constantly.
  • Gradually pour in the milk; cook over medium heat and stir constantly until mixture is thickened and bubbly.
  • Add in salt and pepper to taste.
  • Cut salmon loaf into slices and serve with white sauce on top.

BETTY CROCKER'S SALMON LOAF

A family favorite from way back, the recipe can be found in one of Mom's OLDEST Betty Crocker cookbooks under the title of, "Seafood Loaf." Mom always made it with salmon, and we always cleaned our plates when she made it. What's best is this makes a LOT of loaf for a big family. You can use canned tuna, but our favorite was always canned salmon.

2 cups salmon, drained (1-13 oz can)
2 tablespoons margarine
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups milk (can use skim milk)
2 cups soft white bread cubes
2 eggs
1 tablespoon lemon juice
1 (10 ounce) can condensed mushroom soup
0.5 (10 ounce) can water

Steps:

  • Rinse and drain salmon, picking out any bones or skin you find. Let sit to drain well.
  • Prepare White Sauce: In saucepan on stove, heat margarine, flour, salt, pepper, and milk. Stir over low heat until slightly thickening. This should be the consistency of a coffee cream.
  • Grease 9x5x3 loaf pan. Preheat oven to 350.
  • Beat eggs until light fluffy. Add lemon juice.
  • Toss together the bread cubes and salmon. Pour egg mixture over and toss gently. Add white sauce and toss gently.
  • Add mixture to loaf pan and gently press to fill loaf pan firmly.
  • Bake at 350 for 35-45 minutes.
  • Before serving, combine soup and water to make a sauce to top loaf.
  • You can turn out of loaf pan or serve in pan. Pass around the sauce (in gravy/sauce dish) to pour atop servings. ENJOY!

1 (10 ounce) can cream of celery soup
1 cup cracker crumbs or 1 cup breadcrumbs
2 eggs, slightly beaten
1/2 cup chopped onion, sauteed
1/2 teaspoon mustard
salt and pepper
1/4 cup chopped green pepper (optional)

Steps:

  • Drain salmon; save 1/4 cup liquid. Remove skin and bones from salmon, flake.
  • Thoroughly mix salmon with salmon liquid and other ingredients; pack into a greased loaf pan(9X5X3).
  • Mixture is soft before baking.
  • Bake at 375 degrees for 1 hour or until browned. Cool loaf in pan for 10 minutes; loosen sides of pan and turn out on platter.

  • Arrange hard boiled eggs, tomato and cooked asparagus around plate, optional.
