Beef a La Rydberg image

A Swedish classic, invented some 100 years ago at the then-famous Hotel Rydberg in Stockholm. Use the best meat available. You can use the tail part of the fillet. This dish is somewhat impractical to make for more than two persons, since it would be difficult to broil all the meat simultaneously. One variety, Beef a la Greta (named after Greta Garbo), comes with a mixture of strong mustard and heavy cream, served cold a part and a raw egg yolk.

3/4 lb trimmed filet of beef
3/4 lb raw potatoes
1 onion, finely chopped
butter (for frying)
salt, pepper
chopped parsley
Worcestershire sauce

Steps:

  • Cut the meat into 1/2-inch cubes.
  • Cut the potatoes into 1/4-inch cubes.
  • soak potatoes in cold water for 20 minutes.
  • Drain and wipe them with a towel.
  • In a heavy skillet, fry the potato in butter.
  • Eventually add the onion and fry everything until golden.
  • Add salt and pepper.
  • Keep warm.
  • In another skillet, broil the meat cubes in butter on high heat.
  • They should get brown although rare inside.
  • Add salt and pepper to taste.
  • Serve immediately; the meat on one side of the plate and the potatoes on the other.
  • Garnish with parsley.
  • Worcestershire sauce on the table.

This is the most awesomely delicious beef dish I've ever tried! Truly easy and honestly loved by every member of my family...In fact my 19 year old daughter, Jamie, asks for it specifically every time she visits, and I even won over the in-laws with this one! Simply amazing flavor, I promise! Jamie can be trusted -- she's a picky eater and she loves this!!! :)

2 lbs stew meat
2 (10 1/2 ounce) cans condensed golden mushroom soup
2 tablespoons Lipton Onion Soup Mix
3/4 cup red wine (or Sherry)
1 tablespoon margarine
1/4-1/2 cup canned beef broth (depending on if you choose to use the wine or not)
1/4 teaspoon basil
1/4 teaspoon thyme
1/2-1 lb sliced fresh mushrooms (put in last hour of cooking)
1 lb kluski noodles, cooked, drained and buttered (or Reame's frozen noodles)

Steps:

  • Mix all ingrendients together in a covered casserole dish (except for the mushrooms that you will need to add the last hour of cooking).
  • Bake in a preheated 325 degree oven for 3 hours.
  • Add sliced, fresh mushrooms during last hour of cooking.
  • Serve over prepared Kluski or Reame's noodles.
  • 2ND OPTION: Instead of baking in an oven, you can also prepare this in a Crock Pot and cook on LOW for 8 hours (adding the mushrooms during the last hour.) Serve over prepared noodles, as per recipe, when done.
  • NOTE: To make the gravy a bit thicker, take 1 tablespoons flour and mix with 1 tablespoons water, then add in when you add the mushrooms and be sure to stir well.

Steps:

  • Brown ground chuck in non stick skillet, then create the following layers in slow cooker.
  • Layer 1, 1/4 of potatoes, 1/2 of the onions, salt, and pepper.
  • Layer 2 half can of corn.
  • Layer 3 one fourth of the potatoes.
  • Layer 4 half can of peas.
  • Layer 5 one fourth of the potatoes, mixed with remaining onions, salt, and pepper.
  • Layer 6 remaining corn.
  • Layer 7 remaining potatoes.
  • Layer 8 remaining peas and water.
  • Layer 9 ground chuck.
  • Layer 10 mushroom soup.
  • Cover and cook on high for 4 hours.
