ZUCCHINI BROWNIES

Brownie lovers, rejoice! This is the chocolaty solution for all your extra summer zucchini. With fudge brownies, mini chocolate chips and chocolate frosting for good measure, you get triple the chocolate in an easy, sweet summertime treat!

1 box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1 cup coarsely shredded zucchini (about 1 medium)
1/2 cup miniature chocolate chips
1 container Betty Crocker™ Rich & Creamy chocolate frosting

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in zucchini and chocolate chips. Spread in pan.
  • Bake 23 to 27 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • Spread frosting over top. Cut into 6 rows by 4 rows. Store covered in refrigerator.

1 box (18.3 oz) Betty Crocker™ traditional fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1/2 cup miniature chocolate chips
4 oz (half of 8-oz package) cream cheese, softened
2 cups milk
1 box (3.3 oz) Jell-O™ white chocolate-flavor instant pudding & pie filling mix
2 cups (from 8-oz container) Cool Whip frozen whipped topping, thawed
2 tablespoons Hershey's™ chocolate-flavor syrup

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in chocolate chips. Spread in pan.
  • Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Transfer to cooling rack to cool completely, about 1 hour.
  • In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Decrease speed to low; slowly add 1/2 cup of the milk. Beat in dry pudding mix, scraping bowl as needed. Slowly with mixer running, add remaining 1 1/2 cups milk; beat until well blended. Beat in whipped topping. Spread on top of cooled brownie base. Drizzle chocolate syrup in random pattern over top of bar. Pull table knife through topping for ripple design.
  • Refrigerate uncovered until set, about 4 hours. Cut into 6 rows by 4 rows. Store loosely covered in refrigerator.

1/2 cup crushed pretzels
Fleur de sel or coarse sea salt to taste

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • In medium bowl, stir brownie mix, water, oil and eggs until blended. Stir in crushed pretzels. Spread in pan.
  • Bake about 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool on cooling rack about 1 hour. Cut into 6 rows by 4 rows. Sprinkle brownies with salt.

1/4 cup butter
2 cups Bisquick
1 (14 ounce) can sweetened condensed milk
1 egg, slightly beaten
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Grease 13 x 9-inch pan.
  • In large saucepan, over low heat, melt ONE CUP semi-sweet chocolate chips with butter; remove from heat. Add Bisquick, sweetened condensed milk, egg and vanilla extract. Stir in remaining semi-sweet chocolate chips.
  • Spoon batter into prepared pan.
  • Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan.

1/2 cup flour
1/3 cup cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
2 eggs
1/2 cup oil (I use canola)
1 teaspoon vanilla

Steps:

  • Mix all these ingredients together with a whisk and dump them into a ziploc to save. Should be good in the pantry for 6 months.
  • When making the brownies, preheat oven to 350°F
  • Add eggs, oil and vanilla and mix with a fork til just blended. Do not overmix.
  • Pour into a silicone or buttered 9x9 pan. Bake for 20-25 minutes.
