RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE



Restaurant Style Spaghetti Sauce with Sausage image

It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

4 cloves fresh garlic (chopped)
120 ounces crushed tomato ((four 28-32 ounce cans) San Marzano if possible)
2 pounds sweet Italian sausage
2 bunches fresh basil (finely chopped)
1 medium onion (diced)
1/2 cup olive oil
1 tbsp sea salt (or more to taste)
1/2 tsp black pepper (or more to taste)
1 tbsp sugar (optional)

Steps:

  • In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
  • When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
  • Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
  • add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
  • After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

I never have enough sauce from just a jar alone. I also like the taste of fresh ingredients. I like to combine both in this recipe! The red wine makes all the difference. Serve on favorite noodles with mozzarella cheese and mushrooms on top.

2 tablespoons butter
1 tablespoon extra-virgin olive oil
1 (8 ounce) package sliced fresh mushrooms
1 cup red wine, divided
1 pound ground beef
1 cup diced yellow onion
1 cup diced tomatoes
½ cup chopped red bell pepper
½ cup chopped green bell pepper
¼ cup minced garlic
2 tablespoons oregano
2 tablespoons basil
1 tablespoon rosemary
1 (6 ounce) can tomato paste
1 (28 ounce) jar spaghetti sauce

Steps:

  • Melt butter with olive oil in a small skillet over medium-high heat. Cook and stir mushrooms in butter mixture until softened, 2 to 3 minutes. Add 1/4 cup red wine; bring to a simmer, reduce heat to medium-low, and cook until the mushrooms are very dark and shrunken in size, about 20 minutes.
  • Heat a large pot over medium heat. Cook and stir ground beef, yellow onion, diced tomatoes, red bell pepper, green bell pepper, and garlic together until the beef is completely browned, about 10 minutes; season with oregano, basil, and rosemary. Stir 3/4 cup red wine and tomato paste into the beef mixture. Pour spaghetti sauce into the pot; stir. Return mixture to a simmer and continue cooking until the flavors blend, 10 to 30 minutes.

I've made this spaghetti sauce several times when we've had guests over for dinner parties. Always great the first, second and third time around.

1 lb ground beef (or 4 Italian sausage links cooked and cut into bite size pieces)
2 (14 1/2 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
1 (15 ounce) can tomato sauce
1/3 cup merlot (or red cooking wine)
1 teaspoon cayenne pepper (or to taste)
3 garlic cloves, crushed
1 small onion, finely chopped
1 zucchini, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 large carrot, shredded
10 ounces button mushrooms (whole or sliced)
1 -2 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1/2 tablespoon oregano, ground
1/2 tablespoon basil, ground
2 teaspoons thyme
2 teaspoons sugar

Steps:

  • Brown ground beef and onion and drain.
  • Add zucchini and peppers to ground beef and cook for about 2 minutes stirring well.
  • Add wine to ground beef mixture and simmer for another 2 minutes, stir well.
  • Add rest of ingredients to hamburger mixture.
  • Simmer for 1-2 hours.
  • Serve on penne pasta or spaghetti noodles.
  • This can also be made in the crock pot. Cook the first three steps on the stove and add to the crock pot when completed. Add all other ingredients to crock pot, cover and cook for 6-8 hours.
