10 ounces fettuccine pasta
1/2 cup butter
5 -6 cloves garlic, chopped
1 cup heavy cream
1 egg yolk
2 cups freshly grated parmesan cheese
2 tablespoons dried parsley

Steps:

  • Bring a large pot of salted water to a boil.
  • Add fettucine pasta and cook for 8 to 10 minutes or until al dente and drain Melt butter in a large skillet and add chopped garlic.
  • Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic Pour about 1/4 cup of the heavy cream into a small bow.
  • Add the egg yolk and beat together and put aside.
  • Pour the remaining cream into the frying pan.
  • Increase the heat to medium-high.
  • As the cream starts to boil, mix rapidly using a whisk.
  • Slowly add the cream/egg mixture.
  • You do not want the egg to cook.
  • Continue beating the cream mixture until all mixed together.
  • Add 1 cup of Parmesan cheese and continue to mix the cream.
  • Pour in remaining Parmesan and parsley and mix until smooth.
  • Immediately remove from stove.
  • Serve over cooked pasta.

4 boneless, skinless chicken breasts, about 1 inch (2.5 cm) thick
3 ½ teaspoons kosher salt, divided, plus more to taste
2 ½ teaspoons freshly ground black pepper, divided
5 tablespoons olive oil, divded
¾ lb fettuccine pasta, uncooked
1 large shallot, minced
6 garlics, minced
3 tablespoons all purpose flour
13.5 oz coconut milk
1 cup chicken stock, or vegetable stock
1 tablespoon fresh lemon juice
fresh parsley, minced, to taste

Steps:

  • Season the chicken all over with 1½ teaspoons salt and 1 teaspoon pepper.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts, 2 at a time, and cook for 4-5 minutes, until golden brown. Add more olive oil, if needed, and Flip and cook on the other side for 4-5 minutes more, until golden brown and the internal temperature reads 165ºF (75˚C). Remove from the pan, set aside, and cover to keep warm while you repeat with the remaining chicken.
  • Fill a large pot with water and bring to a boil over high heat. Once at a rolling boil, generously salt the water then add the fettuccine. Cook according to the package instructions. Drain and return to the pot.
  • Meanwhile, heat the remaining 3 tablespoons of olive oil in a large pan over medium heat. Once the oil is hot, add the shallots and garlic, season with a pinch of salt, and cook until the shallot is translucent, 3-4 minutes.
  • Stir in the flour and whisk for 3-4 minutes, until golden brown. Add the coconut milk and chicken stock. Bring up to a low boil and cook for about 1 minute, then reduce the heat to low-medium and cook, stirring frequently, until thickened, about 10 minutes. Stir in the lemon juice and season with the remaining 2 teaspoons salt and 1½ teaspoons pepper.
  • Pour the sauce over the fettuccine and toss well to coat. Slice the chicken.
  • Divide the pasta between bowls and top with the chicken. Garnish with parsley and serve.

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.

200 g / 7oz chicken breast, cut in half horizontally
Salt and pepper
1 tbsp olive oil
250 g / 8 oz fettuccine
2 cups milk, any fat %
1 1/2 cups chicken stock / broth
1 large garlic clove, minced
1/2 cup thickened / heavy cream (Note 1)
3/4 cup freshly grated parmesan (Note 2)
Parsley, for garnish

Steps:

  • Sprinkle both sides of the chicken with salt and pepper.
  • Use a skillet large enough to fit the pasta.
  • Heat oil over medium high heat. Add chicken and cook for 2 minutes on each side until golden and cooked through. Remove onto plate and rest for 5 minutes, then slice while pasta is cooking.
  • Add milk, chicken broth and garlic. Bring to simmer then add pasta.
  • Move pasta around every 30 seconds or so until it is softened (around 3 minutes) so it doesn't stick. Once pasta is softened, reduce heat to medium and stir every couple of minutes.
  • At about 9 - 10 minutes, the pasta should be almost cooked but there should still be liquid covering the base of the skillet. Add cream and parmesan and mix.
  • Simmer, stirring occasionally, for ~2 minutes, until sauce is thickened and pasta is cooked. If you cook it too long and the sauce goes gluggy, add a splash of hot tap water - will go back to silky with a few tosses.
  • Adjust salt and pepper to taste and serve immediately, garnished with freshly grated parmesan and parsley!

1 pound boneless skinless chicken ((breast or thighs), cut into bite sized pieces)
4 Tablespoons butter ((divided))

  • Cook pasta to al dente according to package instructions, drain and set aside. Reserve some pasta water for thinning out the alfredo sauce if needed later
  • Heat a sauce pan on medium-high heat. Melt 2 Tablespoons of butter. Add chicken and sear until all sides are brown and cooked, about 5-8 minutes depending on the thickness of your chicken pieces.
  • Remove chicken from pan. Add remaining 2 Tablespoons of butter, then add garlic and cook translucent and fragrant (about 1 minute).
  • Whisk in flour and continue whisking to remove large clumps.
  • Slowly whisk in the milk. Whisking often to make sure flour lumps are smooth, bring sauce to a low boil. Then reduce heat to low.

The 1st time I ever attempted to make homemade alfredo sauce, it was because 2 of my grandchildren requested it. Up until then, we had always eaten the pre-packaged stuff. I researched many recipes before coming up with this combination of ingredients. It received RAVE reviews and is now a family favorite. Serves 6-8

16 oz fettuccine pasta or spaghetti noodles
4 large boneless, skinless, chicken breasts
FOR SAUCE:
1 pt heavy whipping cream
1 stick butter, cold (not margarine)
4 large egg yolks
1 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1 c grated parmesan
1 c grated romano
1/2 c shredded mozzerella
2 Tbsp cream cheese
1 dash(es) nutmeg
1 c water

Steps:

  • 1. Cook spaghetti or fettucini noodles according to pkg. directions and rinse in cold water. Set aside.
  • 2. Cut chicken breasts into strips and season. Grill on table top grill, turning half way through cook time. Set aside.
  • 3. Using large covered skillet, begin creating alfredo sauce on low heat by melting butter. Slowly whisk in the pint of heavy whipping cream, adding the slightly beaten egg yolks. Add garlic powder, salt & pepper.
  • 4. While continuing to whisk mixture, stir in all four cheeses. Sauce should slowly bubble as cheeses are blending and melting. Add the dash of nutmeg last.
  • 5. To "stretch" the recipe, stir in 1-2 cups of water or milk (I used water) depending on how rich you want it to be.
  • 6. When sauce is done, re-heat the chicken and noodles. Serve the chicken, noodles and sauce ala carte, layering as follows: Noodles, meat, sauce. I allow this to happen at the dinner table that way everyone gets to choose how much of each they want.
  • 7. May also grill some shrimp and use in place of or combined with chicken. I sprinkle shrimp with lemon pepper.

2 tbsp olive oil, (divided)
1 onion, (diced)

1/2 cup (125 ml) dry white wine, ((optional))
8 oz (250 g) brown mushrooms, (sliced)
2 cups (500 ml) chicken broth, (or stock)
1 1/2 cups (375 ml) heavy cream, divided ((thickened cream, light cream, evaporated milk can also be used))
Extra salt and pepper, (to taste)
8 oz (250 g) dry pasta, (penne or fettuccini)

Steps:

  • Season chicken thighs with salt and pepper.
  • Heat half of the oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown and cooked through. Remove chicken and set aside.

1 lb white mushrooms (thickly sliced)

1 pound fettuccine
1 pound boneless skinless chicken breasts, cut into 1-inch strips
Salt and freshly ground black pepper
1/2 cup all-purpose flour
1/4 cup olive oil
3 tablespoons salted butter
2 cloves garlic, grated
2 cups heavy cream
2 cups grated Parmesan
2 tablespoons finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, about 8 minutes. Drain and set aside.
  • Season the chicken with 1 teaspoon salt and some pepper. Dredge in the flour and shake off the excess. Heat the oil and butter in a large saucepan over medium-high heat until the butter melts. Carefully place the dredged chicken into pan. Add the grated garlic. Cook until the chicken is golden brown and cooked through, 4 to 6 minutes. Transfer to a plate and set aside.
  • Pour the cream into the same pan and bring to a simmer. Stir in the Parmesan. Add the pasta to the mixture and toss to combine. Add the cooked chicken and gently toss. Garnish with the parsley and serve immediately.

Chicken Fettuccine Alfredo image

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.
