This Swiss-inspired breakfast uses grated apples for an incredible fall flavour. Make the night before, or increase ingredients to make enough for a few days. Option to make completely plant-based/vegan by using your favourite unsweetened/plain plant-based yogurt and milk.

1/2 cup rolled oats
1/4 cup unsweetened nut milk (almond, macadamia, soy, etc.)
1/2 cup plain Greek yogurt
1 medium-sized apple
1/4 tsp cinnamon
1 tbsp nut butter (peanut, almond, cashew)
1 tbsp raisins
Additional toppings (optional): peanut butter, coconut flakes, hemp seeds, pepitas, etc.

Steps:

  • Chop apple in half. Using a cheese grater, grate half the apple and add to glass jar or bowl. Cover and keep the other half of the apple in the fridge to prevent browning; it will be chopped later to add as a topping.
  • Add rolled oats, yogurt, milk, raisins, and cinnamon to the grated apple, stirring until mixed well.
  • Cover and let ingredients soak in the fridge for 2 hours or overnight. This will soften and thicken the oats.
  • Once ready, chop the other half of the apple and add to bircher muesli. Add other toppings as desired, such as nut butter, nuts, seeds, etc. Enjoy!

1 eating apple, coarsely grated
50g jumbo porridge oats
25g mixed seeds (such as sunflower, pumpkin, sesame and linseed)
25g mixed nuts (such as Brazils, hazelnuts, almonds, pecans and walnuts), roughly chopped
¼ tsp ground cinnamon
100g full-fat natural bio-yogurt
1 medium banana, sliced
25g organic sultanas

Steps:

  • Put the grated apple in a bowl and add the oats, seeds, half the nuts and the cinnamon. Toss together well. Stir in the yogurt and 100ml cold water, cover and chill for several hours or overnight. Spoon the muesli into two bowls and top with the sliced banana, sultanas and remaining nuts.

1 orange, peeled, with no pith, halved and pips removed
50 grams almonds, raw or roasted, whole, flaked or slivered
2 tablespoons honey, optional
1 apple, large, preferably green, unpeeled, quartered and core removed
100 grams rolled oats
200 grams yoghurt
50 grams sultanas
250 grams Milk

Steps:

  • Place the peeled, halved orange in mixing bowl, blend for 10 seconds on speed 9.Add the almonds and chop for 5 seconds on speed 6 (less speed for slivered or flaked almonds).Add 1 cored and quartered apple (and 2 tablespoons of honey, if using) and chop for 5 seconds on speed 5.Add the rolled oats, sultanas, milk and yoghurt and mix for 15 seconds on speed 2 reverse.Put into a container and refrigerate for at least one hour.Serve as is or topped with additional fresh fruit and or seed/nut mixture and a light sprinkle of cinnamon or other spice.

Bircher muesli is naturally sweet and tastes delicious. It's also great for your energy levels as it has a low glycaemic index (keeps you going for longer), is high in soluble fibre (helps to reduce cholesterol) and is packed with vitamins and minerals.

Number Of Ingredients 6

1 large apple - 1/2 grated & 1/2 thinly sliced (latter is optional)
3 chopped dried apricots
40g (~1/2 cup) oats*
160ml (~2/3 cup) milk - I use skimmed, soya or almond milk
1/4 teaspoon ginger or cinnamon
Optional: honey, fresh fruit, 0% fat Greek yoghurt

Steps:

  • Mix the grated apple in a bowl with the ginger/cinnamon, oats, apricots and milk
  • Cover and leave in the fridge over-night
  • The next day simply top with a dollop of Greek yoghurt and banana OR....
  • Spoon the bircher muesli into a cup followed by a drizzle of honey and a slice of apple.. then repeat until you have a beautiful glass filled with delicious goodness!!

  • Peel banana, place in a large bowl and mash with a fork. Coarsely grate apple (leave the skin on) and add to the mashed banana.
