Steps:
- Put the chicken into a large zipper-lock bag (27cm x 33 cm/10.6 inch x 13 inch) and add the sauce. Seal the bag and vigorously shake the bag and massage the chicken so that the sauce smears well onto the chicken. Marinate it for at least 30 minutes in the fridge. (I marinated mine for 4 hrs. Overnight works well too!)
- Preheat an oven at 240 C/ 464 F (on the fan forced setting) for 20 mins. Take the chicken out from the fridge. Lay down some baking paper on the oven tray and line up the chicken. Make sure they are not stacked up on top of each other. Alternatively, you can use an oven safe pot and put the chicken in and the marinade. (This is explained above. They result in slightly different outcomes.)
- Put the tray/pot into the oven and bake it at 240 C/ 464 F for 12 mins. Take the tray/pot out and turn the chicken over and put it back into the oven. Bake it a further 12 mins or until the chicken is fully cooked. Garnish with the sesame seeds and green onion. Serve.

Steps:
- Make the marinade by combining honey, hoisin, soy sauce, rice vinegar, Sriracha, garlic, sesame seeds, and grated ginger: Marinate the chicken in this mixture for at least 3 hours, tossing it every hour or so to make sure all sides get coated. Preheat the oven to 400°F. Set a wire rack over a baking sheet. Place the chicken on the wire rack, and bake for 20 minutes. Cook the chicken 15 minutes more, taking the chicken out and basting with the marinade every 5 minutes. Make sure to cook the chicken for a few minutes after the last round of basting, to cook off the bacteria in the marinade. Serve and enjoy!
BETTY'S EXTRA STICKY ASIAN DRUMSTICKS
Sticky, sweet and salty - you're going to need serviettes for these. I discovered cooking caramel from a Malaysian friend a few years ago and am converted. Be sure to stay away from metal bowls when marinating. These are best when marinated overnight, but can be marinated the morning of preparation. Be sure to let these cool...

Steps:
- 1. Mix the marinade ingredients in a bowl and set aside. Place the chicken in either a large zip lock bag (a sturdy one) or a ceramic or glass bowl (no metal please).
- 2. Pour the marinade over and toss to coat all the legs. Refrigerate for at least 8 hours - over night is best.
- 3. Place the legs and marinade in a large baking tray and sort them out into a single layer. Bake at 350oF/170oC for 45 - 55 minutes turning once half way.
- 4. Remove from the oven and cool for 20 - 30 minutes. This thickens up the marinade making them extra sticky. Serve with assorted salads, steamed veggies, fried rice or whatever you like.
- 5. These are fabulous cold (and taken to a BBQ or lunch style pot luck). Be sure to keep them cool so you don't run the risk of food poisoning.
