Yep. Inspired by the McDonald's Big Mac. A Parsley original. Just because it's a salad, doesn't mean it's diet food. ;)

8 slices white bread
1 -1 1/2 lb extra lean ground beef
1/2 cup finely chopped onion
1 head iceberg lettuce, shredded
1 1/2 cups shredded cheddar cheese
3/4 cup mayonnaise
1/4 cup ketchup
2 tablespoons sweet pickle relish
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sesame seeds

Steps:

  • Toast all eight pieces of bread until just lightly golden-brown. Let cool and cut into cubes; set aside.
  • Brown and drain the extra lean ground beef. Let cool.
  • In a large bowl, combine the cooked and cooled ground beef, toasted bread cubes,finely chopped onions, shredded lettuce and cheese; toss well. Place in a large salad/serving bowl.
  • In a seperate small bowl, stir together the mayonnaise, ketchup, relish, salt and pepper.
  • Drizzle the dressing over the salad. You can either leave it drizzled or toss everything to evenly coat salad.
  • Sprinkle with sesame seeds.

Steps:

  • In a medium skillet over medium heat, add ground beef, garlic powder, and Worcestershire sauce and season with salt and pepper. Cook, stirring occasionally, until no pink remains, 8 to 10 minutes.
  • Make dressing: In a medium bowl, whisk together yogurt, vinegar, mustard, ketchup and paprika.
  • Assemble salad: In a large bowl, toss together romaine, cheddar, tomatoes, pickles, and red onion. Drizzle with dressing and garnish with sesame seeds.

Steps:

  • Cook beef: Add the beef to a large pan and brown over medium-high heat for 3-4 minutes, smashing the beef to crumble. Add the onion, salt & pepper and cook for another 4-5 minutes or until the onion is softened and the beef is browned, cooked through and slightly crispy.
  • Make a big mac sauce: whisk all the ingredients in a medium bowl.
  • Assemble: Divide the lettuce into 4 bowls, top each bowl with ¼ the browned beef, onion, cheese, tomato and pickled. Drizzle with big mac sauce and serve immediately.

1 pound ground beef
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder

1/2 cup mayonnaise
2 tablespoons sugar-free ketchup

Steps:

  • Mix mayonnaise, pickle relish, ketchup, minced onion, olive oil, sugar, vinegar, lemon juice, dry mustard, paprika, salt, and pepper in a bowl to make sauce. Refrigerate until flavors combine, at least 30 minutes.
  • Preheat a large grill pan over medium heat. Cook hamburger patties, turning occasionally, until browned, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Chop patties into bite-sized pieces.

1/2 cup light mayonnaise (* I use Hellman's 1/2 the fat mayonnaise)
1/4 cup light Catalina dressing (*I use Kraft ( light French dressing can be substituted))
2 tbsp sweet relish
1 tbsp ketchup
1 tsp white vinegar
1/4 tsp onion powder
1/8 tsp salt
3 choppped pickles
1/2 cup chopped onions
2 heads iceberg or romaine lettuce, chopped
2 tomatoes, chopped
3 cups cooked ground beef, extra lean (* about 1 lb raw ground beef)
1 tbsp sesame seeds
4 tbsp low-fat sharp cheddar cheese
2 thin buns, cut into small circles (* I use President's Choice thin buns (PC thins))
additional chopped/sliced pickles and onions

Steps:

  • Cook ground beef in a large skillet, on stovetop, over medium-high heat until cooked through. Drain.
  • Add chopped pickles, onions, light Catalina salad dressing, mayonnaise, ketchup, relish, onion powder, salt and vinegar to cooked ground beef and stir until thoroughly combined. *It's ideal if you can let this sit in the fridge for at least a few hours, but it's not critical.
  • Combine lettuce and tomatoes and add to large bowl, then add meat mixture.
  • Sprinkle grated cheese over top of salad.
  • Cut both thin buns into "mini buns" with a small round cookie cutter (you can even use the round side of a large icing tip or anything small and round) *You should get 6 mini buns from each larger bun.
