BETTY'S NO BAKE "MALTESER" SLICE



Betty's no bake

So I have a thing for maltesers. I love them! I think I just really like the combination of malt and chocolate. Anyway, this is a no bake slice filled with malty and chocolate goodness. This is a large batch that I make (I have 3 teenage sons who are all big eaters), feel free to halve. These make a great gift for teachers and friends around the festive times of the year.

2 package(s) plain chocolate cookies (chocolate ripple for us aussies)
1 package(s) malt flavoured cookies
6 tablespoon(s) malt powder
250 gram(s) butter (half a pound)
1 can(s) sweetened condensed milk
2 tablespoon(s) golden syrup (dark corn syrup)
1 package(s) maltesers (chocolate covered malt balls)
250 gram(s) milk chocolate, melted (1/2 a pound) - for the topping

Steps:

  • Grease and well line a LARGE 40 x 25 cm tray or two 20 x15 cm trays (a large 16 x 10 inch tray)
  • Crush the cookies together - use a bag and a rolling pin. A food processor turns it into dust with ease, so if using instead - pulse and check every couple of seconds.
  • Place the crumbs into a large bowl and mix in the malt powder.
  • Cut the maltesers and add to the bowl - as they are round, they are tricky to chop.
  • In a medium sized saucepan, melt and mix the condensed milk, butter and syrup. Stir well to combine and do NOT let boil. Stir constantly. When a light gold colour, take off the heat and pour into the cookie crumb mix. Stir well and press into the prepared pan.
  • Top with melted chocolate and refrigerate and chill for about 2 - 3 hours (this is the "cooking" time).
  • Slice into squares and place into a tupperware style container for freshness. Please note, that in the hot weather this may need to be stored in the fridge.

  • Prepare a 25cm square slice dish or baking tin with greaseproof paper (I always give my tin a quick spray with cooking oil then line with paper so it sticks nicely) and set aside.
  • Using a food processor roughly crush the biscuits (or pop them in a ziplock bag and bash them a bit with a rolling pin) You want them all sizes not fine and set aside.
  • In a large saucepan slowly melt together the chocolate, butter and condensed milk, stirring often to ensure it does not catch until butter completely melted and ingredients blended together.
