CRUSTLESS SPINACH QUICHE

Steps:
- In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350° for 40-45 minutes or until a knife inserted in center comes out clean.

- Heat oven to 375°F. Spray quiche dish, 9x1 1/2 inches, with cooking spray.
- Mix 1 1/2 cups of the cheese, the whipping cream, pesto, spinach and eggs until well blended; pour into quiche dish.
- Bake 25 to 30 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 2 to 3 minutes longer or until cheese is melted.
- While quiche is baking, heat spaghetti sauce in small saucepan until hot; keep warm. To serve, cut quiche into wedges. Serve with spaghetti sauce.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
- Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
- In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.

- Add the Bisquick, and whisk until you form a smooth mixture.

The Bisquick impossible quiche recipe is simply the easiest and best quiche ever! I no longer bother making one with a crust and actually prefer this one.

- Preheat your oven to 400 °F.
- Lightly grease a 10-inch pie plate.
- Sprinkle the crumbled bacon, shredded cheese, and diced onion evenly over the bottom of the pie plate.

- Add in the Bisquick and beat until smooth - it must be smooth to work!

Add spinach to onion and add garlic and onion powders saute for a minute or two to incorporate the flavors then remove from the heat. In a blender, mix all remaining ingredients and blend until mixed well. Spray your dish ( I use a 9 inch pie plate) with cooking spray or butter it but add the extra calories. Spread the spinach mixture in the bottom of your baking dish then pour liquid mixture on top and stir slightly to mix all in. Bake at 325 F for 50-60 minutes, until a knife comes out clean. Be careful not to overcook. Serve room temperature. Great any time of the day especially for brunches. Makes a great quick dinner too if you have leftover quiche.
