BISQUICK® POTATO PANCAKES
Potato pancakes, or latkes, are eaten traditionally during Hanukkah, but they are great to serve any time, especially topped with sour cream or applesauce.

Steps:
- Beat eggs in medium bowl with hand beater until fluffy. Stir in milk, potatoes, Bisquick, onions and salt. Melt 1 tablespoon of the butter in 12-inch nonstick skillet over medium heat.
- Using 1/4 cup potato mixture for each pancake, place 8 mounds into skillet. Flatten each with spatula to about 4 inches in diameter.
- Cook pancakes about 3 to 4 minutes on each side or until golden brown. Remove from skillet; cover to keep warm. Repeat with remaining tablespoon butter and potato mixture. Add additional butter as needed to prevent sticking.

We grew our own potatoes on the small farm in New Hampshire where I was raised. These pancakes are very good served with any pork dish.

- In a sieve or colander, drain potatoes, squeezing to remove excess liquid. Pat dry; set aside. , In a large bowl, combine the flour, baking powder and salt. Stir in eggs until blended. Add onion and reserved potatoes; toss to coat., Drop by tablespoonfuls onto a preheated greased skillet. Fry in batches until lightly browned on both sides. Drain on paper towels. Serve with applesauce or syrup if desired.

- Coarsely grate potatoes and onion into a colander in the sink. Squeeze out as much liquid as possible, then transfer vegetables to a large bowl; mix in egg, flour, 1 teaspoon salt, and 1/4 teaspoon pepper.
- Heat oil in a large nonstick skillet over medium. Working in batches, drop 1/4-cup mounds of potato mixture into the skillet; press lightly with a spatula to flatten. Me, tweaking the recipe on back of the box. I love pancakes and these fit the bill for me. I keep the pancakes warm by placing a clean dishtowel on a plate, add a double layer of paper towels the same length as dishtowel on top of the dishtowel. Place hot pancakes onto the papter towel. - 1. Place lemon juice in measuring cup and add enough milk to make 1 cup; let sit (abt. 5 mins.)while assembling other ingredients.
- 2. In bowl mix together bisquick, baking powder, sugar and cinnamon. Add eggs, vanilla and milk mixture, stir until all ingredients are combined. Do not over mix.
- 3. Heat griddle until a drop of water will dance across it. Brush about 1/2 tsp oil on griddle. (I only grease the griddle on the first batch, never after that.) Ladel pancake batter onto griddle. When bubbles appear and edges lose some of their shine it's time to flip and cook the other side. Cook until golden. Serve with butter and warm syrup or your favorite pancake toppings.
