- To do this, bring a large saucepan filled with water to a boil. Your saucepan needs to be tall enough to have the water cover the jars by 2 inches- though the jars will displace some of the water as they are added.

BIG BATCH SALSA (FOR CANNING)
My mom and I have made this salsa for years. This is the easiest way to can a big batch of salsa. Instead of cooking pots full of salsa on the stove and worrying that it will scorch on the bottom, this method slowly simmers one batch in an 18 qt. electric roaster (a church dinner style roaster). This is a thick, medium heat salsa that is slightly sweet. It is a staple in my holiday gift baskets. In fact, I get complaints from friends, family, and neighbors when I do not include it or if I run out before the next canning season! This year I made four batches - 52 quarts.

Steps:
- Fill roaster with tomatoes, crushing with hands or with an emersion blender as you add them to the pan.
- Add onions, jalapenos, garlic, vinegar, sugar, salt, and tomato paste. (Note: Sometimes I need to let the tomatoes cook down before adding the sugar, vinegar, and tomato paste so that it will fit in the roaster.
- Simmer 2 to 5 hours to desired thickness. Stir occasionally, scraping sides of roaster so that it does not burn. Adjust salt, sugar, and peppers to taste. You can add tomato juice if it becomes too thick.
- Ladle hot salsa into jars, leaving ¼-inch head space.
- Clean rim with damp cloth. Adjust two-piece caps.
- Place jars in a hot water bath. Process 15 minutes (pints) or 20 minutes (quarts), after water comes to a boil.
- Remove jars from hot water bath. After 12 hours, check seal, remove bands, and label.

CANNED SALSA -BATCH 2
I have been making different batches of salsa every year to see if any are better then any others - after all the tests this has been a proven winner year after year. I am not totally positive how many jars this makes as my husband always steals some before I can get it canned.

Steps:
- Mix all ingredients except tomato sauce and paste - bring to a boil. If you wish to drain off some of the juice now is the time to do it - if not then add tomato sauce and tomato paste. Slowly boil for 10 minute
- Seal into half pints, pints and quarts and process in water bath for 10 minutes.

BRUSCHETTA-STYLE SALSA FOR CANNING
This is a wonderful use for all your tomatoes and basil from the garden, perfect to have on hand for a last minute appetizer. I used half plum and half lemon boy tomatoes from my garden. I tripled the recipe without a problem. From "Put a Lid on It" by Topp and Howard.

Steps:
- Drain tomatoes then combine with garlic, shallots, basil, vinegar, lemon juice, salt and pepper in a large saucepan.
- Bring to a boil over high heat, reduce heat and boil gently 5 minutes. Check consistency, you may need to simmer awhile longer.
- Stir in green onions and tomato paste and boil one minute.
- Ladle into hot sterilized jars to within 1/2 inch of top.
- Process in a hot water bath for 35 minutes for half pints, 40 minutes for pints.
- To serve, spoon out onto sliced bread, top with your favourite cheese and broil until cheese is melted.
