A yummy, creamy chicken casserole which can turn into an elegant dish when the chicken breasts are left whole. For a variation, use boneless chicken breasts, but do not dice them. Pour the soup mixture over all, but sprinkle the cracker and seed combination over the breasts only and bake as usual.

6 skinless, boneless chicken breast halves - diced
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
2 tablespoons dry sherry
salt and pepper to taste
8 ounces buttery round crackers, crushed
1 ½ tablespoons poppy seeds
½ cup butter, melted

Steps:

  • Preheat to 350 degrees F (175 degrees C).
  • Place the diced chicken breasts on the bottom of a 9x13 inch baking dish sprayed with a nonstick cooking spray. In a bowl combine the soup, sour cream and sherry. Pour or spoon mixture over the chicken. Sprinkle salt and pepper on top.
  • Mix the poppy seeds and crushed crackers and sprinkle mixture over the chicken, salt and pepper. Drizzle the melted butter or margarine over the cracker/poppyseed layer and bake covered in the preheated oven for 30 to 45 minutes (take cover off for the last 5 minutes). Let stand a few minutes before servings.

This creamy chicken casserole topped with buttery crackers is a family favorite and easy dinner recipe.

5 c. chicken breasts (cooked and cubed)
1 c. sour cream
2 10.5 oz cans condensed cream of chicken soup
2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
1/2 c. melted butter
1 Tbsp poppy seeds
1 tsp Worcestershire sauce
1/4 tsp celery salt
1 tsp minced garlic
1 Tbsp lemon juice
1/4 tsp pepper

Steps:

  • Preheat oven to 350 degrees.
  • Boil raw chicken breasts for 20 minutes. Let chicken cool slightly and cut into one inch cubes. You can also use leftover chicken or rotisserie chicken. Place cubed chicken in a greased 9×13 casserole dish.
  • In a bowl stir together the condensed soup and sour cream. Add the Worcestershire, celery salt, garlic, lemon juice, and pepper to the soup and sour cream mixture. Pour over the chicken.
  • In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken and sauce.
  • Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice.

5 cups chicken breasts, cooked and cubed (or shredded)
1 cup sour cream
2 (10.75 ounce cans) condensed cream of chicken soup
2 cups crushed Ritz crackers ((about 1 1/2 rolls of crackers))
1/2 cup butter (melted)
1 Tablespoon poppy seeds ((optional))
optional 2 cups cooked rice

Steps:

  • Preheat oven to 350 degrees.
  • Place cubed chicken in a 9X13 casserole dish. *Note: Some people layer some cooked rice on the very bottom underneath the chicken so that it's a meal in one.
  • Stir together the condensed soup and sour cream. If you wish to add the additional flavorings see notes. Pour over the chicken.
  • In a separate bowl, stir together the crushed crackers and melted butter. Sprinkle over the chicken and sauce. Sprinkle the poppy seeds on top.
  • Bake for 20-30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice. We like to eat it with steamed broccoli and we mix it all together.

½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream

2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
