Perfect Wacky Cake image

This is Mom's favorite chocolate cake. Easy to make and has a little different twist. Also has no eggs or dairy products. Pick your favorite frosting for the top--Mom likes 7-minute the best.

Number Of Ingredients 9

1 1/2 cups flour
1 cup sugar
3 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

  • Sift together and make 3 holes in dry ingredients.
  • In first hole, pour vegetable oil.
  • In second hole, pour vinegar.
  • In third hole, pour vanilla.
  • Pour cold water over all.
  • Mix well with fork or whisk, but do not beat.
  • Bake in greased 8 x 8 pan for about 35 minutes at 350 deg F.

3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 ½ teaspoons salt
6 tablespoons unsweetened cocoa powder
10 tablespoons margarine, melted
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract
2 cups water
4 cups confectioners' sugar
3 tablespoons unsweetened cocoa powder
½ cup margarine
6 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift the flour, white sugar, baking soda, salt and 6 tablespoons of the cocoa into a 9 x 13 inch baking pan.
  • Drizzle melted margarine and the vinegar over the flour mixture. Add the vanilla and cold water and stir well to remove lumps.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Spread with chocolate frosting.
  • To Make Chocolate Frosting: Combine the confectioner's sugar, 6 tablespoons water, 3 tablespoons cocoa, and 1/2 cup of the margarine. Heat until melted and stir until smooth add vanilla and nuts if desired, and spread over cake.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, and stir well with fork.

1 ¾ cup (210 g) all-purpose flour
2 cups (400 g) granulated sugar
¾ cup (90 g) unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (240 g) buttermilk, (room temperature)
2 large eggs, (at room temperature)
2 teaspoons vanilla extract
½ cup (112 g) vegetable oil
2 teaspoons baking soda
1 cup (237 g) freshly brewed coffee

Steps:

  • Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
  • In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  • With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.
  • Pour the batter into two 8-inch round prepared pans and bake for 30-40 minutes at 350°F, until a cake tester or toothpick comes out mostly clean (not wet).
  • Cool in the pans for about 10 minutes, then turn them out onto a cooling rack and cool completely.

1 c white (granulated) sugar
1 tsp salt
1 tsp baking soda
3 Tbsp heaping cocoa powder (about a quarter cup)
6 Tbsp vegetable oil
1 tsp vanilla extract
1 Tbsp white vinegar (original author used raspberry vinegar and said it was good)
1 c cold water

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium mixing bowl, mix all the dry ingredients together with a whisk.
  • 3. Add all the wet ingredients until well combined.
  • 4. Pour into an 8×8 pan which has been prepared with non-stick spray.
  • 5. Bake for 30 minutes or until a toothpick comes out clean.
  • 6. Serve warm or allow to cool and serve with a dusting of powdered sugar.
  • 7. Note: This would also be good served with whipped cream or vanilla ice cream. A light frosting might be good too but I wouldn't use anything heavy on this moist fluffy cake.

Wacky Cake is an easy chocolate cake recipe that takes 10 minutes to prep. You don't need eggs or milk and the cake only takes one bowl to mix up. It is probably the easiest chocolate cake you will ever make (and still really delicious).

1 ½ cups all-purpose flour
1 cup light brown sugar (packed (can sub white sugar))
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
¾ teaspoon salt
1 cup of coffee (not hot - warm or room temperature)
1 Tablespoon distilled white vinegar (can sub apple cider vinegar)
1 Tablespoon vanilla extract
½ cup chocolate chips (optional)
Powdered sugar for dusting or use easy chocolate frosting below
1 cup semisweet chocolate chips
¼ cup evaporated milk or almond milk
2 Tablespoons salted butter (can sub coconut oil)
1 teaspoon vanilla (or sub ½ tsp. of almond extract)
1 cup powdered sugar

Steps:

  • Adjust the rack to the middle shelf of the oven.
  • Preheat oven to 350F.
  • Use cooking spray to grease a 9" round cake pan or 8"x 8" square cake pan. Set aside.
  • In a large mixing bowl whisk together flour, brown sugar, cocoa powder, baking soda and salt.
  • Add the coffee, vinegar, vanilla and chocolate chips. Stir until the batter is smooth - it is generally on the thin side.
  • Poor the batter into the prepared pan and bake. A metal pan takes about 25 minutes. A glass pan takes about 30-35 minutes. When a tester inserted in the center of the cake comes out with damp crumps the cake is done.
  • Make the frosting right away and frost the cake while frosting and cake are hot.
  • Combine the chocolate chips, milk and butter in a microwave safe bowl. Microwave for 30 seconds.
  • Use a fork or small whisk to blend together. If the chocolate chips are not fully melted microwave an additional 15-30 seconds. Stir again.
  • Add powdered sugar and vanilla, stir with a whisk or fork until the frosting is smooth.
  • Frost the cake immediately while frosting and cake are still hot.
  • Leftover cake can be stored at room temperature for up to three days.
