A healthy breakfast or snack to keep on hand, these Classic Bran Muffins are easy to make and filled with fiber. They make the perfect grab and go breakfast!

1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
2/3 cup light brown sugar
1/2 teaspoon vanilla extract
1 cup white whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 375ºF. Spray a 12-cup muffin tin with nonstick cooking spray.
  • In a medium bowl, combine the wheat bran and the buttermilk. Let it sit for 10 minutes.
  • In a large bowl, combine the oil, egg, brown sugar, and vanilla. Add the soaked wheat bran mixture and stir to combine. Add the flour, baking soda, baking powder and salt. Stir just until combined.
  • Divide the batter between the 12 muffin cups evenly.
  • Bake in the preheated oven until a tester inserted in the center comes out clean, 15-20 minutes.

This is a wonderful bran muffin that my Mom always made and now I carry on the tradition. This recipe came from the back of Rogers Wheat Bran. Quick to make, plus the recipe doubles well and freezes excellent.

1 1/2 cups rogers wheat bran
1 cup buttermilk (or 1 tbsp. lemon juice added to 1 cup milk)
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins (I use 3/4 cup)

Steps:

  • Preheat oven to 350.
  • Mix together Rogers Wheat Bran and buttermilk; let stand.
  • Combine the vegetable oil, egg, sugar and vanilla and add it to the bran-buttermilk mixture, this is now your first mixture.
  • Mix flour, baking powder, baking soda and salt.
  • Add to the first mixture, stir until just blended and add the raisins.
  • Line muffin tins with baking cup papers and spoon into baking cup papers using all the batter.
  • Bake at 350 for 15 to 20 minutes.
  • Note: I bake mine for only 15 minutes and find them much moister.

I LOVE a good bakery bran muffin and have tried countless refrigerator bran muffin recipes, which always come up short. This recipe is from Cook's Illustrated and promises the best bran muffins. What is different about the ingred. is the ratio of white and wheat flours and wheat bran. The molasses, dark brown sugar help make up the great flavor and you will love the bakery crusty top. It is a little more work, but I would never bake any other recipe!

1/4 cup whole wheat flour
1 1/4 teaspoons baking powder

7 tablespoons unsalted butter, softened
1/2 cup dark brown sugar, plus

2 large eggs

3 tablespoons unsulphured molasses
1/4 cup sour cream
1 cup buttermilk, plus
3 tablespoons buttermilk

Steps:

  • Adust oven rack to lower middle position and heat oven to 375.
  • Beat butter in large bowl of electric mixer at medium speed until light and fluffy, 1-2 minute.
  • Add brown sugar, increase speed to medum-high, and beat until combined and fluffy, about 1 minute longer.
  • Add eggs one at a time, beating thoroughly before adding the next.
  • Beat in vanilla, molasses, and sour cream until thoroughly combined and creamy, about 1 minute longer.
  • Reduce speed to low and beat in buttermilk and half the flour mixture until combined, about 1 minute longer.
  • Beat in remaining flour mixture unil incorporated and slightly curdled looking, about 1 minute longer, scraping sides of bowl as necessary.
  • Stir in bran and raisins.
  • Spray a twelve mold muffins tin (each mold measuring 1/2 cup) or a six mold muffin tin (each mold measuring one cup) with cooking spray.
  • Divide batter evenly using ice cream scoop or spoon.
  • Bake until a toothpick inserted into center withdraws cleanly of with a few moist particles adhering to it, about 25 minute Set on wire rack to cool slightly, about 5 minute Remove muffins from tin and serve warm.
  • Makes 12 small muffins or 6 jumbo muffins.

2/3 cup light brown sugar
1 1/2 teaspoons baking soda

1/3 cup vegetable oil
1 large egg

3 tablespoons turbinado sugar for sprinkling

Steps:

  • Combine the cereal, flour, brown sugar, baking soda, salt, and cinnamon into a large bowl and whisk together. Set aside.
  • In a separate bowl whisk together the buttermilk, oil, egg, and vanilla. Pour the wet ingredients into the dry and stir to blend well. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours or up to 12 hours. The batter will become very thick.

Steps:

  • Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
  • In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.

Steps:

  • Preheat oven to 425 F and prepare muffin pans.
  • Measure the wheat bran into a large bowl and cover with boiling water. Stir and let sit.
  • In another bowl, whisk together flour, baking soda, baking powder and salt. Set aside.

Steps:

  • 1. In a large bowl, combine the cereal, oil, and raisins, and pour the boiling water over them. Set the mixture aside to cool slightly. 2. In a small bowl, combine the eggs, buttermilk, and molasses. Add this to the partly cooled cereal mixture. 3. In another small bowl, combine the flour, sugar, baking soda, and salt. Add the flour mixture to the cereal mixture, stirring just enough to moisten the dry ingredients. Cover the batter with plastic wrap, wax paper, or a damp towel, and let it stand for at least 15 minutes, preferably for 1 hour. 4. Preheat the oven to 400.
