2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water (110° to 115°)
1/3 cup vegetable oil
1/4 cup sugar
1 large egg, room temperature
1 teaspoon salt
3 to 3-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Preheat oven to 425°., Cover and let rest for 10 minutes. Bake until golden brown, 8-12 minutes. Remove from pans to wire racks to cool.

1 cup hot water + 2 T. hot water
2 T. dry yeast
1/3 cup vegetable oil
1/4 cup sugar
1 egg
1 t. salt
3 1/2 cups flour
1/2 cup flour
2 T. melted butter

Steps:

  • In a large bowl add the hot water. Then add 2 tablespoons of dry yeast.
  • Add egg, oil and sugar. Give it a quick stir and let it sit for 5 minutes.
  • After 5 minutes the yeast mixture should be bubbly. Add 3 cups of flour, one cup at a time, stirring after each cup.
  • Shape into a wet ball. Lay the ball on a floured surface. Knead for 5 minutes.
  • Divide into balls. 12 for small buns. 8 for large buns. **(If making sweet rolls, roll each bun in a bowl of sugar. )
  • Put the balls onto a baking sheet covered with parchment paper. Cover with a clean dry cloth and let rest in a warm place. Set oven to 425-degrees. After 10-30 minutes put the rolls into the oven. The rest time is determined by how much you want your rolls to rise.
  • Bake for 10-12 minutes. I rotate the baking sheet at 8 minutes so that all of the rolls are the same brown.
  • Once all rolls are brown, take them out of the oven. Brush each roll with melted butter and transfer them to a cooling rack.
  • For best results when used immediately as hamburger buns, slice each roll in half and brown the insides in the oven or toaster. If making the night before, cover buns with saran wrap or store in a covered container for freshness.

1 egg
3 tbsps melted butter
1 1/2 tsp salt
3 tbsps sugar
520-550g all-purpose flour (18.5-19.5 oz.)
1 egg
1 tbsp milk
(or 75g/2.65 oz. melted butter)
sesame seeds

Steps:

  • To prepare this homemade hamburger buns recipe, start by making the dough. Add in the mixer's bowl the yeast, the warm water and 50g flour (5 tbsps). Using a hand whisk, whisk all the ingredients to form a batter. Wrap the bowl with plastic wrap and set aside for 6-7 minutes, until the yeast rises and starts bubbling. Be careful not do add hot water, as it will kill the yeast, nor cold, as it will take forever for your hamburger buns to rise. The water should be at the same temperature as your finger, so check it out sticking one finger in; you should feel no difference in temperature.
  • In the meantime melt the butter. The key is to melt the butter at very low heat, so that the temperature doesn't kill the yeast. Remove the pan from the stove and check the temperature. The butter should be at the same temperature as your finger. If it is warmer, leave to cool down for a few minutes and check again.
  • Pour the butter in the yeast mixture and add the egg and sugar. Whisk to combine. Top with the flour and add the salt.
  • Using the dough hook mix at first at low speed, until the ingredients start to combine and then mix at medium-high speed for about 10 minutes, until the dough doesn't stick on the sides of the bowl. At this point the dough should be really soft and a little sticky. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

  • Heat oven to 425°F
  • In a mixing bowl, stir yeast, oil, and sugar into warm water, and allow to stand for 5 minutes, or until mixture is foamy. If the yeast mixture doesn't look foamy after 10 minutes, the yeast is too old and the dough won't rise. Discard and replace with fresh yeast.
  • Whisk in egg and salt.
  • Stir in flour, starting with 3 cups, adding a little more if necessary to form a soft dough.

4 1/2 c all purpose flour
3 Tbsp sugar
1 1/2 tsp salt
5 Tbsp butter, melted
1 Tbsp yeast (or one envelope)
1 1/4 c milk, warmed

Steps:

  • 1. Blend the flour, sugar and salt in a mixing bowl. Add the butter, yeast mixture and milk, and mix by hand to form a dough. Knead five minutes with an electric mixer with dough hook, or turn the dough out onto a lightly floured surface and knead for seven to nine minutes by hand.
  • 2. As the dough kneads, add small amounts of additional flour or warm water as necessary to achieve a dough that is light and slightly sticky.
  • 3. When the dough has been kneaded until smooth, transfer it to a greased bowl and turn over the dough once to coat it with oil. Cover the bowl with a towel, and leave the hamburger roll dough to rise until doubled in bulk, about one to one-and-a-half hours.

  • In a small bowl combine the warm milk, yeast and sugar and let it stand for 5 minutes. Then add the oil, salt and 1 egg. Mix with a fork.
  • Add the liquid to the flour, mix until rough dough forms, then take it out of the bowl onto a floured surface and start kneading until smooth and elastic dough is formed for approximately 8-10 minutes. If using a stand mixer, knead using a dough hook attachment for 1 minute on low speed, then switch to medium and kneed for 4 minutes longer.
  • Take the dough out of the bowl and rub the bowl with vegetable oil, then return the dough to the bowl, cover with plastic wrap and a towel and let it rise for 45 minutes in a warm place until it more than doubles in size. Preheat the oven to 180C/350F.
  • After 1 hour it should double in size, take the dough out of the bowl onto a floured surface and divide into 8 equal parts. (You might want to weigh them to ensure they are all the same.) Roll into balls and place on parchment-lined sheet 2 inches apart from each other. Cover with a tea towel and let them rise one more time for 30 minutes.
