Steps:
- Place oats in a small bowl and cover with boiling water. Set aside for 10 minutes. In a mixing bowl using a mixer cream together brown sugar, white sugar, butter, eggs and vanilla extract. Whisk together the flour, salt, cocoa, baking soda and cinnamon.
- Add the flour to the creamed mixture along with the oats. Mix well with mixer. Fold in 1 cup of the chocolate chips and pour batter into a sprayed 9 x 13 baking dish.
- Sprinkle remaining chocolate chips on top of the batter along with the nuts. Bake in preheated 350 degree oven 35-45 minutes checking for doneness as ovens vary. This cake does not need frosting. 8-10 Servings

- In a large bowl, combine the oats and boiling water. Let stand for 15 minutes or until cooled. , In another large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the oat mixture; mix well. Combine the flour, cocoa, baking soda and salt; add to creamed mixture and mix well., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine the topping ingredients; spoon over top of warm cake; broil about 4 in. from heat for 3-4 minutes, or until top is lightly browned.

BIGGER/BEST CHOCOLATE OATMEAL CAKE
This recipe uses more oats and boiling water than most oatmeal cake recipes, and it is more moist and the best I have ever had.

- 1. CAKE: Pour boiling water over the oats, add chocolate chips, and let stand until cool. Mix together while cooling.
- 2. Mix together white sugar, brown sugar, eggs and butter.
- 3. Add to the sugar, butter, egg mixture (step 2) baking powder, vanilla, flour, and nuts. Add the cooled oatmeal mixture to batter and stir until well blended.
- 4. Bake cake batter at 350' in a 9"x13" greased pan, about 40-45 minutes. Test to see if done.
- 5. While cake is baking, mix together the Topping ingredients. Boil these ingredients in a saucepan for 5 minutes, stirring constantly. Pour Topping over the cake when cake is done and has had a chance to cool a little. Serve with whipped cream or ice cream. It is delicious.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch pan.
- Sift 2 cups white sugar and 2 cups flour together; set aside.
- In a sauce pan; combine 1/2 cup butter or margarine, oil, water, and 1/4 cup cocoa. Bring mixture to a boil, remove from heat and add to dry ingredients.
- Dissolve baking soda in buttermilk; add with eggs, salt, cinnamon and 1 teaspoon vanilla to cocoa, flour mixture and stir well.
- Pour batter into a 9 x 13 inch pan. Bake at 375 degrees F (190 degrees C) for 20 minutes.

My grandmother taught me how to make this cake. This is the most moist chocolate cake I have ever tasted. It was my dad's favorite and now it is my husband's favorite too. The first 11 ingredients are for the cake and the last 6 are for the icing.

- Sift together dry ingredients in a large mixing bowl.
- Add oil, coffee, and milk; mix at medium speed for 2 minutes.
- Add eggs and vanilla; beat for 2 more minutes. Batter will be thin.
- Pour into 2 greased and floured 9 inch cake pans.
- Bake at 325 for 25-30 minutes.
- Cool cakes for 15 minutes before removing from pans. Cool completely on wire racks.
- To make the icing, combine the milk and flour in a saucepan and cook until thick, stirring often to prevent it from being lumpy. Cover and refrigerate until cool.
- In a mixing bowl, beat butter, shortening, sugar, and vanilla until creamy.
- Add chilled milk/flour mixture and beat for 10 minutes.
- Frost cake after is it completely cool.
- Refrigerate cake until just before serving.
