My favorite meat loaf recipe, healthy and delicious that can be varied all kinds of ways. Just 7 Freestyle SmartPoints and works with Simply Filling/No Count Technique.

2 teaspoons canola oil
1 cup finely chopped white mushrooms
1 cup finely chopped onion
1 carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 pound lean ground beef (7% or less)
1/2 cup quick cooking or old-fashioned oats (not instant)
2 large egg whites (I use 1 whole egg instead)
3 tablespoons ketchup (plus more for brushing on top)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme leaves (not ground thyme)
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (or 1 teaspoon minced fresh)

Steps:

  • Preheat oven to 350F degrees. Spray a 4-1/2 x 8-1/2-inch loaf pan with cooking spray.
  • Heat the oil in a large nonstick skillet set over medium heat. Add the mushrooms, onion, carrot, and celery. Cook, stirring frequently, until the onion is softened, about 5 minutes. Transfer this mixture to a large bowl.
  • Add the remaining ingredients to the vegetables in the bowl and mix well. Press the meatloaf into the prepared loaf pan.
  • Bake the meatloaf for 30 minutes. Brush additional ketchup on top of the loaf, if desired.
  • Cook until done, an additional 30 to 45 minutes. (An instant read thermometer inserted into the center of the loaf should read 160F degrees.)
  • Remove from the oven and let rest for about 5 minutes. Cut into 8 slices.

My Version of Weight Watchers Meatloaf image

This recipe is my verison I made different from regular recipe I found. Just a bit more taste to it and fat intake in mine. Serve with mash potatoes of choice and a green vegetable dish and your choice of bread. Of course you can use less fat products for those watching the calories. This meal is really good. 5 Points per serving

1 lb lean ground beef
1 small onion, chopped
3/4 cup old fashioned oats, uncooked
8 ounces tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon hot pepper sauce
1 egg, slightly beaten
1/2 teaspoon basil
1/8 teaspoon thyme
salt and pepper

Steps:

  • Preheat oven to 350'.
  • In large bowl mix together all the ingredients til well blended.
  • Spray a loaf pan with pam Place mixture in pan and press around to flatten it out.
  • Bake in oven for 1 hour, or until no longer pink inside loaf.

This recipe comes from a 5 Ingredient 15 Minute Weight Watchers book from about six years ago. It is so easy and so yummy! It is my boyfriend's absolute favorite. It serves four and has four points each.

1 lb 93% lean ground beef
1/2 cup barbecue sauce, divided
1/4 cup frozen chopped onions, pressed dry
1/4 cup Italian seasoned breadcrumbs
2 large egg whites

Steps:

  • Preheat oven to 375°F.
  • Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and seasons of your choice in a large bowl; stir well.
  • Shape mixture into a loaf pan. Spread remaining 1/4 cup barbecue sauce over loaf.
  • Bake at 375°F for 40 minutes or until desired degree of doneness.

  • Preheat the oven to 200°C (400°F). Place the oven rack in the centre of the oven. Spray a baking sheet with cooking spray.
  • Spray a large non-stick skillet with cooking spray and set over medium heat. Add the onion and bell pepper; cook, stirring occasionally, until softened, about 5 minutes. Remove from the heat and let cool 10 minutes.
  • Blend together the ground turkey and turkey breast, the onion mixture, 125 ml (½ cup) of the ketchup, the bread crumbs, egg white, mustard, Worcestershire sauce, garlic powder, salt and pepper in a large bowl. Transfer the mixture to the baking sheet and shape into a 12.5x25-cm (5×10-in) loaf, about 6.25 cm (2½ in) thick. Spread the remaining 125 ml (½ cup) ketchup over the top of the meatloaf.
  • Bake until a thermometer inserted into the centre of the meatloaf registers 75°C (165°F), about 45 minutes. Remove from the oven and let stand 10 minutes before slicing.
