Dip into this zippy Creole-style sauce and you'll never crave seafood sauce again. Chunky but not too spicy, the tantalizing tomato blend complements cold shrimp or cooked seafood.

1 large onion, chopped
1/2 cup finely chopped green pepper
1 celery rib with leaves, finely chopped
1 tablespoon canola oil
3 garlic cloves, minced
1 can (28 ounces) diced tomatoes
1/4 cup minced fresh parsley
1/4 cup water
1/4 cup tomato paste
2 tablespoons lime juice
1 teaspoon dried thyme
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 to 1/2 teaspoon hot pepper sauce
1/4 teaspoon ground allspice
36 cooked large shrimp, peeled and deveined

Steps:

  • In a large nonstick skillet, saute the onion, green pepper and celery in oil for 3-4 minutes. Add garlic; cook 1 minute longer. Drain tomatoes, reserving juice; add juice to skillet. Mash tomatoes and add to skillet. Stir in the parsley, water, tomato paste, lime juice and seasonings. , Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until thickened. Serve warm with shrimp.

2 tbsp butter
1 large red onion, thinly sliced
1 pound large shrimp with shells on, deveined
1/2 tsp McCormick® Garlic Powder
1/2 tsp McCormick® Thyme Leaves
1/4 tsp McCormick® Black Pepper, Coarse Ground
1/4 tsp McCormick Gourmet™ Sicilian Sea Salt
1 cup ale
1/4 cup heavy cream
1/4 cup ZATARAIN'S® Creole Mustard

Steps:

  • Melt butter in large nonstick skillet on medium-high heat. Add onion; cook and stir 2 minutes. Add shrimp, garlic powder, thyme, pepper and sea salt; cook and stir 2 minutes.
  • Stir in ale, cream and Creole mustard; cook and stir 2 minutes longer or just until shrimp turn pink. Spoon shrimp and sauce into serving bowls. Serve with French bread slices, if desired.

1 pound uncooked peeled deveined large shrimp
1 tablespoon Creole or Cajun seasoning*
2 tablespoons vegetable oil, divided
1 pound andouille sausage, cut crosswise on diagonal into 3/4-inch-thick pieces
1 large onion, halved, thinly sliced
1 large red bell pepper, cut into 1/3-inch-wide strips
1 tablespoon chopped fresh thyme
1 cup low-salt chicken broth
5 tablespoons Creole mustard (such as Zatarain's)
2 teaspoons red wine vinegar
*Available in the spice section of most supermarkets.

Steps:

  • Toss shrimp with Creole seasoning in medium bowl to coat. Heat 1 tablespoon oil in heavy large skillet over high heat. Add sausage pieces, cut side down. Cook until browned on both sides, about 5 minutes. Transfer sausage to bowl. Add shrimp to skillet; cook until browned and just opaque in center, about 3 minutes. Transfer to bowl with sausage. Add remaining 1 tablespoon oil, onion, bell pepper, and thyme to skillet. Sauté until vegetables are beginning to soften, about 5 minutes. Add broth, mustard, and vinegar. Stir until sauce thickens, about 2 minutes. Return sausage and shrimp to skillet. Simmer until heated through, stirring occasionally, about 1 minute. Season with salt and pepper.

2 teaspoons creole seasoning
12 ounces uncooked penne pasta
2 tablespoons butter or 2 tablespoons margarine
4 green onions, sliced
2 garlic cloves, minced
1 1/2 cups whipping cream
1 teaspoon hot sauce
1/4 cup fresh parsley, chopped
1/2 cup freshly grated parmesan cheese

Steps:

  • Peel and devein shrimp; toss shrimp with creole seasoning; set aside.
  • Cook pasta according to the package directions; drain and keep warm.
  • In a large skillet over med-high heat, melt the butter.
  • Add in shrimp; stir/saute 5 minutes or until shrimp turn pink.
  • Remove shrimp from skillet; add green onions and garlic to skillet; stir/saute 2-3 minutes or until tender.
  • Lower heat to medium; stir in cream and hot sauce.
  • Bring to a boil; lower heat and simmer, stirring constantly 8-10 minutes or until sauce is slightly thickened.
  • Stir in shrimp and parsley.
  • Toss with pasta.

3 dozen shrimp
2 tablespoons creole mustard (grainy Mustard)
1/4 lb butter
1/4 cup chives, chopped
1/2 sliced green onion
1/4 cup diced red bell pepper
1 teaspoon dried tarragon
1/2 cup dry sherry
2 tablespoons flour
1 cup heavy cream
1 cup shellfish stock (I use clam juice)
salt & pepper

Steps:

  • Peel and devein shrimp. Set aside.
  • In large skillet melt 1/2 cup of butter over med-high heat. Do not brown or burn butter.
  • Sauté shrimp a few at a time until pink and curled (1-2 minutes).
  • Remove shrimp from pan. Set aside.
  • Add chives, green onions, bell pepper and tarragon to pan. Sauté 3 minutes.
  • Deglaze pan with sherry and reduce to 1 Tbsp of liquid.
  • Sprinkle in flour and blend well into the seasoning mixture.
  • Add Creole mustard, whipping cream and shellfish stock.
  • Whisk until all ingredients are incorporated and mixture begins to thicken. If sauce is to thick thin with a little stock or water.
  • Season to taste with salt & pepper.
  • When ready to serve bring sauce to a low boil and whisk in remaining butter a little at a time.
  • Add shrimp to hot sauce and continue to cooking until shrimp are heated through.
  • Serve on a nest of spinach or red pepper pasta. Top with a generous serving of the sauce, and garnish with chopped chives.

900 g shrimp, peeled and deveined or 900 g cooked peeled prawns
1 small onion, finely chopped
4 spring onions, cut in small diagonal slices
2 tablespoons lemon juice, fresh
125 ml dry white wine
125 ml whipping cream
2 tablespoons whole grain mustard
salt and pepper

Steps:

  • Melt half the butter or margarine in a frying pan over a high heat.
  • Add raw prawns if using, and cook until they turn pink and opaque, about 2 minutes, stirring constantly. Remove with a slotted spoon and set aside.
  • Melt the remaining butter or margarine in the frying pan. Add the onion and spring onions, and cook until softened, 3 - 4 minutes, stirring frequently.
  • Stir in the lemon juice and wine. Bring to the boil, scraping the bottom of the pan with a wooden spoon to mix in the cooking juices.
  • Add the cream. Simmer until the mixture thickens, 3 - 4 minutes, stirring frequently. Stir in the mustard.
  • Return the fried prawns to the pan and reheat briefly. Add cooked prawns at this stage and heat through, about two minutes. Season with salt and pepper, and serve over rice.
