BEST ROASTED VEGETABLES (PERFECTLY SEASONED!)
Here's how to roast vegetables with the best seasoning blend! These epic roasted vegetables fill two sheet pans and take 30 minutes to roast.

Steps:
- Adjust the oven racks for roasting 2 trays. Preheat the oven to 450 degrees Fahrenheit.
- Chop the vegetables: Chop the cauliflower and broccoli into florets. Chop the onion into 1/2-inch slices. Cut the sweet potato in half lengthwise, in half again lengthwise, and then cut each quarter into thin pie-shaped slices (see the photo). Chop the peppers into 1/2-inch strips, then cut the strips in half.
- Line two baking sheets with parchment paper (we prefer this to silicone baking mats because it results in crispier veggies). Spread the vegetables evenly onto each sheet. Drizzle half the olive oil onto each tray, then with half the seasonings onto each tray. Mix with your hands until evenly coated.
- Place into the oven and bake for 20 minutes (do not stir!). Remove the pans from the oven, rotate them, and roast another 10 minutes (for 30 minutes total) until tender and lightly browned on one side. Transfer to a serving bowl or dish and serve immediately.

THE EASIEST (AND BEST) OVEN ROASTED VEGETABLES
This is my absolute favorite recipe for seasoned oven roasted vegetables. And you won't believe how easy it is. I always get compliments and requests for the recipe. In the summer, I mix this up and put it on the grill in a vegetable basket. Great flavor!

- Preheat oven to 450.
- In large plastic bag or bowl, add all ingredients.
- Close bag and shake or toss in a bowl until vegetables are evenly coated.
- Empty vegetables into a 9X13 baking or roasting pan; discard plastic bag.
- Bake, stirring once, 20 minutes or until vegetables are tender.
BEST ROASTED VEGETABLES EVER
A great roasted vegetable recipe that is one of my all time favorites. I didn't know vegetables could taste so good.

- 1. Preheat the oven to 375 F (180 C). Quarter and slice the onion thinly. Dice all the vegetables into pieces that are approximately the same size (no larger than 1/2 inch). Pile the vegetables into a baking dish so that the vegetables lie a few inches thick. Season with salt, pepper and herbs to taste and then pour the olive oil over the vegetables. Mix thoroughly but gently - you don't want to destroy the tomatoes before the dish goes into the oven. Now check the vegetables to make sure they are well-coated and glistening with oil. If need be, add more oil.
- 2. Put the dish in the oven and cook for 45 minutes to an hour. Halfway through the cooking process, remove the dish from the oven and very gently stir the vegetables so that the ones at the bottom come to the top. Towards the end of the cooking process, stir a second time. Remove from the oven and let cool slightly. Check for seasoning and serve.

- Place foil on a rimmed cookie sheet. You want a rim because you don't want the veggies' juices running over the edge of the pan, and you want foil because it makes for easier cleanup.
- Roast like vegetables together and keep them the same size. Vegetables cook at different speeds. By roasting like vegetables together -- roots with roots, etc. --
- Oil your veggies. Don't drown them in oil, but make sure each piece is very lightly coated -- you'll know if that's what you're doing if there are pools of oil in the pan.
- Give them space. Never crowd the pan. Roasted vegetables are so good, we understand that you might want to fit as many of them as you possibly can into the oven.
- Don't take them out too early. Roasting vegetables takes times, sometimes upwards of 45 minutes. Don't rush them. They might be soft enough to eat, but you want to get a golden-brown, caramelized color for the best flavor.
- Turn up the heat. We're talking 400-450 degrees Fahrenheit. That's how you get those perfectly cooked veggies that are soft on the inside and golden on the outside.
- Add flavor. You really don't need anything other than oil and salt for delicious roasted veggies, but throwing a few sprigs of fresh herbs or cloves of garlic to the pan as they roast only boosts flavor.
