PECAN PATTIES

Steps:
- In heavy saucepan, pour milk, sugar, and salt.
- Cook on medium heat, stirring often (do not scorch) until boiling.
- Boil on medium, stirring, until temperature on candy thermometer reaches 235, which is "soft-ball stage".
- To test for soft-ball stage, get a glass measuring cup with very cold water in it. Drop a bit of candy into the cup, and reach into the cup with your finger and push the candy around into a ball. If it shapes and stays, then it's ready. If not, cook a little more keeping a close eye on the temperature. DO NOT PASS 235, or they will not be the right texture and consistency.
- Remove the mixture from the heat, using a hot pad on counter AND pan, quickly add butter, vanilla, and pecans.
- Beat with a spoon until butter is melted and mixture thickens.
- The thickness you want is where it spreads into a circle on the paper but almost has to be pushed off the spoon. (Do NOT use a metal pan or they will not set properly)
- Spoon onto paper into two-inch patties.
- Let the patties cool completely before storing in airtight container in cool place.

Steps:
- Crumble tofu and knead all ingredients together.
- Form into patties.
- Fry slowly in pan.
- Cover with mushroom soup and bake @ 350 for 30 minutes. Or serve as is with your favorite gravy.
- If desired you may substitute walnut pieces for pecan meal.
- You may add one handful of Brewer's yeast.
- May add extra oats and water.

SWEET POTATO PECAN PATTIES
From Cooking Light, these were suggested being served as veggie burgers with whole-grain buns and Boston lettuce leaves with chili sauce. I think they're too carb-rich for that but would make a nice starch side to have with greens and another protein like tofu or seitan. I guess that 3 or so sweet potatoes would be enough?

Steps:
- Wash and peel the sweet potatoes and cut into 1/2-inch cubes.
- Cover them with water in a large saucepan and bring to a boil. Reduce the heat and simmer for 15 minutes or until somewhat tender, then drain.
- Coat a large nonstick skillet/frying pan with cooking spray and heat over medium-high heat.
- Add chopped onion and garlic to the pan, sautee 5 minutes or until tender.
- Place sweet potato, chopped onion mixture, oats, and spices in a food processor and pulse until smooth.
- Place the mixture into a large bowl and stir in the pecans. Divide into 6 equal portions, shaping each inch a 1/2-inch thick patty.
- Wipe the frying pan dry with a paper towel. Heat 1 1/2 teaspoons oil over medium-high heat.
- Add 3 patties to the pan, cook 4 minutes or until browned. Carefully turn the patties over and cook the other side for 3 minutes or until browned.
- Repeat with the remaining oil and uncooked patties.

BILL'S PECAN PATTIES
Steps:
- In large bowl combine beaten eggs and softened cream cheese with fork. Cream cheese should be in pea sized chunks (not blended or whipped). Add remaining ingredients to form a thick mixture. Cracker or bread crumbs may be added to thicken. Form into patties about 1-1/2" in diameter. Heat approx. 1/2" canola oil in frying pan on medium heat. Fry patties in frying pan until browned. Approx. 3 min. on each side. place in 13x9 cassarole dish. Mushroom Sauce: Combine sour cream, mushroom soup and milk in med. sauce pan stir over low - med. heat til' smooth. pour over patties and bake @ 350 til bubbly (approx 30 min.). serve immed.
