I stopped at a deli and ordered a meal that came with this salad. The salad was so different that I didn't even want to try it. I did try it and loved it! I created my own version at home. Everyone loves it! You can use spinach leaves entirely if you prefer, or mix in any kind of greens you like.

1 cup mayonnaise
¼ cup white sugar
1 tablespoon white vinegar
1 tablespoon poppy seeds
1 head iceberg lettuce, torn into bite-size pieces
1 bunch fresh spinach, washed, stems removed
½ cup diced red onion
1 (16 ounce) package fresh strawberries, hulled and sliced

Steps:

Make a dressing by whisking together the mayonnaise, sugar, and vinegar in a small bowl. Stir in the poppy seeds; set aside.
Toss together the lettuce, spinach, and onion in a large bowl. Drizzle the dressing over the salad and toss to coat. Add the strawberries and lightly toss again. Serve immediately.

1 tablespoons butter
1 tablespoons packed light brown sugar
1/2 cup pecan halves
pinch salt
Dressing Ingredients
2 tablespoons granulated sugar
1/4 cup extra light tasting olive oil
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
Salad Ingredients
10 ounces fresh baby spinach - rinsed, dried and torn into bite-size pieces
1/4 small red onion sliced
1 quart fresh strawberries, hulled and quartered
1/2 cup fresh blueberries
1/2 avocado, cut into bite sized pieces
1/2 (5 ounce) package blue cheese crumbles

Steps:

Place a sheet of parchment paper on the counter top to dry the pecans. In a small skillet over medium heat melt butter. Add pecans, sugar and salt. Stir until pecans are well coated. Stir until the sugar caramelizes, about 3-5 minutes. Spread onto parchment paper. Separate pecans. Allow to cool. Meanwhile: in a pint size mason jar combine dressing ingredients. Seal and shake until well combined. Set aside on the counter. In a large bowl combine the spinach, onions, strawberries and blueberries. Pour about 1/2 of dressing over salad, and toss. Top with avocado, cheese and candied nuts. Serve remaining dressing on the side. Refrigerate for 15 minutes before serving (or serve immediately). Serve with the remaining dressing on the side. Enjoy!

This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

Ingredients

3 cups fresh baby spinach leaves
1 cup bite size romaine lettuce
1 egg
1/2 cup vinegar
1/2 cup sugar
1/2 cup very finely chopped onion
1 cup sliced strawberries or 1 cup mandarin orange

Steps:

DRESSING:.
Beat together egg and vinegar Put in a small pot and simmer, stirring well.
Continue to simmer, add sugar and onion and cook for 5 minutes.
Stir occasionally.
Chill in fridge for 1 hour.
Wash and drain baby spinach leaves and romaine lettuce well.
Place in large salad bowl.
Pour chilled dressing over salad and add strawberries or mandarines on top.
Mix well.
Prep time does not include refrigeration.
If you are low carbing -- use Splenda in place of sugar, and strawberries, no oranges.

Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

1 ½ cups walnut pieces
1 pint strawberries, quartered
1 (10 ounce) bag iceberg salad
1 (5 ounce) bag baby spinach
1 (4 ounce) container crumbled feta cheese
1 small red onion, thinly sliced into rings
freshly ground black pepper to taste

Steps:

Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
Toast in preheated oven until walnuts start to turn golden brown and become fragrant, 5 to 7 minutes. Let cool, about 5 minutes.
Toss toasted walnuts, strawberries, iceberg salad, baby spinach, feta cheese, red onion, and black pepper together in a large bowl.

2022-02-01 Set dressing aside. In a large serving bowl, combine baby spinach, onions, strawberries and blueberries. Pour half of the dressing over salad, and toss to combine. Top with avocado, cheese and candied nuts. Refrigerate for 15 minutes before serving for best flavor, or serve immediately. Serve with the remaining dressing on the side.
