- In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
- Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
- Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper towels.
- When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

- Preheat oven to 325°F/160°C. Lightly coat a 9x13 and 8x8 pan with cooking spray.
- Cut the boneless chicken breasts into 1-inch chunks. Season with salt and pepper. Place the chicken in a gallon-sized resealable bag with the cornstarch, seal bag, and toss to coat the chicken.
- Whisk the eggs in a shallow dish (a glass pie plate works well), then take a large handful and dip each chicken piece in the egg. Meanwhile, heat 1/4 cup oil in a large skillet over medium heat until hot and rippling. Fry coated chicken pieces in the hot oil. You will need to do one single-layer amount of chicken at a time, so it ends up being about 5 batches. Cook for about 30 seconds on each side until golden, but not cooked through. Place the chicken pieces on a paper towel-lined plate; then transfer chicken to a prepared baking dish in a shallow layer. You may need to add and heat another 1/4 cup of oil about halfway through.
- Whisk sauce ingredients together and pour over chicken. Bake for about 1 hour, turning chicken three times while cooking so it is evenly coated with the sauce. Serve over rice.

- Heat the oil in a wok or large frying pan until very hot.
- Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another shallow bowl. Add the flour, salt, pepper, garlic salt and paprika to another shallow bowl and mix together.
- Dredge the chicken in the cornflour, then dip in the egg (make sure all of the chicken is covered in egg wash), and finally dredge it in the seasoned flour. Add to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned. You may need to cook in two batches (I find I can do it in one batch so long as it's no more than 3 chicken breasts). Remove from the pan and place in a bowl lined with kitchen towels.
- Whilst the chicken is cooking, you can start on your sauce.
- Add the oil to a large frying pan/skillet, heat it up on a medium-to-high heat and add in the onions. Cook for 3 minutes, stirring every now and then, until the onions start to go translucent.
- Add the peppers and cook for a further minute.
- Add in the garlic and ginger and cook for another minute. Add the tomato ketchup, vinegar, dark brown sugar, and the tinned pineapple (including the juicand stir. Bring to the boil, and then turn down the heat and let it bubble (stirring every so ofteuntil slightly thickened.
- Transfer the cooked crispy chicken to the pan with the sauce and toss to coat.
- Serve with boiled or fried rice and a sprinkling of sesame seeds.

- Preheat your oven to 350 degrees.
- In a medium sized bowl combine soy sauce, apple cider vinegar, ketchup, apricot jam, garlic and ginger. Set aside.
- Prepare a large casserole dish with cooking spray and set aside.
- In a small bowl beat your egg and set aside.
- In a large skillet, over medium high heat, add oil and wait until it shimmers or a drop of water flicked in it dances.
- In the meantime, prepare chicken.
- Rinse, cut and dry chicken chunks with paper towel and place in a large bowl.
- Add starch and toss until chunks of chicken are totally coated.
- Add beaten egg and again, toss until coated.
- Place chicken in oil and cook for between 4 and 5 minutes.
- Timing will depend on the size of your chicken chunks.
- All chicken chunks should be browned before you add the prepared sauce.
- Once sauce is added stir until all of the chicken is totally coated.
- Dump skillet contents into your prepared casserole dish and bake uncovered for 10 minutes.
- Stir chicken at about the 5 minute point.
- Remove from oven and add chopped onion and peppers.
- Stir and make sure onions and peppers are coated in the sauce.
- Place back in the oven for 10-15 more minutes.
- Stir again at least once during that time.
- Prepare rice.
- Serve immediately and enjoy!

- Mix Pork with Marinade. Marinade 18 to 24 hours. (See Note 1 for marinating time for other cuts)
- Rack & warm oven: Preheat oven to 80°C/175°F and place rack on tray - to keep pork warm.
- Sauce: Place all Sauce ingredients EXCEPT water in a large jug or small bowl. Mix until combined, then mix in water.
- Be Stir Fry Ready: Have all ingredients lined up, ready to toss in. After Fry #2, things move quickly.
- Coating #1: Mix 5 tablespoons cornflour into the pork and leave for 5 minutes. At first, it will be white from the cornflour, but after a while it will sweat and make the cornflour (mostly / partially) wet, and will be sticky (this is key for coating to stick).
- Coating #2: Spread 1/2 cup cornflour in a shallow bowl. Coat pork, shaking off excess, and pile onto a plate.
- Reserve cornflour in case you need to dust again just prior to frying. Pork should be at least half white when you put it into the oil (if not, just sprinkle with reserved cornflour).
- Heat oil: Pour enough oil into a large saucepan or small pot so it's 2.5cm / 1" deep. Heat to 180°C/350°F (or until pork immediately starts sizzling when you dip it in).
- Fry #1: Cook pork in batches, being sure not to crowd the pot, for 3 minutes until golden. Drain on rack. This step is just to cook the pork. It takes me 4 batches.
- Fry #2: Turn the stove up slightly and heat oil to 200°C/390°F. Starting with the coolest pork, add half the pork (you can crowd the pot) and cook for 1 1/2 minutes, or until pork is deep golden brown and crispy. Transfer to rack, repeat with remaining pork - I do 2 batches.
- Keep warm in oven.
- Heat oil in a very large skillet over high heat.
- Add garlic, ginger and onion, stir for 1 1/2 minutes. Add capsicum and stir for 2 minutes.
- Add Sauce & pinapple, then let it come to a rapid simmer. Simmer for 2 minutes until it thickens - when you drag the spoon across the base, a path should briefly appear (see video at 1 min 53 s).
- 10 second toss: Add pork, then QUICKLY toss to coat - aim for 10 seconds!
- Serve asap! Pour onto serving plate, serve immediately! Will stay crispy for around 5 minutes then starts softening but still has a solid coating. This is just the reality of Sweet and Sour Pork, even at restaurants!

- To a medium saucepan, add all ingredients except water and cornstarch, whisk to combine, and bring to a boil over medium-high heat.
- To a small bowl, add the water, cornstarch, and stir to combine.

I tried some recipes for making sweet & sour sauce for chicken balls, while they were pretty good I quickly realized with a few tweaks and additions it could make the ultimate sweet & sour!! So I made some up, fried some chicken and then threw the chicken in the sauce.... WOW!!! What a great taste!! - Add the oil, sugar, and vinegar to a small saucepan set on 1/4 full heat stirring until sugar dissolves in vinegar, then add the pineapple juice.
- Add the paprika and other spices followed by the ketchup, then the water.
- Turn up the heat a bit and stir frequently almost bringing to a boil for 2-3 minutes.
- Add cornstarch and flour, use a whisk to make sure no clumps form. Toss in the green peppers.

- Heat olive oil in large skillet; add onion, green pepper and carrot. Cook 5 minutes until onion is softened.
- Stir in broth, tomato sauce, brown sugar, white vinegar, pineapple with juice, and ketchup.
