Pancake Recipe with Bisquick image

This Pancake Recipe with Bisquick makes light and airy pancakes that melt-in-your-mouth. It's easy to whip up for a delicious breakfast any day of the week!

2 eggs
1 cup whole milk
1 tsp vanilla
2 cups bisquick (find my homemade bisquick recipe here)
2 tbsp brown sugar
2 tbsp butter, melted

Steps:

  • Beat the eggs for 2-3 minutes until light in color and airy.
  • Briefly whisk in the milk and vanilla.*
  • Add the bisquick and brown sugar. Whisk until just combined.
  • Lightly whisk in the melted butter.
  • Heat skillet or griddle to medium heat. Lightly grease.
  • Pour 1/4 cupfuls of batter onto hot skillet or griddle. Flip when to cook on the other side when edges of pancakes are dry.
  • Serve while warm. Store leftovers in an airtight container in the fridge or freezer with parchment between layers.

1/4 teaspoon ground cinnamon
1 tablespoon brown sugar
Maple syrup, if desired

Steps:

  • In medium bowl, stir Bisquick mix, buttermilk, sweet potatoes, eggs, cinnamon and sugar with wire whisk or fork until blended.
  • Brush griddle or nonstick skillet with vegetable oil; heat griddle to 350°F, or heat skillet over medium-low heat.
  • For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown. Serve with syrup.

1/4 cup milk
2 ½ cups refrigerated shredded hash brown potatoes
1/2 cup Original Bisquick™ mix
2 tablespoons thinly sliced green onions or finely chopped onion
1/2 teaspoon salt
2 tablespoons butter or margarine

Steps:

  • Beat eggs in medium bowl with hand beater until fluffy. Stir in milk, potatoes, Bisquick™, onions and salt. Melt 1 tablespoon of the butter in 12-inch nonstick skillet over medium heat.
  • Using 1/4 cup potato mixture for each pancake, place 8 mounds into skillet. Flatten each with spatula to about 4 inches in diameter.
  • Cook pancakes about 3 to 4 minutes on each side or until golden brown. Remove from skillet; cover to keep warm. Repeat with remaining tablespoon butter and potato mixture. Add additional butter as needed to prevent sticking.

Optional toppings: butter, maple syrup, pumpkin seeds

Steps:

  • Gather the ingredients. Preheat an electric griddle to 375 F or heat a large frying pan over medium-high heat. Lightly grease if needed.
  • Whisk together the baking mix, eggs, milk, pumpkin, sugar, cinnamon, and nutmeg until well-combined. Do not overmix. Let the batter rest for 10 minutes.
  • Turn down the griddle to 350 F or the burner down to medium heat. Ladle 1/4-cupfuls of the batter onto the griddle. Cook until the edges of the pancakes start to set and bubbles start to form on the surface of the pancakes.
