HOW TO COOK FROZEN CORN ON THE COB

Steps:
- Place the water, milk, chicken broth concentrate and butter in a medium sized saucepan on the stove top and heat over medium heat till boiling.
- Put the frozen corn on the cob into the water and allow water to come to a boil again.
- Remove the corn on the cob using kitchen tongs as it starts to boil.
- Place in a bowl and smear with extra butter and sprinkle with salt and pepper.

Steps:
- Place corn in a colander and rinse with cold water until ice is no longer present. Shake off excess water over the sink.
- Place corn and butter in a medium-sized skillet over medium-high heat.
- Sprinkle sugar over corn and stir until butter is melted and corn is hot (about 5-6 minutes). Do not over cook.
- Season with Kosher salt and fresh black pepper if desired.
- Serve immediately.

- In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in airtight containers, allowing headspace for expansion.

PEGGI'S FROZEN SWEET CORN
This was my Mother-in Law's recipe that I've used for about 26 years now. I no longer can corn. Just freeze. The picture is of some that has been frozen now about 6 months. Just as good as the day it went in. Fresh! The salt & sugar bring out the sweetness in the corn.

Steps:
- 1. Cut corn from cob & measure into LARGE stainless steel, glass, or other non-corosive bowl.
- 2. Add remaining ingredients, except bags & stir well. Set aside on counter for about 30 minutes, stirring every 10 minutes.
- 3. Measure the amount you will use into freezer bags & pushing all air out, close the seal. Freeze.
- 4. Note* When I serve, I use the little bowls shown in picture to hold all the sweet juices too, so I know we only eat a bowl a piece, so that's what I measure into bag. No waste. Have company, get 2 bags out.

Steps:
- Husk corn. Clean the cobs to remove any silk that's stuck on.
- Cut fresh kernels off the cob.
- Add raw corn kernels, water, sugar, salt, and butter to a large pot.
- Bring to a gentle boil. Simmer 10 minutes.
- Let cool until about room temperature.
- Ladle corn and some juice in freezer containers or freezer bags.
- Lay bags flat and freeze.

STEAMED CORN ON THE COB
Steps:
- Gather the ingredients.
- Husk the corn and remove the silk. Trim off any discolored kernels or any that have been damaged by insects. Depending on the size of your steamer basket, you may need to cut the ears of corn in half so they are short enough to fit.
- Add 2 inches of water to a large pot and insert a steamer rack. Make sure the water is not touching the bottom of the steamer rack. If it is, pour some of it off.
- Cover the pot and bring the water to a boil over high heat.
- When the water begins to boil, place the corn into the steamer basket inside the pot using a pair of tongs.
- Cover the pot and let the corn steam for 4 minutes or until it turns deep yellow and crisp. If you prefer softer corn, steam for 7 minutes. For the softest corn, steam for 10 to 15 minutes. The longer you steam the corn, the more attention you must pay to the water level. Don't let it fall lower than 1 inch or it may run dry and scorch your pot.
- Turn off the burner and carefully remove the corn from the pot with tongs. Serve as is or with butter, salt, and pepper.
