This family recipe has been with us for so long that we're not sure where it came from, but it is loved by all! A wonderful soft, buttery sweet cookie that melts in your mouth with the crunch of crushed pineapple and the softness of a cake. Absolutely WONDERFUL just out of the oven! You will want to make lots!

4 cups all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt
2 cups white sugar
1 cup drained crushed pineapple
1 cup vegetable shortening (such as Butter Flavor Crisco®)
3 eggs, beaten
1 tablespoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, baking soda, and salt together in a bowl.
  • Beat sugar, crushed pineapple, shortening, eggs, and lemon extract together in a bowl until thoroughly mixed. Add flour mixture to pineapple mixture; stir until just combined. Drop dough by teaspoonfuls 2 inches apart onto baking sheets.
  • Bake in batches in the preheated oven until tops are lightly browned, 12 to 15 minutes per batch. Transfer to wire racks to cool.

1 c crushed cornflakes
2 Tbsp granulated sugar
1/3 c butter, melted
2 Tbsp cornstarch
16 oz can crushed pineapple;using juice too
2 c vanilla ice cream,softened
3 oz pkg. instant vanilla pudding mix

Steps:

  • 1. Preheat oven to 350^. Spray or grease a 9-inch square baking pan. Set aside.
  • 2. In a bowl combine cornflake crumbs, sugar and butter. Press into the prepared pan. Bake 10 minutes. Cool completely on wire rack.
  • 3. In a saucepan, combine cornstarch and pineapple and the juice, blending well. Bring mixture to a boil; cook and stir 2 minutes or until thickened. Cool completely.
  • 4. In a bowl beat the softened ice cream and dry pudding mix on low speed for about 2 minutes;blending until thickened. Spoon over cold crust. Top with cold pineapple mixture. Refrigerate until serving time..Enjoy!

15 graham crackers, crumbled
3 cups crushed pineapple
1/2 cup light brown sugar
1 teaspoon grated lemon, rind of
1 1/2 teaspoons cinnamon
4 tablespoons butter

Steps:

  • Preheat oven to 400°.
  • Layer 1/3 of graham cracker crumbs in bottom of a greased 1½ quart baking dish.
  • Add half the pineapple.
  • Mix together sugar thru cinnamon and sprinkle half over pineapple.
  • Repeat crumb and pineapple layers and sprinkle with remaining sugar mixture.
  • Dot with butter.
  • Bake approximately 30 minutes until the top is brown and crusty.
  • Serve hot or cold with whipped cream, if desired.

1 cup packed brown sugar
1 can (20 oz) pineapple slices in juice, drained, juice reserved
1 jar (6 oz) maraschino cherries without stems, drained
1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
Vegetable oil and eggs called for on cake mix box

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on brown sugar. Place cherry in center of each pineapple slice, and arrange remaining cherries around slices; press gently into brown sugar.
  • Add enough water to reserved pineapple juice to measure 1 cup. Make cake batter as directed on box, substituting pineapple juice mixture for the water. Pour batter over pineapple and cherries.
  • Bake 42 to 48 minutes (44 to 53 minutes for dark or nonstick pan) or until toothpick inserted in center comes out clean. Immediately run knife around side of pan to loosen cake. Place heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes. Serve warm or cool. Store covered in refrigerator.

This recipe is very popular in my neck of the woods. If you go to pot lucks, chances are you have had this before. The pineapple is very complimentary to the blueberries. Moist and delicious and serves a crowd!

20 oz can(s) crushed pineapple
3 c blueberries, fresh or frozen
1/3 c sugar
1 box yellow cake mix
1 stick butter
1 c pecans,chopped
1/3 c sugar

Steps:

  • 1. Lightly grease 9x13 baking dish. Spread pineapple with juice over the bottom of dish. Add a layer of blueberries and 1/3 cup sugar. Add the box of cake mix and press down with spoon. Drizzle melted butter over cake mix. Sprinkle remaining 1/3 cup of sugar on top of the cake mix. Cook at 350 degrees for 45 minutes. Remove dish from oven, sprinkle pecans on top and return to oven for 15 minutes more.

  • In a bowl, combine the cornflake crumbs, sugar and butter.
  • Press into a greased 9 in square baking dish.
  • Bake at 350 for 10 minutes.
  • Cool on wire rack.
  • In a saucepan, combine the cornstarch and pineapple until blended.
  • Bring to boil, cook and stir for 2 minutes or until thickened. Cool.
  • In a mixing bowl, beat the ice cream and pudding mix on low speed for 2 minutes until blended and thickened.
  • Spoon over crust.
  • Top with pineapple mixture and refrigerate until serving.
