Rendering your own lard is what really makes these anise-flavored Mexican sugar cookies stand out, but you can use vegetable shortening in a pinch. Martha made this recipe on "Martha Bakes" episode 711.

1 cup sugar, plus 3/4 cup for sprinkling
1 1/4 cups Stove Top-Rendered Lard or vegetable shortening
1 large egg
1 teaspoon pure vanilla extract
2 tablespoons Grand Marnier or Triple Sec
Finely grated zest of 1 orange
3 cups unbleached all-purpose flour, plus more for work surface
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 teaspoons anise seeds
2 to 4 tablespoons water
1/2 teaspoon ground cinnamon

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, mix 1 cup sugar and the lard on medium-high speed until light and fluffy, about 3 minutes. Add egg; beat to combine. Add vanilla, Grand Marnier, and zest; beat to combine.
  • Sift flour, baking powder, and salt. Gradually beat flour mixture into sugar mixture on low speed. Beat in anise seeds. On medium, gradually add 2 tablespoons water or more to form a ball. Divide dough in half; shape into disks. Wrap each disk in plastic; chill 1 hour.
  • Preheat oven to 350 degrees with rack in center. Combine cinnamon and remaining 3/4 cup sugar in a small bowl.
  • On a floured surface, roll the dough to 1/4 inch thick. Cut dough into moons, stars, or shapes you like with a 2-inch cutter; lightly sift cinnamon-sugar over each shape. Place on parchment-lined baking sheets. Bake, 1 sheet at a time, 10 to 12 minutes; cookies should be set but not brown. Transfer the cookies and parchment to a wire rack to cool. Repeat with the remaining batches.

1 cup vegetable shortening
2/3 cup plus 1/2 cup sugar
1 large egg
2 to 4 tablespoons red wine, brandy or sherry
1 to 1 1/2 teaspoons crushed anise seeds
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the shortening in a stand mixer with the paddle attachment on medium-high speed until fluffy. Reduce the mixer speed to low; beat in 2/3 cup sugar, then the egg. Add 2 tablespoons wine and the anise seeds and beat until combined. Gradually beat in the flour mixture. If the dough is too dry, mix in up to 2 more tablespoons wine. Cover and refrigerate 15 minutes.
  • Mix the remaining 1/2 cup sugar and the cinnamon in a shallow bowl. On a lightly floured surface, roll out the dough to 1/4 inch thick. Cut out cookies with a 2 1/2-inch cookie cutter. Press the top of each cookie in the cinnamon sugar to coat, then arrange on the prepared baking sheets, about 1 inch apart. Bake until the edges are golden, 10 to 15 minutes. Let cool about 3 minutes on the baking sheets, then transfer the cookies to racks to cool completely. Store in an airtight container for up to 1 week.

Yes these are made with lard and no there is no substitute. In authentic Mexican cooking, lard, not shortening, is used. This recipe comes from Seasoned with Sun the El Paso Junior League Cookbook. A co-worker asked me for the recipe and I realized that it wasn't posted anywhere.

2 cups lard (no substitute)
1 cup sweet wine or 1 cup any fruit juice
2 cups sugar, divided
1 tablespoon cinnamon
1 tablespoon anise seed
2 egg yolks
3 cups all-purpose flour
4 teaspoons cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Beat the lard until creamy.
  • Mix the wine or fruit juice with 1 cup of sugar, 1 tablespoon cinnamon and anise seeds; add to lard and mix with a wooden spoon.
  • Add the egg yolks; mixing well.
  • Add enough flour to make soft dough; roll out to 1/2-inch thick and cut in desired shapes and place on greased cookie sheet.
  • Bake 15 minutes; checking often to prevent burning.
  • Mix the remaining 1 cup of sugar and 4 teaspoons cinnamon; dredge cookies in the cinnamon sugar mixture while still warm.

This is New Mexico's traditional cookie. A great thick sugar cookie that is dusted with cinnamon-sugar. The traditional shape is fleur-de-lis, but use your favorite cookie cutters if you like.

1 tablespoon baking powder
¼ teaspoon salt
2 cups lard
1 ½ cups white sugar
2 teaspoons anise seed
2 eggs
¼ cup brandy
¼ cup white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Sift the flour, baking powder and salt into a bowl, and set aside.
  • In a large bowl, cream together the lard and 1 1/2 cups sugar until smooth. Mix in the anise seed, and beat until fluffy. Stir in the eggs one at a time. Add the sifted ingredients and brandy, and stir until well blended.
  • On a floured surface, roll the dough out to 1/2 or 1/4 inch thickness, and cut into desired shapes using cookie cutters. The traditional is fleur-de-lis. Place cookies onto baking sheets. Mix together the 1/4 cup of sugar and cinnamon; sprinkle over the tops of the cookies.
  • Bake for 10 minutes in the preheated oven, or until the bottoms are lightly browned.

1 1/2 cups sugar
2 teaspoons anise seed
2 eggs

Steps:

  • Sift flour, baking powder, and salt. Cream the lard with sugar and anise seed on medium speed. In a separate bowl. beat eggs until light and fluffy. Add beaten eggs to creamed mixture. Mix together well, adding wine to form a stiff-like dough, add more wine, if necessary.
  • Refrigerate dough overnight.
  • Preheat oven to 350 degrees F.
  • Remove dough from refrigerator and let stand for a while, until dough is soft enough to roll. Divide dough in quarters and roll to about 1/16 to 1/8-inch thickness. Cut with cookie cutter and place on cookie sheet. Bake for 12 to 15 minutes or until bottom of cookie is golden brown. Meanwhile, mix together the sugar and cinnamon in a bowl. Drop the baked cookies into sugar and cinnamon mixture and set aside to cool.

2 cups shortening
1 ½ cups white sugar

  • Preheat the oven to 350 degrees F (175 degrees C)

  • Turn dough out on a floured board and pat or roll to 1/4 or 1/2 inch thickness. Cut into shapes (the fleur-de-lys is traditional). Dust with a mixture of 1/4 cup sugar and 1 tsp cinnamon.

Steps:

Refrigerate 1 hour or until firm enough to roll., Preheat oven to 375°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. A melt in your mouth shortbread style cinnamon cookie. It is made traditionally for the Christmas season in New Mexico households. I obtained this recipe from a friend, Namoi, who was born and raised in NM.

6 cups flour
1 teaspoon salt
3 teaspoons baking powder
2 cups lard, do not substitute Crisco (mantecca)
12 tablespoons sugar
12 tablespoons orange juice or 12 tablespoons fruity wine
1 1/2 teaspoons anise extract
2 egg yolks
3 teaspoons cinnamon
cinnamon sugar
1 cup sugar
2 tablespoons cinnamon

Steps:

  • Sift flour, baking powder and salt together in large bowl, set aside.
  • In mixer bowl beat the lard and sugar together until light and fluffy.
  • Add the egg yolks, cinnamon, anise extract and juice/wine. Mix till incorporated.
  • Add flour mixture to lard mixture and mix well.
  • Roll dough out onto floured counter top to 1/2" thickness. I work half the dough half at a time, rolling into a large square. Cutting into strips about 1 inch wide, then cut those strips into 2" cookies. (A ruler works great!).
  • Place cookies on an ungreased cookie sheet and bake at 400°F for about 8-10 minutes.
  • While cookies are warm roll them in cinnamon sugar.

This recipe for Puerto Rican pasteles is a traditional Christmas-time treat of meat- and green plantains-stuffed pastries similiar to a tamale.

For the Pork Filling:
2 pounds pork shoulder (diced)
2 tablespoons olive oil
4 small sweet peppers (chopped)
1 small onion (chopped)
2 tablespoons recaito (Puerto Rican sofrito sauce)
4 cloves garlic (minced)
1 tablespoon adobo seasoning
1 tablespoon ground oregano
1 bay leaf
For the Masa Dough:
4 pounds yautía ( malanga , peeled)
6 green plantains (or substitute yautía and plantains with yuca)
1 clove garlic (minced)
2 tablespoons recaito
1 tablespoon salt
1 teaspoon achiote oil (or more to reach desired consistency)
For the Wrapping:
1 tablespoon achiote oil
20 10-by-5-inch banana leaves
20 8-by-4-inch rectangles parchment paper
20 18-inch pieces kitchen string
Salt (for boiling water)

Steps:

  • Gather the ingredients.
  • Brown the diced pork in olive oil in a large nonstick skillet.
  • Add the sweet peppers, chopped onion, recaito, garlic, adobo, oregano, and bay leaf, stirring well. Cook until the pork is no longer pink inside. Remove the bay leaf from the mixture and set aside to cool.
  • Gather the ingredients.
  • In a large bowl, grate the peeled yautía and the green plantains (or cleaned and peeled yuca). Use disposable gloves, as uncooked plantains will stain your hands and kitchen towels.
  • Blend the grated roots in a food processor until creamy.
  • Place the masa over a cheesecloth or a fine-mesh sieve for at least three hours so the excess moisture drips out.
  • Once the masa is ready, stir in the garlic, recaito, salt, and enough of the achiote oil to moisten the dough and add a little color. You are now ready to assemble and wrap the pasteles.
  • Prepare a work surface to assemble and wrap the pasteles. If you have friends helping you, set up an assembly line. Prepare 20 (10 x 5-inch) banana leaves, 20 (8 x 4-inch) rectangles of parchment paper, and 20 (18-inch) pieces of kitchen string.
  • For each pastel, lay out a piece of parchment paper, topped with 1 piece of banana leaf. Brush achiote oil in a rectangular shape on the center of the banana leaf.
  • Spread 1 1/2 to 2 spoonfuls of masa onto the center of the leaf.
  • Add 1 spoonful of pork filling and top with another spoonful of masa.
  • Bring the edges of the banana leaf over the top of the pork filling. Then repeat with the other side of the banana leaf so that the masa completely covers the top of the filling.
  • Bring the edges of the banana leaf together and fold down over the top.
  • Fold the edges of the banana leaf underneath the package.
  • Bring the top and bottom edges of the parchment paper over the top and fold or roll down the edges to make a horizontal seam. Tuck the ends under.
  • Tie with a string in both directions. At this point, you can freeze any pasteles you are not going to cook and eat right away. Place them in resealable bags, date, label, and freeze.
  • Bring a stock pot of salted water to a boil. Place the pasteles in the water, making sure they are submerged. Reduce the heat and simmer for 1 hour.
  • Using tongs, remove the pasteles from the boiling water and place them on a plate. Carefully cut the string of each with kitchen scissors and very carefully open the banana leaves and parchment paper. Place the pastel on a serving plate.
