2 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
1 teaspoon salt
1/3 cup butter or 1/3 cup margarine, cold
3/4 cup milk, cold

Steps:

  • Preheat oven to 425 F Mix first 4 ingredients together in a bowl.
  • Cut in butter with a pastry blender or a fork, or two knives, until crumbly.
  • Add milk.
  • Stir until it forms a ball.
  • Add a bit more milk if necessary to make a soft dough.
  • Roll or pat to 1 inch thick. (I usually pat the dough).
  • Cut into circles with a biscuit cutter or a floured glass.
  • Arrange on a greased baking sheet.
  • Bake in 425 F for about 10- 12 minutes or until risen and nicely browned. (in my oven it usually takes 15 minutes).
  • This is supposed to make 12, but I almost always only get 11 biscuits, with the size of the glass that I use.
  • Variations: Try adding some fresh or dried herbs. Some good pairings are basil and oregano, or parsley and fresh ground black pepper, or thyme and garlic, or add some grated sharp or old cheddar cheese.

½ cup shortening
¾ cup milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large mixing bowl sift together flour, baking powder and salt. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs.
  • Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft, moist and pulls away from the side of the bowl.
  • Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch thick sheet and cut with a floured biscuit or cookie cutter. Press together unused dough and repeat rolling and cutting procedure.
  • Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 10 minutes.

2 cups (283g) unbleached all-purpose flour ((scoop and level to measure))
1 Tbsp aluminum free baking powder
2 tsp granulated sugar
1/4 tsp baking soda
1/2 tsp salt
8 Tbsp (113g) unsalted butter, (divided, 7 Tbsp very cold, 1 Tbsp melted)
1 cup buttermilk, (cold)

Steps:

  • Preheat oven to 450 degrees. Line an 18 by 13-inch baking sheet with a silicone baking liner or with a sheet of parchment paper that's oven safe to 450 degrees.
  • In a large mixing bowl whisk together flour, baking powder, sugar, baking soda and salt for 20 seconds.
  • Cut 7 Tbsp cold butter into small cubes. Add to flour mixture and cut butter into mixture with a pastry cutter until there are small clumps of butter about the size of peas, make a well in the center of mixture.
  • Pour buttermilk into well then fold mixture with a rubber spatula until it comes together. Gently turn and press dough to bring together completely, then drop onto a lightly floured surface.
  • Gently roll dough out to a large rectangle, about 10 by 9. Fold in half then repeat gently rolling and folding process twice more.
  • Gently roll and shape final rectangle to 9 1/2-inches by 4 3/4-inches (nearly 1-inch high).
  • Dip a 2 1/4-inch or 2 1/3-inch round biscuit cutter** in flour, cut dough into 8 rounds***.
  • Transfer to baking sheet spacing apart. Bring remaining dough scrapes together and gently press and form a small rectangle, cut 2 more biscuits, transfer to baking sheet.
  • Bake in preheated oven 11 - 13 minutes until golden brown and cooked through****. Brush with 1 Tbsp melted butter and serve warm.

4 tablespoons unsalted butter, chilled
1/2 cup buttermilk (plus extra if needed)

Steps:

  • Preheat the oven to 450 and line a quarter sheet baking pan with parchment paper.
  • In a small bowl, whisk together the flour, salt, baking soda, and baking powder.
  • Cut the butter into small pieces and add it to the flour mixture, cutting it in with a pastry cutter or two knives. When all of the pieces of fat are the size of rice and are coated in flour, pour in the buttermilk. Knead it slightly, and add additional buttermilk 1 tablespoon at a time if the biscuit dough seems dry or crumbly.
  • Tip the dough out onto a floured counter, and knead it 3 or 4 times to bring it together.
  • Pat it out to 1" thick. Dip your 3" biscuit or cookie cutter in flour and cut out 4 biscuits. Gather up the scraps and gently pat them out in order to cut out more biscuits.
  • Arrange the biscuits on the pan, evenly spaced. Bake for 9-10 minutes, or until lightly golden on top. If you want, brush with extra melted butter as they come out of the oven.

Steps:

  • Preheat oven to 450F (Give it enough time to get there, you want it hot)
  • Put the flour and cold butter in a food processor. You can also do this by hand. Pulse the machine 20-25 times until the butter is incorporated and the mixture is crumbly.
  • Remove the contents to a large bowl and stir in the buttermilk just until everything is moistened.
  • Turn the dough out onto a lightly floured surface and bring it together gently with your hands, but don't over work the dough. Pat or roll it out to about 1 1/2 inch inch thick. Cut out 8 biscuits with a 2 1/2" biscuit cutter, reforming the dough if necessary.
  • Place on a baking sheet, in cast iron skillet, or a biscuit baker, and brush lightly with buttermilk, if desired. Bake for 10 minutes or until golden and risen.
  • If you like, brush the hot biscuits immediately with melted butter, and enjoy.

And some time that's just way too much for two ( or 4 ) people.While I was looking through my treasured 1996 Taste of Home Annual Recipes, I discovered this recipe that was sent into them by Sylvia McCoy of Lees Summit, Missouri. While making this recipe, I did make a couple of changes on the way that they were made. But, I don't think it affected the finished product.For higher biscuits, I double sifted the dry ingredients( I've always done that :) )If you have the above mentioned Cookbook,please check page 191 for the original recipe.I know this seems like alot of steps, but it's really easy. :)Submitted to " ZAAR " on October 6th, 2009

1 1/2 Tbsp baking powder ((aluminum free))
1 tsp granulated sugar
3/4 tsp salt ((we use fine sea salt))
1/2 cup unsalted butter ((8 Tbsp, cold))
1 cup half and half (minus 2 Tbsp)*
1/2 Tbsp melted butter (to brush the baked biscuits)

Steps:

  • Dice butter into 1/2" cubes and refrigerate until needed.
  • In a large mixing bowl, combine flour, baking powder, sugar and salt. Whisk thoroughly.
  • Add diced cold butter and cut it into the flour using a pastry blender (or two knives or a fork), until the largest butter pieces are pea-sized.
  • Add 1 cup - minus 2 Tbsp of Half and Half all at once and stir until mixture comes together and is mostly moistened. Do not over-mix.
  • Turn dough out onto a floured surface. If dough is very sticky, lightly sprinkle the top with flour.
  • Pat dough into a rectangle then fold it in half and pat into another rectangle. Fold a second time and pat into a 5"x10" rectangle or 3/4" thickness. Dip a 2 1/2" round biscuit cutter into flour and cut out 8 biscults. Pull together scraps and form into a rectangle to cut an extra 2 biscuits.
  • Place biscuits on a parchment-lined baking sheet 1-inch apart and bake at 450˚F for 12-15 minutes or until tops are golden brown and biscuits are baked through. While bicuits are hot, brush tops with 1/2 Tbsp melted butter. Transfer to a wire rack to cool 10 minutes then serve.
