BASIC BREAD RECIPE

Basic bread recipe image

You can't beat freshly baked bread - crack this super simple bread recipe and conquer any loaf!

Provided by Jamie Oliver

Categories     Cheap & cheerful     Bread     British     Cheap & cheerful     Baking

Time 55m

Yield 1 loaf

Number Of Ingredients 6

1 kg strong bread flour
625 ml tepid water
X3 7 g sachets of dried yeast, or 30g fresh yeast
2 tablespoons sugar
1 level tablespoon fine sea salt
flour, for dusting

Steps:

  • Stage 1: making a well Pile the flour on to a clean surface and make a large well in the centre. Pour half your water into the well, then add your yeast, sugar and salt and stir with a fork.
  • Stage 2: getting it together Slowly, but confidently, bring in the flour from the inside of the well. (You don't want to break the walls of the well, or the water will go everywhere.) Continue to bring the flour in to the centre until you get a stodgy, porridgey consistency - then add the remaining water. Continue to mix until it's stodgy again, then you can be more aggressive, bringing in all the flour, making the mix less sticky. Flour your hands and pat and push the dough together with all the remaining flour. (Certain flours need a little more or less water, so feel free to adjust.)
  • Stage 3: kneading! This is where you get stuck in. With a bit of elbow grease, simply push, fold, slap and roll the dough around, over and over, for 4 or 5 minutes until you have a silky and elastic dough.
  • Stage 4: first prove Flour the top of your dough. Put it in a bowl, cover with cling film, and allow it to prove for about half an hour until doubled in size - ideally in a warm, moist, draught-free place. This will improve the flavour and texture of your dough and it's always exciting to know that the old yeast has kicked into action.
  • Stage 5: second prove, flavouring and shaping Once the dough has doubled in size, knock the air out for 30 seconds by bashing it and squashing it. You can now shape it or flavour it as required - folded, filled, tray-baked, whatever - and leave it to prove for a second time for 30 minutes to an hour until it has doubled in size once more. This is the most important part, as the second prove will give it the air that finally ends up being cooked into your bread, giving you the really light, soft texture that we all love in fresh bread. So remember - don't fiddle with it, just let it do its thing.
  • Stage 6: cooking your bread Preheat the oven to 180°C/350°F/gas 4. Very gently place your bread dough on to a flour-dusted baking tray and into the preheated oven. Don't slam the door or you'll lose the air that you need. Bake for 25-30 minutes or until cooked and golden brown. You can tell if it's cooked by tapping its bottom - if it sounds hollow it's done, if it doesn't then pop it back in for a little longer. Once cooked, place on a rack and allow it to cool for at least 30 minutes - fandabidozi. Feel free to freeze any leftover bread.

BEST BREAD DOUGH

Best Bread Dough image

This bread dough is great for dinner rolls, but it's also fantastic for loaf, kolaches and CINNAMON ROLLS! It can be made by hand, or in a 2lb bread machine. (UPDATED!)

Provided by JB Snead

Categories     Breads

Time 1h

Yield 12-18 dinner rolls, 6-18 serving(s)

Number Of Ingredients 13

1/4 cup warm water
1 1/4 cups milk
2 tablespoons butter, melted
1 egg (optional)
1/2 teaspoon salt
1/4 cup sugar
3 cups flour
1 (3 1/2 ounce) package instant vanilla pudding
1 (1/4 ounce) package yeast
1/2 cup butter, melted (optional)
1/3 cup cinnamon (optional)
1 cup sugar (optional)
16 ounces cream cheese frosting (optional)

Steps:

  • DOUGH BY HAND: Mix water, yeast and sugar. Set aside.
  • Mix ALL of the pudding mix with the milk.
  • Add melted butter, egg and salt. Mix well. For really soft rolls, don't use the egg; for cinnamon rolls, the egg is a must -- otherwise they flatten out (but they're still tasty!).
  • Add yeast mixture. Mix, then knead in flour until dough is smooth.
  • Set in a warm place for 1 hour, then punch it down. Let it rise again for another 45 minutes.
  • DOUGH IN 2LB BREAD MACHINE: Put the ingredients in the machine in the order listed above. Use the DOUGH setting.
  • DO NOT COOK A LOAF OF THIS IN THE BREAD MACHINE! It is a very airy bread, and it will probably ruin your bread machine! (Lesson learned the hard way -- ).
  • TO MAKE DINNER ROLLS: Form the dough into 1.5 to 2 inch balls, and place 1 inch apart on a cookie sheet. Bake in 350 degree oven for 15 to 20 minutes until golden on top.
  • TO MAKE KOLACHES: Form the dough into 1.5 to 2 inch balls. Put mini-sausage and cheese on top, then pull the dough around and wrap it up as best you can. Place 1 inch apart on a cookie sheet. Bake as for DINNER ROLLS.
  • CINNAMON ROLLS: Roll dough to 0.25 inch thick rectangle on a floured surface. Mix 1/2 cup melted butter, 1/3 cup cinnamon and 1 cup sugar; spread evenly (as best you can) over the surface of the dough.
  • Roll up tightly, starting from a long side. Slice at 1 to 2 inch intervals. Place slices on a greased cookie sheet, 2 inches apart. (Pour a little melted butter over each one to make the rolls extra moist!).
  • Cover and let rise 30 minutes.
  • Bake at 350 degrees for 15 - 20 minutes. Remove them as soon as they turn golden. Frost with cream cheese frosting.

MASTER BREAD DOUGH

Master Bread Dough image

This is a great master recipe to use because you can turn it into many different options. You can bake it as a bread loaf, rolls, or even breadsticks! You can also add extra flavoring as you desire.-Fleischmann's Yeast

Provided by Taste of Home

Time 55m

Yield 1 dozen.

Number Of Ingredients 7

6 to 6-1/2 cups all-purpose flour
3 tablespoons sugar
2 packages Active Dry or RapidRise Yeast
2 teaspoons salt
1-1/2 cups water
1/2 cup milk
2 tablespoons butter

Steps:

  • In a large bowl, combine 2-1/2 cups of flour, sugar, undissolved yeast and salt. Heat water, milk, and butter until very warm (120°-130°). Gradually add mixture to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. With spoon, stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8-10 minutes. Place kneaded dough in a greased bowl, turning to grease top. Cover; let rise in warm, draft-free place until doubled in size, about 30-60 minutes. (With RapidRise Yeast, cover kneaded dough and let rest on floured surface 10 minutes.) Shape, let rise and bake according to options below:, LOAF: (use half of dough): Roll dough into a 12x7-in. rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in greased 8x4-in. loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 1 to 1-1/2 hours. Bake at 400° for 30 minutes or until done. Remove from pan; let cool on wire rack. Yield: 1 loaf., ONION ROLLS: (use half of dough): Divide dough into 10 equal pieces; shape into smooth balls. Place in a greased 8-in. round baking pan. Cover; let rise in warm, draft-free place until doubled in size, about 30-60 minutes. Beat 1 egg with 1 tablespoon water; brush over rolls. Sprinkle with 2 tablespoons dried minced onion. Bake at 375° for 25 minutes or until done, covering with foil during the last 5 minutes of baking to prevent excess browning. Remove from pan; let cool on wire rack. Yield: 10 rolls., SOFT HERB BREADSTICKS: (use half of dough): Divide dough into 12 equal pieces; roll each into a 15-in. rope. Twist each rope several times if desired. Place on two greased baking sheets. Cover; let rise in warm, draft-free place until risen slightly, about 10-20 minutes. Lightly beat 1 egg white; brush over breadsticks. Sprinkle with herbs or herb blends such as oregano, dill weed or Italian herb seasoning. Bake at 400° for 15 minutes or until done. Remove from sheets; let cool on wire rack.

HOW TO MAKE YEAST BREAD - BETTER HOMES & GARDENS

From bhg.com
  • Choose a Yeast Bread Recipe. The first step in learning how to make bread is to choose your bread type. Are you a fan of soft-textured white breads, mixed-grain loaves, or slices of sourdough?
  • Choose a Bread Yeast. It might seem like a basic question, but what is yeast? It's important to know about this ingredient for successful yeast breads.
  • How to Proof Yeast. To make sure your bread rises, you need to activate (proof) the yeast. Follow these tips on how to proof yeast: Use the yeast before the expiration date on the package and keep any opened yeast in the refrigerator.
  • Prepare Your Bread Dough. To get your bread dough ready for kneading, follow the instructions in your bread recipe, keeping these tips in mind. Use an electric mixer to beat a portion of the flour and the remaining ingredients together, making sure all of the flour and yeast are moistened.
  • Knead the Bread Dough. For many bakers, one of the best things about yeast bread recipes is kneading the dough—it can be a soothing and satisfying process.
  • Shape the Dough. Shape the bread dough into a ball and place it in a greased bowl ($7, Walmart) that is twice as large as the ball of dough. Turn the dough over to grease the surface, which will keep it from drying out.
  • Let the Dough Rise. A lot is happening as your bread rises. The yeast is multiplying and creating carbon dioxide bubbles, and the gluten is reinforcing the bread's structure as it balloons in size.
  • Bread Dough's Second Rise. Once your loaf is shaped and in a pan (more on this below), cover the dough and let it rise again in a warm place. This time, let it rise just until nearly double in size.
  • Bake and Cool Bread. Place the loaf of unbaked bread in a preheated oven and bake until the bread sounds hollow when lightly tapped with your finger.

  • Basic Sourdough Starter. Sometimes called "friendship bread" because the starter grows so much that you can share it with your friends, sourdough starter is easier than you might think.
  • Rye Sourdough Bread. Using rye flour instead of regular all-purpose flour gives this hearty loaf a denser texture and nuttier flavor. It requires a sourdough starter, so it does take some time, but the result will be well worth it.
  • Russian Dark Rye Sourdough. Make this dark rye sourdough from Russia to accompany a rich soup, as a grilled cheese, or a base for pickled herring or other spreads.
  • Sourdough Beer Bread. Just four ingredients stand between you and this yeasty, hop-scented bread. Beer and sourdough just make sense together, because yeast and hops are a match made in heaven.
  • Sourdough Pancakes. Let's think beyond bread—these sourdough pancakes might just become your favorite go-to sourdough recipe. They offer just the right mix of sweetness and tang, all with a tender, chewy bite.
  • German Dinkelbrot Spelt Sourdough Bread. Don't get intimidated by the multiple steps in this dinkelbrot, or spelt, rye, and sourdough bread recipe. It comes out nutty and light with a unique, hearty texture from spelt flour, an ancient grain that some say digests easier than wheat.
  • Rye Pumpernickel Bread. Pumpernickel bread hails from the Northwest of Germany, where it originally came from rye berries and flour soaked and simmered then baked for 24 hours.
  • Whole Wheat Sourdough. Traditionally, this country bread or landbrot was made in a communal oven and loaves were big enough to last at least a week, or until the next baking day.
  • Potato Flake Sourdough. This variation of a Friendship bread sourdough starter uses potato flakes as part of the base. It can go on pretty much indefinitely, as long as you remember to feed it regularly.
  • Basic Sourdough Loaf. You've birthed and nurtured your starter. You've watched it bubbling away and started smelling that delicious, funky yeast. Now what?

  • The proper way to measure flour using measuring cups is to aerate it first. This is done either by sifting flour, or aerating it by fluffing it up and whisking it well, then spooning it into the measuring cup, then carefully removing any excess flour with a knife. If you just stick that measuring cup in the bag of flour and scoop some out, you will get a lot more flour than what the recipe calls for. Do aerate the flour, or you will end up with dry dough!
