INCREDIBLE BBQ GRILLED VEGETABLES - MARINATED!
Recipe video above! An assortment of vegetables grilled on the BBQ until tender-crisp with charred edges, then while still hot, tossed in a Lemon Herb & Garlic Marinade so they suck up the flavour. Steps:
- Place ingredients in a jar and shake well. Set aside 10 minutes+.
- Keep pieces large for easy handling on the BBQ (so you don't have to turn hundreds of pieces!) and so they don't fall through the grills.
- Capsicum/bell peppers - cut the "walls" off, then cut each each on the diagonal into fairly large pieces.
- Onion (Note 4) - keep the root end (hairy end!) in tact. Peel, cut in half, then cut into wedges through the root end.
- Brush BBQ grills lightly with oil, then preheat to high. Or oven 250°C/480°F.
- Place vegetables in a very large bowl or use a big tray. Drizzle with oil, sprinkle with salt, pepper and garlic. Toss with hands (there is no better way!).
- Place on BBQ and cook until tender crisp with charred edges - cook times below. Then remove into large bowl.
- Asparagus, zucchini - grill 2 min each side. (Oven - 10 min, no flipping)
- Capsicum, mushroom, onion - grill 3 min each side (oven 15 min, flip at 10 min)
- Eggplant - grill 4 min each side. Jab in middle to ensure soft but not soggy! (oven 18 min)
- While vegetables are still hot, drizzle over Dressing and toss.
- Set aside 10 minutes+ before serving, sprinkled with parsley. See in post for serving ideas.

Delicious grilled vegetable salad served room temperature. Great the next day too! The vinaigrette can be used on any salad or as a marinade for chicken and fish. Substitute basil for cilantro if you don't care for cilantro.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Whisk shallot, red wine vinegar, white balsamic vinegar, garlic, lemon juice, Dijon mustard, parsley, chives, cilantro, and dill together in a large bowl. Slowly stream olive oil into the mixture while whisking vigorously until the oil is incorporated into a smooth and creamy dressing.
- Arrange asparagus, corn, zucchini, yellow squash, green onions, bell pepper, and red onion onto baking sheets. Brush olive oil onto all the vegetables to coat; season with salt and pepper.
- Cook vegetables directly on preheated grill, turning frequently, until slightly charred and just tender, about 5 minutes for green onions, 8 minutes for asparagus, zucchini, yellow squash, bell pepper, and red onion, and 10 minutes for corn. Remove vegetables to the baking sheets used for preparation and cool.
- Cut asparagus, green onions, zucchini, yellow squash, and red bell pepper crosswise into 1-inch pieces and put into a large bowl. Quarter red onion slices; add to bowl. Cut corn kernels from cobs; add to bowl. Let vegetables cool to room temperature.
- Drizzle vinaigrette over the vegetable mixture and toss to coat.

GRILLED VEGETABLE SALAD
Steps:
- In a medium bowl, with a whisk, beat together 1 tablespoon vinegar, salt, pepper. Add 2 tablespoons olive oil and beat until emulsified. Add the other tablespoon of vinegar and 2 more tablespoons of olive oil and beat until emulsified. Top the mixture with the remaining 2 tablespoons of olive oil. Stir in parsley. Add the garlic clove. Refrigerate until ready to use. Cook pasta per package instructions, drain, rinse with cold water until cool, add to bowl and toss with olive oil and garlic clove. Set aside.
- Brush vegetables with olive oil. On a hot grill roast peppers, corn, zucchini and red onion until browned and tender. Remove from grill. Remove kernels from corn and roughly chop remaining vegetables. Toss grilled vegetables and reserved vinaigrette with pasta. Serve at room temperature.
BIG GRILLED VEGGIE SALAD

- Thread the mushrooms, zucchini, squash, orange bell pepper, green bell pepper and onions onto separate skewers.
- Mix the Italian seasoning, salt, black pepper, red pepper flakes and 1/4 cup of the olive oil in a small bowl. Brush the kebabs all over with the oil mix.
- Preheat a grill pan over medium-high heat. When it is hot, grill the kebabs, turning as needed, until grill marks form and the veggies have softened, 8 to 10 minutes total.
- Using a fork, push the hot vegetables off the skewers onto a serving platter. Drizzle over the lemon juice and remaining 3 tablespoons olive oil. Toss to combine. Sprinkle over the crumbled feta and lemon zest. Top with the oregano, mint and parsley. The salad can be served warm or chilled.

- Ignite the charcoal in the Big Green Egg and heat, with the convEGGtor and the Cast Iron Grid, to a temperature of 180°C. Cut 2 circles of parchment paper the same size as the Cast Iron Skillet (Small) . Cut the radicchio into sections 2-3 cm thick for the filling. Peel the red onion and the shallots. Cut the onion, courgettes and aubergine in slices of approx. 1 cm and cut the shallots in half lengthwise. Peel and finely chop the garlic. Remove the leaves from the rosemary, thyme, and marjoram, and chop fine. Toss the vegetables with olive oil, sprinkle with the garlic and herbs, and mix well. For the pie crust, roll out the puff pastry on a countertop dusted with flour to generously cover the base of the skillet. Put a circle of parchment paper in the skillet, put the pastry over it (allowing some to hang over the edges), and prick with a fork. Cover with the second piece of parchment. Fill the skillet with beans or rice for blind baking.
- Place the cut up vegetables for the filling on the grid and grill for approx. 2 minutes. Turn the vegetables over and grill for another 2 minutes. Remove the vegetables from the EGG and leave to cool. Remove the Cast Iron Grid and put the Stainless Steel Grid with the (cold) Baking Stone in de EGG. Place the skillet on the stone, close the lid of the EGG, and bake the crust approx. 20 minutes blind until the edges of the pastry start to turn brown but before it’s completely cooked. Take the skillet and the Baking Stone out of the EGG (the Baking Stone can then cool a bit). Cut any pastry that is hanging over the edge neatly with a serrated knife. Remove the blind baking filling and the upper layer of parchment. Lightly beat the eggs with the egg yolks for the filling. Stir in the whipping cream and season to taste with salt and pepper. Cut the provolone into 2 cm cubes. Mix the provolone and walnuts with the grilled vegetables and the egg mixture and arrange in the baked pastry crust.

- Light the charcoal in the Big Green Egg and heat, with the Cast Iron Grid, to a temperature of 220°C. In the meantime, bring 600 ml water to the boil. Mix the couscous with the olive oil in a dish and pour in enough boiling water to submerge the couscous. Cover the dish and leave the couscous. Take off the tips of the sugar snaps and remove the string from the sides. Halve the mini courgettes lengthwise. Remove any possible hard ends of the asparagus.
