HOMEMADE BIG MAC

- In a bowl combine ground chuck and salt and pepper. Shape meat into 10 meat patties. Shape patties somewhat thin. Set a griddle to 350 degrees. Place meat on the griddle and cook for 3 to 4 minutes. Season with a sprinkle of salt and pepper. Flip burgers and cook for an additional 3 to 4 minutes on each side, or until juices from the meat run clear.
- Spread softened butter on cut sides of bun and place on griddle until the bread begins to brown. Flip the middle bun and allow to toast on both sides.
- Build the burger by starting at the bottom. The bottom bun, Big Mac sauce, onions, lettuce, cheese, hamburger patty, and the middle bun. Spread the Big Mac sauce, onion, lettuce, hamburger patty, two or three pickle slices, and finally the top bun.

- Can be enjoyed immediately, but the flavor is best when allowed to sit in the refrigerator overnight. Store in an air-tight container.

- No. 1 | Make the special sauce by mixing together the mayo, ketchup and 1 tablespoon each of the diced onion and diced pickles.
- No. 2 | Preheat a large skillet to medium high heat. Divide the beef into 4 equal pieces and roll each piece into a tight ball. Place each piece of beef between two sheets of parchment and flatten into 4 inch rounds. They should be no more than ¼ inch thick.
- No. 3 | Once the pan begins to smoke, generously season each patty with salt and pepper. Sear the patties for one minute, then flip, add the slice of cheese and cover for one minute. Remove the patties to rest on a plate.
- No. 4 | To assemble, spread one tablespoon of special sauce on each slice of bun. Place a handful of lettuce on the bottom and middle slices, then top with the burger patties. Sprinkle a tsp of diced onion and 3 slices of pickle on top. Gently place the finished middle bun on the finished bottom, cover with the top bun and devour.

- To make the sauce, combine all of the ingredients in a large bowl. Whisk to distribute the ingredients evenly. Cover the sauce and place in the refrigerator for at least 8 hours, but preferably overnight.
- To make the patties, divide the ground beef into 12 balls of around 2.5 ounces each. If you have a patty press, use it to make thin large patties. If you do not have a patty press, use your hands to shape the balls into evenly sized patties. You can use a rolling pin to help you make the patties even in thickness.
- Once your sauce has stood for 8 hours, you can begin making your Big Mac burgers. Heat the olive oil over medium high heat in a non-stick pan. Season the patties on both sides and place in the pan.
- Fry for about 3-5 minutes per side or until the patty is golden brown. You can cook them to your liking. They are thin so make sure to watch them. Place a cheese slice on each patty before removing them from the pan. Allow them to become slightly melted.
