Steps:
- In 4-quart saucepan, mix bananas, lemon juice and pectin until pectin is dissolved. Heat to boiling over medium heat, stirring constantly. Stir in sugar. Heat to full rolling boil, stirring constantly; remove from heat. Stir in vanilla and cinnamon.
- Immediately ladle jam into 8 sterilized jars, leaving 1/2-inch headspace. Wipe rims of jars. Seal immediately. Process in boiling water bath 10 minutes.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

- 1. Preheat oven to 325oF and well grease a large loaf tin or a large bunt tin
- 2. In a large bowl, beat the oil, sugar, eggs, yoghurt and bananas until smooth.
- 3. Add the flour, salt, spices and chocolate. Mix until well combined.
- 4. Pour into the prepared tin and bake in the pre-heated oven for 60 - 75 minutes. Cook on the tin for 15 minutes, then turn onto a wire rack.

- Preheat the oven to 350°F. Spray a 9 by 5 inch loaf pan with cooking spray and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
- In a large bowl, whisk together the mashed banana and the eggs. Add the buttermilk, oil, sugar, and vanilla and mix well.
- Stir the dry ingredients into the wet ingredients until just combined. Do not over mix. Pour the batter into the prepared baking pan.
- Bake for 1 hour to 1 hour and 10 minutes. When a toothpick is inserted into the center of the bread, it should come out with moist crumbs but with no raw batter on it.
- Let the bread cool in the pan for 10 minutes. Remove the bread from the pan and place on a cooling rack to cool completely before slicing. Store covered in the refrigerator*.

- Heat oven to 350 degrees. Grease bottom of a 9x5x3 inch loaf pan. Mix sugar and butter in a medium bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened. Stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 55 to 60 minutes; cool 5 minutes. Cool completely before slicing or it might fall apart and be difficult to slice into pieces.
- 120 calories per slice.
- DO NOT USE SELF RISING FLOUR (the baking soda and powder lets it rise on its own.

- Move oven rack to a position that will allow the top of loaf pans to be in the center of oven. Then preheat oven to 350 degrees F. Grease the bottoms and halfway up the sides of two loaf pans. Set aside.
- Mix together butter and sugar in a large bowl until light and creamy. Add in eggs and mix until blended. Add in bananas, mix until blended. Add in buttermilk and vanilla and mix until well blended. Add in dry ingredients and stir until just combined. Do not over mix. Fold in nuts or chocolate chips if using. Pour batter into two loaf pans, dividing equally.
- Bake for approximately 60 minutes or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and allow to cool on a wire rack, in loaf pans, for approximately 10 minutes. Then gently loosen the bread from the side of the pans with a dull knife or spatula, and remove loaves from pans. Allow to cool completely, for about two hours, on a wire cooling rack.
