Spiral Sliced Ham With Jezebel Sauce and Cheese Biscuits image

Rachael Ray's Get Togethers. The egg and oil in the biscuits are so the recipe could be published. Use whatever your mix calls for.

16 ounces spiral sliced cooked ham
1 (15 ounce) can crushed pineapple
1 (10 ounce) jar apricot preserves
3 tablespoons dry mustard
1/2 cup prepared horseradish
1 teaspoon black pepper
2 (10 ounce) boxes biscuit mix, mixed to package directions
1 egg
1/4 cup oil
1 cup cheddar cheese, shredded
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 425.
  • Remove ham from packaging anc cover loosely in foil. Bake to warm ham through, 25-30 minutes.
  • Make the sauce by combining all of the ingredients in a bowl.
  • Make the biscuits: Combine prepared biscuit mix with cheddar cheese and nutmeg. Bake biscuits on a nonstick cookie sheet (according to package directions).

This is my favorite spiral ham recipe. It will feed a crowd, or use what's remaining in two recipes. No one groans about ham leftovers when these items are on the menu. -Marilou Robinson, Portland, Oregon

1 large onion, sliced
2 tablespoons butter
1 fully cooked spiral ham (7 to 9 pounds)
1-1/2 cups chicken broth
1 cup red wine or additional chicken broth

Steps:

  • In a small skillet, saute the onion in butter until tender; transfer to a roasting pan. Place ham on top. Pour the broth and wine or additional broth over ham. Bake, uncovered, at 325° for 2-3 hours or until a thermometer reads 140° and ham is heated through.

These would be a delicious way of using up leftover ham from the Holidays.. I found this in my Feb 2011 Taste of Home Magazine I made these last New Years Eve with leftover ham, and were delicious..everyone loved them and wanted more..

2 cup(s) all purpose flour
3 1/2 teaspoon(s) baking powder
2 teaspoon(s) sugar
1 teaspoon(s) salt
1/2 cup(s) shortening
1 - egg
3/4 cup(s) milk
FILLING
2 1/2 cup(s) ground fully cooked ham
1 small onion, finely chopped
1 - egg
2 tablespoon(s) prepared mustard
2 tablespoon(s) minced fresh parsley or 2 teaspoon dried
1 tablespoon(s) prepared horseradish
1/4 teaspoon(s) pepper
CHEESE SAUCE ( OPTIONAL)
3 tablespoon(s) butter
3 tablespoon(s) flour
1/2 teaspoon(s) salt
1/4 teaspoon(s) white pepper
2 cup(s) milk
1 cup(s) shredded cheddar cheese

Steps:

  • In a large bowl, combine flour, baking powder, sugar and salt. Cut in shortening until mixture resembles coarse crumbs. ( I used my food processor). Combine egg and milk; stir into crumb mixture just until moistened. Turn onto floured surface; knead 12 times. Roll into a 12 in, x 10 rectangle.
  • Combine the filling ingredients; spread over dough to within 1/2 in. of edges. Roll up jelly - roll style, starting with a long side; pinch seam to seal. Cut into 1 in. slices.
  • Place cut side down on a greased baking sheet. Bake at 425 degree for 15 - 18 minutes or until golden brown.
  • Cheese Sauce ( optional) I didn't use. In a pan, melt butter. Stir in flour, salt and white pepper until smooth. Gradually add milk. Bring to boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Serve with ham slices.

  • In a medium saucepan over medium heat combine the apple juice, brown sugar, and maple syrup. Bring to a low boil then reduce heat to medium low and simmer for approximately 10-15 minutes, stirring occasionally. Glaze is ready when it's thickened and shiny.
  • Place ham in a baking greased baking dish and coat with half of the glaze mixture. Cover pan with foil, tenting so foil does not touch the ham, and bake for approximately 1 1/2 to 2 hours, or until a thermometer inserted at the thickest part of the ham reads 140 degrees F.
  • Pour remaining glaze over the top of ham, and return to oven, uncovered. Turn temperature to 450 degrees and bake for another 5-7 minutes, keeping a close eye on it to prevent burning. When glaze is turning dark and caramelizing (but not burning!) remove from oven. Serve and enjoy.
