Steps:
- Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
- Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
- Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
- Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
- Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

Steps:
- Preheat the oven to 425˚F (220˚C).
- Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
- Sift in the flour, sugar, and salt through a fine-mesh sieve.
- Using a spatula, gently incorporate into the batter until paste-like.
- Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up.
- Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle.
- Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat.
- Bake for 8 minutes, until the edges become golden brown.
- Working quickly, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. Place the folded fortune cookies in a mini muffin tin until cooled to retain their shape.

Steps:
- Cut a stencil out of a plastic coffee can lid in the shape of a 3-inch disk. Whip the egg whites until stiff and chill. In a mixer, cream the butter, then add the sugar and continue mixing. Add the flour and blend in, then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth. With a small offset spatula, spread batter through the stencil so it is a circle onto a silpat or parchment paper, about 6 per cookie sheet. Bake in a preheated 350-degree oven until light golden brown, 7 to 8 minutes. Quickly remove the pan from the oven and one at time place a fortune across the center with a bit hanging out. Fold cookie circle in thirds over fortune with flaps only slightly overlapping each other. Turn over and bring opposing sides together and pinch. Let cool.

Steps:
- Gather the ingredients.
- Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide.
- Preheat oven to 300 F. Grease 2 9-X-13 inch baking sheets .
- In a medium bowl, lightly beat the egg white, vanilla extract, almond extract, and vegetable oil until frothy, but not stiff.
- Sift the flour , cornstarch, salt, and sugar in a separate bowl. Stir the water into the flour mixture.
- Add the flour to the egg white mixture and stir until you have a smooth batter. The batter should not be runny but should drop easily off a wooden spoon.
- Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.
- Bake until the outer 1/2-inch of each cookie turns golden brown, and they are easy to remove from the baking sheet with a spatula (14 to 15 minutes).
- Working quickly, remove the cookie with a spatula and flip it over in your hand.
- Place a fortune in the middle of a cookie.
- To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

Steps:
- Preheat oven to 400 degrees F.
- In a small mixing bowl mix the egg white, sugar, ginger, allspice, vanilla and salt until mixed well.
- Stir in the flour to incorporate.
- Rest the batter for 30 minutes.
- On pieces of paper about 2-inches long and 1/2-inch wide, write fortunes to go into the cookies.
- Line two 11- by 17-inch baking sheets with parchment paper.
- Making 2 cookies at a time, spoon about 1 tsp. batter into a traced circle on one of the baking sheets.
- Using a cookie cutter, trace two 2-inch diameter circles onto each piece of parchment, a few inches apart. Flip the parchment over so that the ink cannot have contact with the cookies and spray the parchment with nonstick spray.
- Spread the batter out to a 2-inch diameter circle with your finger, making sure the batter stays inside the traced circle.
- Repeat with another 1 tsp. batter in the other traced circle.
- Put the cookies in the oven and cook 4 minutes.
- Remove the tray from the oven and immediately remove the cookies with a metal offset spatula.
- Working quickly, put a fortune on each of the cookies and fold each cookie in half and then into quarters.
- Cool on a rack.
- Changing the baking sheets as you go to ensure your starting with a cool sheet each time, continue to make cookies, two at a time, until the batter is finished.
GOOD-FORTUNE COOKIES
Steps:
- Preheat oven to 350 degrees F. Grease a cookie sheet thoroughly.
- Whip the egg whites on low speed until light and foamy. Blend in the sugar and continue to beat until soft peaks form.
- Pour in the melted butter, flour, salt, and extracts; mix until well combined. Drop a tablespoon of the batter onto the prepared cookie sheet. Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds. Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove. Because you must work quickly to shape these cookies, bake just 3 at a time.
- Bake for about 5 to 8 minutes or until the edges are a light golden color.
- Remove the cookies with a spatula and place on a work surface. Lay a fortune in the lower middle of the cookie, and gingerly (they will be hot) fold in half to make a semi-circle. Bend the edges up toward each other to make a crescent. Drag the crease across the rim of a small measuring cup, with the ends facing down. Cool in mini muffin tins to hold shape until crisp. Repeat with remaining batter.
FORTUNE COOKIES SO EASY
Taste and look just like the ones you get at a Chinese restaurant! I was very pleased with my first attempt baking these! Adding your own personalized message allows you to create great favors for any occasion! Alternatively, I have rolled these into tube-like cigar shapes and filled them with icing for other occasions which have been a crowd pleaser!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets, or line with parchment paper. Have fortunes ready to go on small strips of paper.
- In a large glass or metal bowl, whip egg whites and sugar on high speed of an electric mixer until frothy, about 2 minutes. Reduce speed to low, and stir in melted butter, vanilla, almond extract, water and flour one at a time, mixing well after each. Consistency should resemble pancake batter. Spoon the batter into 3 inch circles on the prepared baking sheets. Leave room between for spreading.
- Bake for 5 to 7 minutes in the preheated oven, or until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. If they spring open, place them in a muffin tin to cool until set.

FORTUNE COOKIES
This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.
