" BIG MAC" MEATLOAF



I worked in a group home with 7 elderly ladies who like meatloaf. On this day I didn't have eggs so I kinda just threw in some stuff and this is what we dubbed it. My little ladies just loved it. The joke always was don't let me get bored in the kitchen.

Number Of Ingredients 8

2 lbs ground beef
2 eggs
cracker
thousand island dressing
chopped pickle
chopped onion
salt and pepper
shredded cheddar cheese or mozzarella cheese

Steps:

  • Combine all ingredients except for cheese; mix well.
  • Take approximately 1/2 of meat mix and flatten it out on a sheet of wax paper, sprinkle cheese on top.
  • Take one end of meat and roll to other end like a jelly roll.
  • Place in a cake pan of sorts.
  • Repeat with remaining 1/2 of meat.
  • If you like a type of crust on meat loaf, I crush a few crackers add salad dressing and a bit of cheese.
  • Spread it on top of the meatloaves.
  • Bake at 350°F for about 45 minutes.

This is the result of changes I had to make to a recipe I got from the Zaar. It was very good and I would like to be able to duplicate it again.

Number Of Ingredients 15

2 lbs ground beef
1 1/2 cups crushed saltines (1 row plus 8 crackers)
1 teaspoon salt
1 teaspoon Emeril's Original Essence, original
1 1/2 teaspoons beef bouillon powder
1/3 teaspoon black pepper
2/3 cup tomato sauce (or use tomato paste cut in half with water)
1 large sweet onion (vidalia, Walla Walla, or Texas sweet)
1/2-3/4 teaspoon canned garlic (from jar)
3 large eggs
1/2 cup ketchup
2 tablespoons packed brown sugar
1/2 cup water
1 1/3 tablespoons prepared mustard
1 1/3 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 325.
  • In a very large bowl put hamburger, crackers crumbled,salt, essence, boullion powder, and black pepper - set aside.
  • Cut onion into larger pieces and put it in the food processor with the garlic -- pulse until pieces are small. Dump onion mixture into the bowl with the meat.
  • Beat the three eggs (in the food processor if you don't want to dirty a bowl) and add them to the meat bowl.
  • Add the tomato sauce to the meat bowl and use your hands to mix all very well (I like to wear rubber gloves to save on clean-up time).
  • Divide meat mixture in half. Form into two loaves on the botton of your broiler pan or a roasting pan. Leave room between loaves for even baking.
  • In smaller bowl mix together with a fork; ketchup, brown sugar, water, mustard and cider vinegar. This is your topping -- Brush tops and sides of loaves with this before baking and again while baking.
  • Bake for 1 hour and 15 minutes to 1 hour and 25 minutes.
  • When I remove the pan from the oven I like to pour off the excess oil in the bottom of the pan. Let cool for about 5 minutes before serving. Slice thick and pieces should hold together well.

  • Preheat oven to 350° F. Spray your bread loaf pan with nonstick spray. In a large mixing bowl add ground beef, almond flour, ketchup, tomato paste, eggs, garlic, parsley, onion powder, salt, and pepper. Using your hands or a spoon, mix ingredients until all ingredients are incorporated.
  • On a large piece of parchment (18 to 20" long), press the meatloaf into a rectangle that is as wide as your pan (around 8" to 9" is standard), and at least 10" to 14" long. Take care to make sure the meatloaf mixture is pressed together really well. Layer cheese, dried onions, bacon, and pickles on top.
  • Lift up the end of the parchment paper, carefully rolling the meatloaf lengthwise, pressing and tucking as tightly as possible as you go (without losing ingredients). Leave the meatloaf on the parchment paper and carefully lift the meatloaf and place it into the pan, seam side down. Gently pull the parchment out from under the meatloaf.

  • In a skillet over medium-high heat brown the ground beef. As it cooks add the worcestershire sauce, garlic powder, salt, and pepper.
  • When it is almost cooked through add the onions and continue cooking until the ground beef is cooked through and the onions are translucent. Drain the grease and set aside.
  • In the same skillet add a small amount of olive oil and the shredded cabbage. Saute until cabbage is slightly softened. Salt and pepper to taste.
