Steps:
- Using cheesecloth, make a spice bag with the cinnamon and cloves; tie tightly with kitchen string.
- Combine all ingredients in a large pot, bring to a boil, then simmer for 90 minutes, covered.
- Remove lemon slice and orange slices, and spice bag, before serving.

HOT CRANBERRY GLOGG
This is a nice, easy glogg recipe that's not too heavy on the alcohol. I like to serve this on Christmas Eve.

Steps:
- In a glass or stainless steel bowl, combine juice, wine, sugar, water, cinnamon, cardamom and cloves (at this point, you can cover and refrigerate it until you need it).
- Warm glögg in a pan over medium heat just until heated through- don't boil or the alcohol will boil off and then it's no fun.
- Float orange slice on top.
- To serve, keep warm over a candle or on an electric warming tray.
- Ladle into cups, adding raisins and almonds to individual servings.
- To make non-alcoholic, omit sugar and water and use 2 cups more cranberry-apple juice.

CHICKEN MANDALAY
From "Grand Slam" of the "Best of Bridge" series. This was a group of ladies in Canada who, many years ago, formed a bridge group in which the cards and food seemed to share equal importance. They decided to put some of their wonderful recipes into a cook book which was published and proved to be a huge succes. They went on to produce at least 5 more cookbooks and it seems they are still friends! I still go to my "Best of Bridge" cookbooks for ideas.

- Shake chicken in flour and brown in oil.
- Set in a casserole dish.
- In a bowl, combine remaining ingredients and pour over chicken.

- Add red pepper, celery and green onions.
- Stir-fry 3 minutes.
- Add cornstarch mixture and beef.
- Stir-fry 3 minutes.

Steps:
- Tie cloves, cardamom pods and seeds, cinnamon, and gingerroot in cheesecloth bag.
- Heat spice bag, water, almonds, raisins, prunes, and orange to boiling in a 4 quart Dutch oven, reduce heat.
- Cover and simmer 45 minutes.
- Remove spice bag, prunes and orange.
- Stir in remaining ingredients.
- Cover and heat over medium heat until mixture begins to bubble.
- Ladle almond half and a few raisins into each cup before filling with hot glogg.
