An easy & yummy brownie that makes a nice no-chocolate treat! Fun to vary the mix-ins - we like to add candy corn! It's a moist slightly cakey brownie that everyone will enjoy!

1/2 cup margarine, melted
1 tablespoon milk
1 cup packed brown sugar
1 egg
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon vanilla
1/2 cup nuts (or other mix-ins) (optional)

Steps:

  • Mix all ingredients well.
  • Bake in 9 inch square pan that you have sprayed well with Pam at 350°F for 25 to 30 minutes.
  • Cool before cutting.

Betty is my rug hooking teacher and she makes these delectable bars at Christmastime. I'm not too wild about spice gumdrops by themselves, but in this cookie.....mmm. I especially like the flavor of the brownie part. It would be a great base for other add-ins.

2/3 cup butter or 2/3 cup margarine
2 1/4 cups brown sugar (1 pound)
3 eggs
2 2/3 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 cup walnuts, coarsely chopped
1 (13 ounce) package spice gumdrops

Steps:

  • Preheat oven to 350°F.
  • Grease a 10 1/2 x 15 1/2 cookie pan with at least 3/4-inch sides.
  • Melt butter in microwave, just to melting point.
  • Stir in brown sugar with mixer; then eggs, one at a time, stirring in well between.
  • Add flour, salt and baking powder; mix well.
  • By hand, stir in nuts and gumdrops.
  • Spread on cookie sheet and bake for 25 minutes.
  • When almost cool, cut into 1x3-inch bars.

1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter (do not use margarine), softened
1 teaspoon vanilla
2 eggs
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter (do not use margarine)
2/3 cup packed brown sugar
3 tablespoons milk
2 cups powdered sugar
1/2 teaspoon vanilla
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. In large bowl, beat granulated sugar, 1/2 cup brown sugar, 1/2 cup butter, 1 teaspoon vanilla and the eggs with electric mixer on medium speed, or mix with spoon, until light and fluffy. Stir in flour, baking powder and salt. In ungreased 13x9-inch pan, spread batter evenly.
  • Bake 20 to 23 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely, about 45 minutes.
  • In 2-quart saucepan, melt 1/3 cup butter over low heat. Stir in 2/3 cup brown sugar; cook over low heat 2 minutes, stirring constantly. Stir in milk; cook until mixture comes to a rolling boil. Remove from heat. Gradually stir in powdered sugar and vanilla, mixing well with spoon after each addition, until smooth and spreadable. If necessary, add more milk, a few drops at a time. Spread frosting over brownies. Immediately sprinkle with pecans. For brownies, cut into 6 rows by 6 rows.

These chocolate brownie cookies are very good, just be careful not to overbake, and they will remain chewy. Yield is only estimated depending on how large you make these.

Number Of Ingredients 10

8 ounces semi-sweet chocolate bits
3 tablespoons butter
1 1/4-1 1/2 cups flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
2 1/4 cups coarsely chopped pecans

Steps:

  • Set oven to 350 degrees.
  • Grease 2 cookie sheets.
  • Place the 8 ounces semi-sweet chocolate bits and the butter in a heavy 2-quart saucepan; melt over low heat (or melt in the microwave), stirring until smooth, let cool slightly.
  • Sift the flour, baking powder and salt.
  • In a bowl with an electric mixer, beat the eggs, sugar and vanilla until well combined.
  • With the mixer on slow, add the cooled melted chocolate, then the dry ingredients; blend well.
  • Stir in the chocolate chips and the nuts.
  • Drop by heaping tablespoonfuls (2-inch apart) on prepared cookie sheets.
  • Bake 10-12 minutes (they will puff, but won't firm up until they are cool, so DON'T OVERBAKE!).
  • Cool for a couple of minutes, then remove to a wire rack to cool completely.
  • These cookies keep well if they are covered for 4-5 says at room temperature, or freeze for up to 3 months (they freeze very well).
  • Note: If desired, the cookie dough may be prepared and frozen, well covered, in the freezer before baking, just thaw, and bring to room temperature before baking.
  • **NOTE** Start with 1-1/4 cups of flour, and add more if needed to make a soft but firm enough dough to spoon on a cookie sheet.

4 eggs, separated
2 tablespoons water
1 cup assorted colors small gumdrops, chopped
1 cup chopped pecans
2 cups powdered sugar
1/4 cup butter or margarine, melted
2 teaspoons grated orange peel
1/4 cup orange juice

Steps:

  • Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray.
  • In medium bowl, mix flour, cinnamon and salt; set aside. In large bowl, beat brown sugar and egg yolks until well blended. Gradually add two-thirds of the flour mixture alternately with water, stirring well after each addition. Add gumdrops and pecans to remaining flour mixture; stir to coat well. Set aside.
  • In small bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold into batter alternately with reserved gumdrop mixture. Spread batter in pan.
  • Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack.
  • In medium bowl, beat powdered sugar, melted butter, orange peel and orange juice until well blended. Spread over bars. Let stand until set. Cut into 8 rows by 6 rows.

1 teaspoon baking powder
1/2 teaspoon baking soda

1 egg
1 teaspoon vanilla
1 1/2 cups quartered green, red and white spice-flavored gumdrops
2 tablespoons coarse white sparkling sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, baking powder, baking soda and salt; set aside.
  • In large bowl, beat softened butter and granulated sugar with electric mixer on medium speed until fluffy; scrape side of bowl. Beat in egg just until smooth. Beat in vanilla. On low speed, beat flour mixture into sugar mixture until well blended. Stir in 3/4 cup of the quartered gumdrops.
  • Shape dough into 60 (1-inch) balls. Place 2 inches apart on ungreased cookie sheets; flatten each ball to 1 1/2-inch circle. On each dough round, sprinkle sparkling sugar and place 3 quartered gumdrops.

Steps:
