Yield Makes about 1 1/2 cups

Number Of Ingredients 6

2 tablespoons unsalted butter
3 pounds assorted apples, peeled, cored, and cut into quarters
3 cups apple cider
Juice of 1/2 lemon
1 teaspoon lemon zest
1/2 teaspoon ground cinnamon

Steps:

  • In a Dutch oven over medium heat, melt butter and add apples. Cook apples until slightly softened, about 5 minutes. Add cider, bring to a boil, and reduce heat to a simmer. Let simmer, partially covered and stirring occasionally, until soft, about 30 minutes.
  • Preheat oven to 250 degrees. Mash softened apples with a potato masher. Remove from heat and add lemon juice, lemon zest, and cinnamon. Using an immersion blender, puree mixture until smooth.
  • Pour apple mixture evenly into a baking dish. Transfer to oven and bake, stirring occasionally, until thickened and reduced, about 3 to 3 1/2 hours. Let cool before serving. Apple butter may be kept, refrigerated in an airtight container, up to 5 days.

After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Number Of Ingredients 5

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

SHRUNKEN HEADS IN CIDER

This one-of-a-kind Halloween recipe is courtesy of viewer Allison DiNatale. Granny Smith apples are peeled, cored, and halved, then receive a spooky carving. They're baked until dehydrated to give them a "shrunken" appearance. Float in large punch bowl with apple cider, lemonade, and spiced rum (if desired).

2 cups lemon juice
2 tablespoons coarse salt
8 large Granny Smith apples
32 whole cloves
2 gallons apple cider
2 (12-ounce) cans frozen lemonade concentrate, thawed
2 cups spiced rum (optional)

Steps:

  • Preheat oven to 250 degrees. Line a baking sheet with parchment paper; set aside. In a medium bowl, mix together lemon juice and salt; set aside.
  • Peel apples and cut each in half through the stem; remove seeds and core. Using a sharp paring knife, carve a face, as desired, on the rounded side of each apple half. Place apples in lemon mixture for one minute; transfer to paper towels to drain.
  • Place apples, face-side up on prepared baking sheet and transfer to oven. Let bake until apples are dry and begin to brown around the edges, about 90 minutes. Remove apples from baking sheets and press cloves into the "eye" sockets.
  • Combine cider, lemonade, and rum (if using) in a large punchbowl; float shrunken heads on top.

Number Of Ingredients 7

1 pound fresh figs, preferably Black Mission, chopped into 3/4-inch pieces
1/3 cup red wine
1 tablespoon balsamic vinegar, or to taste
Pinch of salt
1/8 teaspoon freshly ground black pepper
1/2 teaspoon sugar
1 sprig fresh thyme

Steps:

  • Combine all ingredients with 1/2 cup water in a small saucepan. Cover; bring to a boil over high heat. Reduce to a simmer; cook, partially covered, until fruit has broken down, 20 to 30 minutes.
  • Let cool slightly; remove thyme sprig. Press mixture through a large-holed sieve with a rubber spatula.

3 pounds apples, such as Cameo, McIntosh, Jonagold, or Gala (8 to 10), peeled, cored, and quartered
1 cup fresh apple cider or water
2 tablespoons fresh lemon juice, plus grated lemon zest to taste
1/4 teaspoon ground cinnamon, plus more for serving (optional)
1/4 teaspoon freshly grated nutmeg
Pinch of ground cloves
Pinch of kosher salt

Steps:

  • Combine apples, cider, lemon juice, spices, and salt in a large pot. Bring to a boil over high heat, then reduce heat, cover, and simmer, stirring occasionally, until apples are very tender, 25 to 30 minutes. Uncover; simmer until almost all liquid has evaporated, 10 minutes.
  • Season apple mixture with lemon zest. Mash with a potato masher until chunky (or puree in a blender or food processor for a smoother texture). Let cool completely. Serve, sprinkled with more cinnamon, or store in an airtight container in refrigerator up to 1 week, or in freezer up to 3 months.
