These simple but tasty potatoes are on the menu at my SideTrack Cafe in Metamora, Indiana. I've collected recipes for years, and this is a favorite.-Nancy Johnson, Connersville, Indiana

- Peel a strip from around each potato. Place potatoes in an ungreased 3-qt. baking dish. In a small bowl, combine the oil, butter and seasonings; drizzle over potatoes. , Bake, uncovered, at 350°, for 50-55 minutes or until tender, stirring every 15 minutes.

EASY SEASONED ROASTED POTATOES
These Easy Seasoned Roasted Potatoes have big flavor thanks to the yummy combination of seasonings. Perfectly crispy and simple too!

Steps:
- Preheat oven to 425 degrees.
- Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
- Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Cut the potatoes in half or quarters and place in a bowl with olive oil, garlic, salt, and pepper; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into one layer.
- Roast in the preheated oven until browned and crisp, 45 minutes to 1 hour. Flip twice with a spatula during cooking in order to ensure even browning.
- Remove the potatoes from the oven, toss with parsley, adjust seasonings if needed, and serve hot.

SEASONED BASIL POTATOES
This is one of the many ways I like to cook potatoes. French Fries in a new way. Kids LOVE them!!

- 1. If you chose to have onions and peppers, clean them, then chop them into bite sized chunks and set aside.
- 2. Clean potatoes (don't have to peel) and slice into about 1/4 inch slices.
- 3. In a small bowl, combine butter, garlic, onion powder, and basil.
- 4. Put the potatoes (onions and peppers if wanted) in a glass baking dish and cover in the butter mixture making sure all potatoes are covered. spread them out evenly in the pan and sprinkle with seasoned salt.
- 5. Bake for about 35 minutes or until they are cooked for your liking.

BIRD'S SEASONED POTATOES
I've been making this recipe for years. It's very simple, flavorful, and great with ketchup. You can substitute the lard for an olive oil/butter mixture or just with vegetable oil. The taste will be significantly different, but still yummy. Amounts are estimated, so feel free to change to suit your taste. I posted this by request to the full recipe for my Recipe #330103.

- Heat lard (or oil) in a large nonstick skillet over medium heat. Add potatoes, paprika, garlic powder, salt, onion powder, and black pepper. Toss to coat, cover, and let steam for 10-15 minutes or until potatoes are semi-soft, stirring occasionally.
- Remove lid, add onion (bell pepper if using), and herbs. Toss to coat. increase heat to medium-high and cook an additional 10-15 minutes, turning occasionally until potatoes are cooked through and crispy browned on the outside. Serve with ketchup if desired.
- OPTIONAL BAKE METHOD: Melt the fat, then mix all the ingredients together in a large bowl. Place onto a baking sheet in a single layer. Bake at 425°F for 45-60 minutes, turning/tossing occasionally.
