This is a Kansas City-style sauce that I make in my restaurant. It is sweet and smoky with a little bite.

- In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
- Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.

BIG BATCH ZESTY BBQ SAUCE
Approved by even my picky BBQ connoisseur husband. I kind of just came up with it hit and miss, and never really wrote it down until my mother insisted. One gal I gave the recipe to loved it so much she even made it, bottled it, and gave it away for Christmas. It'll last for a couple of months in the fridge, and during BBQ season--it's worth it to have on hand. I usually buy the #10 size of ketchup in a plastic container, so I can store the sauce in it when finished.

- In a large dutch oven or stock pot, melt butter over medium heat. Add onion, pepper flakes and garlic and cook approximately ten to fifteen minutes, until onion has softened and turned translucent but not browned.
- Add remaining ingredients, stir well, and reduce heat to low. Simmer approximately half to one hour, allowing the flavors to blend adequately.
- Store in a tightly sealed container in refrigerator up to two months, or use canning process for shelf life.

CHERRY BBQ SAUCE
Making a big batch of cherry BBQ sauce is the perfect use for slightly over-ripe cherries. This sauce goes great on everything!

- 1) Add butter to a medium pot over medium heat. Once melted, add onions, garlic, and peppers. Cook for about five minutes until veggies are soft.
- 2) Pit cherries and add cherries to the pot along with all other ingredients. Bring the sauce to a simmer.
- 3) Simmer sauce, uncovered, for about 15 minutes until the cherries break down. Stir regularly.
- 4) Let sauce cool down for a few minutes and then blend sauce until smooth. Blend in a few batches to make sure the sauce doesn't explode out of the blender.
- 5) Return sauce to the pot and bring back to a simmer. Simmer for 10 minutes, stirring occasionally, until thick.
- 6) Taste sauce for salt and adjust seasoning to your liking. Use sauce immediately or chill and use whenever. It'll keep in the fridge for two weeks.
- You can use this BBQ sauce on almost anything. Try it on BBQ chicken or pork, on a burger, or on anything grill-related really.

DUTCH OVEN BBQ BEEF
Steps:
- Preheat oven to 275° F.
- Mix the flour with ¼ cup of the brown sugar, smoked paprika, kosher salt, chili powder, onion powder, garlic powder, and cumin on a sheet of waxed paper. Pat the roast dry; dredge it in the flour mixture on all sides.
- Heat butter and olive oil in a large Dutch oven over medium-high heat until it is hot but not smoking. Brown the meat to give it nice color, but don't let the sugars burn (about 3 minutes per side).
- Reduce the heat to medium and add beer. Cover with the lid and bake in the 275° F oven for 2 hours.
- After 2 hours, remove the lid and continue baking for another 45 minutes - 1 hour, or until the meat is fall-apart tender.
- Remove beef from Dutch oven and let rest while you prepare the barbecue sauce.
