I wanted to make a Tart and when I saw this one I couldn't resist. It looks so professional and it was so easy. I am not a pro baker by any means, and look at how it turned out. I will sure to impress anyone.

Number Of Ingredients 10

1 1/4 cups all-purpose flour
1/2 cup butter, room temperature
2 tablespoons sour cream
6 medium peaches, peeled, pitted and sliced
3 large egg yolks
3/4 cup sour cream
3/4 cup sugar
1/4 cup all-purpose flour
1/2 cup peach preserves or 1/2 cup jelly
1 tablespoon frozen orange juice concentrate

Steps:

  • Preheat the oven to 375°F.
  • To make the crust:.
  • Please the flour, butter and sour cream in a food processor and pulse to combine. When the dough has formed a ball, pat with lightly floured hands into the bottom and sides of an ungreased 10-inch tart plan with a removable bottom and 1/2 inch sides. Bake for about 15 minutes, until the crust is set but not browned. Let cool while preparing the filling.
  • Lower the oven to 350°F.
  • To make the filling:.
  • If using fresh peaches, peel and thickly slice the peaches. Arrange the fresh peach slices in overlapping circles on top of the crust, until it's completely covered. Overfill the crust, as the peaches will shrink during cooking.
  • Combine the egg yolks, sour cream, sugar, and flour and beat until smooth. Pour the mixture over the peaches. Place the tart pan on a baking sheet and bake for about 1 hour, until the custard sets and is pale golden in color. Cover with an aluminum foil tent if the crust gets too dark. Transfer the tart pan to a wire rack to cool. When cool, remove the side wall of the pan.
  • To make the glaze:.
  • Combine the preserves or jelly and orange juice. Spread with a pastry brush over the top of the warm tart. Serve the tart warm, at room temperature, or chilled. Garnish with fresh mint.

1 1/4 cups plus 1/4 cup for filling all purpose flour
1/2 cup softened butter
3/4 cup plus 2 tablespoons for crust sour cream
6 medium peeled and sliced, or 1 (28 oz) can and 1 (16 oz) can sliced peaches in light syrup, well drained peaches
3 large egg yolks
3/4 cup sugar
1/2 cup warmed (or jelly) peach preserves
1 tablespoon frozen lemonade concentrate

Steps:

  • Preheat the oven the 375 °F.
  • To make the crust: Place the 1 1/4 cups flour, butter, and 2 tablespoons sour cream in food processor and pulse to combine. When the dough has formed a ball, pat with lightly floured hands into the bottom and sides of an ungreased 10-inch tart pan with a removable bottom with 1/2-inch sides, or a round au gratin dish. Bake for about 15 minutes, until the crust is set but not browned. Let cool while preparing the filling.
  • Lower the oven temperature to 350 °F.
  • To make the filling: If using fresh peaches, peel and thickly slice the peaches. Arrange the fresh or canned peach slices in overlapping circles on top of the crust, until it's completely covered. Overfill the crust, as peaches will draw up during cooking.
  • Combine the egg yolks, 3/4 cups sour cream, sugar and 1/4 cup flour and beat until smooth. Pour the mixture over the peaches.

This is a wonderful and light spring/summer dessert. You can use any fruit you like, even mixed fruit works well. You can also use frozen fruit, although fresh is recommended. If you prefer, you can use a sheet of puff pastry in lieu of the phyllo. Time does not include chill time.

12 sheets phyllo dough
nonstick cooking spray
2 (8 ounce) packages reduced-fat cream cheese
1/2 cup Splenda sugar substitute (or sugar)
1/2 cup Splenda sugar substitute (or sugar)
1 tablespoon cornstarch
1 1/2 cups water
1 (3 ounce) box sugar-free peach gelatin
2 -3 fresh peaches, peeled pitted and sliced thin

Steps:

  • CRUST: Preheat oven to 350°F In tart pan layer phyllo sheets, spraying non-stick cooking spray in between the sheets of phyllo. Trim excess dough around pan and poke holes into phyllo with fork tines. Bake for about 10 minutes or until browned on edges. Let cool.
  • CHEESE FILLING: Meanwhile mix sugar and cream cheese together. Place into cooled phyllo crust. Refrigerate 2 hours.
  • FRUIT TOPPING: In medium saucepan, combine sugar and cornstarch. add water and cook over medium heat until thick and clear. Add gelatin and stir to dissolve. Remove from heat, stir in fruit and let cool slightly. Pour over cheese filling. Refrigerate 2 more hours. Serve with a dollop of whipped topping if desired.

I saw Paula make this on the Food Network and I had to save this recipe for when peach season comes around. Serve with your choice of whipped cream or vanilla ice cream. This looked fabulous!

4 cups peeled sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self rising flour
1 1/2 cups milk

Steps:

  • Preheat oven to 350°.
  • Combine peaches, 1 cup of the sugar and water in a saucepan and mix well.
  • Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Remove from the heat.
  • Place butter in a deep baking dish and put in the oven to melt.
  • Mix remaining cup of sugar, flour and milk slowly to prevent clumping.
  • Pour mixture over melted butter.
  • DO NOT STIR!
  • Spoon fruit over top, gently pouring in syrup.
  • Batter will rise to the top during baking.
  • Bake for 30 to 45 minutes.

It was an instant hit on the first day Paula Deen offered this dessert at The Lady & Sons, and remains so today. This delicious cobbler can be found on their dessert trays at both lunch and dinnertime. It's so easy to make you won't believe it! COOKS NOTES: If they are available by all means use fresh peaches. In a saucepan, mix two cups fresh peach slices with one cup sugar and one cup water. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, stirring occasionally. An almost equally good product is frozen peach slices. Simply follow the instructions for the fresh peach slices. NOTE: This is an adopted (late in 2006) recipe and there was already some discussion about the amount of butter necessary in reviews made previous to my inheriting this recipe: Now that I have made it myself, I can say that for me at least, 60 grams (1/4 cup) of butter was fine, (by all means use a little less if you prefer) and my dumplings didn't turn out doughy at all... what I DID mess up was using a larger can of peaches (non-metric sizes of canned fruit don't translate perfectly into metric ones), so I thought that the extra wouldn't matter much, mine was swimming rather a lot in the juice at the bottom and next time I will use all the peaches but only half or 3/4 of the juice from my metric sized can.. Taste was excellent and guests devoured it. I'm delighted to have inherited this recipe, so to both Paula Deen and the previous Zaar owner: Thanks for an excellent recipe !!!

1 cup sugar
3/4 cup self-rising flour
3/4 cup milk
1 (28 ounce) can peach slices in heavy syrup, undrained (or use fresh if available, see note)
cinnamon, for sprinkling (optional, use only with peach or apple cobbler)

Steps:

  • Preheat oven to 350 degrees.
  • Place butter in oven in a 2-quart baking dish to melt.
  • Stir sugar and flour together and mix well. Slowly add milk and continue to stir to prevent the batter from lumping.
  • Being careful not to burn yourself, remove hot baking dish containing melted butter from oven; pour batter directly over butter in baking dish (DO NOT STIR).
  • Spoon fruit on top of batter, then gently pour syrup on top (DO NOT STIR). Sprinkle with cinnamon, if using. The most important part of this dish is not stirring the mixture.
  • Bake for 30 to 45 minutes or until golden brown. Your batter will rise above your fruit, producing the most wonderful of crusts. Serve warm with vanilla ice cream or fresh whipped cream.
