CHICKEN CORDON BLEU BISCUIT CASSEROLE
This is very easy to put together and pretty tasty in my opinion! I came up with it when one night when I thought chicken cordon bleu sounded good, but only had cubed chicken on hand. You can use shredded cheese instead of sliced, add broccoli or more meat, use homemade biscuits... it's pretty forgiving. These are just the ingredients I happened to have on hand that day, but feel free to adjust to suit your tastes.

Steps:
- Melt butter in saucepan over low heat and blend in flour, salt,& pepper.
- Cook over low heat,stirring until mixture is smooth and bubbly.
- Stir in milk until smooth, let boil for about 1 minute and remove from heat.
- Add chicken and ham to butter/milk mixture.
- Spread into an 11x7 pan and cover with sliced cheese.
- Place biscuits on top (I usually flatten in the palm of my hand so that they fit better and bake faster).
- Pour melted butter over biscuits and sprinkle with breadcrumbs.
- Bake at 350 for 15-20 minutes, or until filling is hot and bubbly and biscuits are browned, and enjoy!

- Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. 2 In large microwavable bowl, mix cream cheese and 1 cup of the Swiss cheese. Microwave uncovered on High 1 minute, stirring after 30 seconds, until softened and cheese is starting to melt; add additional 30-second intervals as needed. Beat in milk with whisk until mostly smooth; mixture may still be slightly lumpy. 3 Separate dough into 8 biscuits; cut each into sixths. Top with remaining 1 cup cheese. 4 Bake 35 to 40 minutes or until deep golden brown and biscuits are baked through. Sprinkle with green onions.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.
- Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
- Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
