TURKEY AND BISCUIT TURNOVERS

Turkey and Biscuit Turnovers image

From Evelyn Tribole's Healthy Homestyle Cooking. My whole family gave this high marks. I couldn't find whole grain biscuit dough, so I just used 9 oz of lowfat biscuit dough instead. I also used ff cream of chicken soup instead of the mushroom. The cookbook gives the stats as: 366 calories, 9 g fat per serving

Provided by wife2abadge

Categories     Turkey Breasts

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

3 tablespoons soft-style light cream cheese
2 tablespoons 98% fat-free cream of mushroom soup, with 1/3 less salt
2 tablespoons evaporated skim milk
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups turkey breast, cooked and diced
1 tablespoon onion, shredded
1 (9 ounce) can refrigerated whole wheat biscuit dough
1 egg white, lightly beaten
2 tablespoons fine seasoned dry bread crumbs

Steps:

  • In a medium bowl, stir together the cream cheese, condensed soup, milk, salt, and pepper until smooth.
  • Add the turkey and onions and mix well.
  • Separate the refrigerated dough into eight biscuits; roll two biscuits together to make a ball (so you have four balls total).
  • Use a rolling pin and roll each ball into a 6-inch circle (I rolled between sheets of parchment to prevent sticking -- worked like a charm).
  • Spoon about 3/4 cup of turkey mixture onto half of each circle and fold it over to make a turnover.
  • Seal the edges with the tines of a fork.
  • Brush the tops with egg white and sprinkle with bread crumbs.
  • Transfer turnover to a cookie sheet lined with parchment paper.
  • Bake at 350 degrees for 20-25 minutes, or until golden brown.

FRIED APPLE-STUFFED BISCUIT TURNOVERS (AKA FRIED APPLE PIE)

Fried Apple-Stuffed Biscuit Turnovers (Aka Fried Apple Pie) image

This is a cheat recipe that uses canned biscuits like Pillsbury refrigerated biscuits. It's pretty easy too as it uses canned apple pie filling, but I suppose if you're feeling inspired, you could create your own apple filling instead. The trick is really to roll these out enough so they appear more like a turnover instead of having that biscuit thickness. These are great on Sundays in the Fall. Also, these are supposed to be made in a cast iron skillet for best results. You can also use other fruit fillings too instead of just apple, like blueberry, strawberry, peach, even bananas with caramel sauce & cinnamon. Garnish with a dab of fresh whipped cream or cool whip and sprinkle the turnovers with confectioners sugar. Serve with fresh berries as a dessert.

Time 30m

Yield 8-10 serving(s)

Number Of Ingredients 6

vegetable oil, for frying
2 (7 1/2 ounce) cans large buttermilk biscuits
1 (21 ounce) can apple pie filling
1/4 cup sugar (plus more for dusting)
2 tablespoons ground cinnamon (plus more for dusting)
1/4 cup flour (for rolling)

Steps:

  • Pour the oil into a large cast iron skillet about 1/2-inch up the sides and heat to about 350 degrees F.
  • Remove biscuits from cans, flour them and roll each 1 out to a 5-inch round.
  • Place 1 large tablespoon of apple filling on a round leaving a 1/2-inch edge all around. Place another rolled out round on top of the filling, pressing around the edges to seal. (You should dip your fingers in water and wipe around the edge of the bottom biscuit to enable it to stick to the top biscuit.) Dip end of dinner fork in flour and press continuously around edge to seal. Repeat with remaining biscuits.
  • Place 3 or 4 of the pies in the preheated cast iron skillet. Fry for about 2 minutes per side or until golden brown.
  • Transfer to paper towels to drain and sprinkle with cinnamon and sugar while still hot. Serve with whipped cream and confectioners' sugar, if desired.

Provided by Maureen O'leary

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Time 55m

Yield 8

Number Of Ingredients 12

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.
