D'S FAMOUS SALSA
This is a Texas recipe I've developed and refined over many years. It's very fast, easy, and I usually have everything on hand. I often give it as gifts to my family back East.

J.P.'S BIG DADDY BISCUITS
This recipe will produce the biggest biscuits in the history of the world! Serve these gems with butter, preserves, honey, gravy or they can also be used as dinner rolls...you get the picture. The dough can also be prepared several hours, and up to a day ahead of time. If so, turn dough out onto aluminum foil that has been either floured, lightly buttered or lightly sprayed with cooking spray. Roll up foil until it is sealed, and refrigerate. Don't be surprised if your biscuits rise even higher because the baking powder has had more time to act in the dough. You may have to make a few batches before you get desired results: desired results equals huge mongo biscuits.

BIG GAME SALSA DIP
Great make-ahead-of-the-game dip! Cheesy (with some surprises), and served with tortilla chips. Keep hot in a slow cooker to last all afternoon and free yourself to watch the game. Always disappears quickly! Can be served in individual dip bowls with tortilla chips, or over a handful of chips in a bowl.

MY RESTAURANT-STYLE SALSA-LARGE BATCH
This recipe was adapted from The Pioneer Woman's blog recipe. Everyone who has tried this salsa absolutely loves it. It is close to my Enough For A Superbowl Party Salsa only a much smaller amount. I think that this would make a great Mexican Gazpacho recipe for summertime. I have found that Hunts brand tomatoes is the best for this recipe. There really is a difference in flavor of brands. I also only use Rotel brand because the flavor is consistent. Here are the heat breakdowns: Mild: 2 cans mild (don't use the jalapeno) Medium: 1 can original, 1 can mild Medium-Hot: 2 can original Hot: 1 can original, 1 can hot Hot-hot: 2 cans hot I hope that makes sense.

Steps:
- Pour the tomatoes, Rotel, green onions and cilantro into an 11-cup food processor (or make in half batches and combine when done). Pulse the mixture about 15 times.
- Add garlic, jalapeno (if using), sugar, salt and cumin.
- Pulse until the consistency that you like. I pulse about 10 mores times.
- Pour into a jar or airtight container and refrigerate for at least 4 hours to let the flavors meld (If I am in a rush, I will stick in the freezer for about 30 minutes).
- It will keep for at least a week, and if we haven't used it all by then, which rarely happens, I add it into soup or chili.
DADDY'S SAUSAGE AND PEPPERS
This is a great recipe for anyone who loves bell peppers! My dad always made this for me when I was growing up... now I make it for my own family and get raves every time! Serve over pasta and with bruschetta for a full meal! Enjoy!

BIG DADDY SALSA RECIPE: RECIPE
Provided by jamezsmith56

Steps:
- *Boil chili's for approximately 10 minutes and chop. (I take the stems off after boiling them). I then put them in my food processor to chop finely along with the cilantro, garlic, tomatoes and tomato sauce. Set processor on "Pulse" and chop to desired consistency. I then add the chopped up onions to the above ingredients. Let stand in the fridge for an hour or two for all the ingredients to get to know each other. Love this stuff and could probably live on it. Have fun.
